Ada Pradhaman

 The dessert brings together soft, cooked ada with a deep jaggery sweetness and creamy coconut milk. Fried cashews, sultanas and coconut add a little crunch and texture, while ghee gives the dish its unmistakably rich finish.

Ingredients

Ada – 50 g

Jaggery – 150 g

Coconut milk – 250 ml

Raisins – 25 g

Cashew nuts – 25 g

Ghee – 50 ml

Cardamom powder – 5 g

Coconut – 10 g

How To Make Ada Pradhaman

1. Cook the ada: Parboil the ada until cooked and drain the water thoroughly.

2. Prepare the jaggery syrup:Make a syrup using jaggery and water. Strain the syrup through a muslin cloth to remove any impurities.

3. Add the ada: Add the cooked ada to the jaggery syrup and allow it to cook well so that it absorbs the sweetness.

4. Add coconut milk: Pour in the coconut milk and add cardamom powder. Heat the mixture gently, but do not let it boil.

5. Add the toppings: Fry the sultanas, cashews and coconut in ghee and add them to the dessert.

6. Serve: Give everything a gentle mix and serve the Ada Pradhaman warm or at your preferred temperature.

Ada Pradhaman

Ingredients :
 
Cooked Ada : 1 cup
 
Fresh Grated Coconut : 1.5 cups
 
Powdered Jaggery : 1 cup
 
Cardamom pdr 1/2 tsp
 
Ghee : ¼ cup
 
For Garnishing :
Cashews, raisins and coconut slices fried in ghee
 
Method :

Heat the ghee in a pan. Add and fry the cashew nuts, raisins and coconut
pieces. Set aside when the nuts turn golden brown color.
 
Soak the grated coconut in one cup of warm water for a couple of minutes. Grind the coconut until smooth. Strain and extract the thick coconut milk and set aside.
 
Repeat the same procedure using the same coconut with another cup of water.
 
Combine the second coconut milk, one cup of water and cooked ada in a deep and
heavy bottomed vessel and cook for  5 minutes.
 
Add the powdered jaggery and continue cooking till the mixture thickens.
 
Add the remaining ghee and cardamom powder to it and mix well.
 
Now add the thick coconut milk and switch off the flame. Mix well and garnish with fried nuts.
 
This delicious kheer is a specialty on Onam festival and in marriages too.
 
Note- In most shops dealing in South Indian special groceries, you can buy the a for this. It comes as dried small pieces of raw rice and coconut milk pdr.
