Cranberry Coconut Pistachio Chocolate Bars

Ingredients 
3 cups Wilton Light Cocoa Candy Melts
½ cup pistachios
½ cup dried cranberries
 ½ cup sweetened shredded coconut
 
 

Instructions

  • Add candy melts to a large microwavable bowl. Microwave for 1 minute at 50% power. Stir. Microwave 30 seconds at 50% power. Stir. Continue to microwave at 30 second intervals until melted.
  • Stir in pistachios, dried cranberries and coconut. Spoon into silicone chocolate bar molds. Smooth the top with an offset spatula. Let harden at room temperature for 1 hour. Gently push on the mold to release the chocolate bars.
     
    this isn't my recipe, found it easy n simple, thought that chocolate lovers will be happy to try it out.

Healthy Oatmeal Cookies

Ingredients

2 Ripe Bananas, Mashed

Reduced Fat Peanut Butter  1/3 cup


Unsweetened Applesauce  2/3 cup


Vanilla essence  1 tsp


Salt   1/2 tsp salt


Cinnamon  1/2 tsp


Mixed spices little


Oats  1 1/2 cups


Nuts   1/4 cup ( peanuts/ cashew nuts/ almonds/ walnuts/ hazelnuts)


Semisweet Chocolate Chips  1/4 cup


Shredded Coconut (Optional)  1/4 cup


METHOD
Preheat the oven to 350 degrees F.

Line a baking sheet with parchment paper and set aside. 

Mix together the bananas, peanut butter, applesauce, vanilla, and spices. 

Add in the oats, nuts, chocolate chips, and coconut; stir until well combined. 

Spoon a rounded 2 tbsp. of the cookie mixture onto the lined baking sheet, 

leaving an inch or two between each and flatten slightly.

 Bake for 20-30 minutes and allow to cool slightly.

Lollipop cake

Ingredients
Lollipop sticks (As needed)
1 kg chocolate sponge cake
3-4 large dark chocolate bars
Peanut butter
Butter icing (mix equal amount of butter and icing sugar and mix till it is white and creamy)
For decorating
Sprinkles/desiccated coconut/crushed sweetened cornflakes
Method
Crumble the cake with your hands.
Add spoonfuls of peanut butter and butter icing to the cake, just enough to make a dough of the cake.
Make small balls out of the kneaded cake.
Dip the lollipop sticks in peanut butter and stick it into the cake balls.
Arrange it in a tray and freeze the cake for 30 minutes.
Meanwhile melt the dark chocolate adding a few drops of milk in a double boiler.
Take the cake out of the freezer and dip it in the melted chocolate.
Roll it in the desired decoration and freeze it again for 30 minutes.
