INGREDIENTS
butter 2 tbsp
sugar 1 1/2 cups
light corn syrup 1/2 cup
water 2 tbsp
salt 1/4 tsp
unsalted dry-roasted peanuts 1 1/2 cups
baking soda 1 tsp
METHOD
Prepare large rimmed baking sheet by lining with aluminium foil & greasing it with butter. In a large saucepan, bring sugar, corn syrup, water, and salt to a boil over high heat.
Add peanuts & continue cooking until syrup is golden & hard ball stage is reached, stirring constantly .
Remove from heat and stir in baking soda.
Spread peanut mixture in a thin layer on prepared baking sheet, put the markings to cut while still warm and allow to cool completely.
Break into bite-sized pieces and serve, or store in an airtight container until ready to serve.
Note-To test for the hard ball stage: Drop a bit of the mixture from a teaspoon into a plate of cold water. If you can roll into a ball, that means, it is the correct stage to take off the gas.
