Besan Toast

The recipe is super simple to make and can be made in under 10 minutes. Yet some mandatory and critical tips for Bread Besan Toast are –

  1. Batter Consistency – The besan batter has to be semi-thick and at the same time has to be lump-free with a smooth consistency. This helps the batter to spread evenly across the bread without any patches especially when transferring to tawa.
  2. Bread Type – The best type of bread for this recipe is white square-shaped toast pieces of bread. You can also use sandwich bread, but can be difficult to handle it while frying. Avoid using brown or multi-grain as it may not taste well.
  3. Texture – The best experience of any toast is when it is crisp and smooth in texture. Frying in low flame helps to achieve this texture. Also, you may add corn flour to have the extra crispiness.
  4. Serving – It is best served when it is warm and crisp in texture. Once it is rested it may turn soggy and may not have the best experience consuming it. Also, serve it with green chutney or tomato sauce condiments.
  5. Variations – Adding fine chopped vegetables with besan batter can make it more flavorsome. Adding veggies can be tricky and hence use finely chopped basic vegetables.

 

Ingredients

1 cup besan / gram flour

¼ tsp turmeric

 ¼ tsp chili powder

¼ tsp cumin powder

¼ tsp chaat masala

¼ tsp pepper powder

½ tsp salt

¾ cup water

½ onion, chopped

½ tomato, chopped

½ carrot, grated

2 tbsp coriander leaves finely chopped

1 green chili, finely chopped

bread slices as needed

butter, for toasting

 

Instructions

in a bowl take 1 cup besan, ¼ tsp turmeric, ¼ tsp chili powder, ¼ tsp cumin powder,¼ tsp chaat masala, ¼ tsp pepper powder, ½ tsp salt and mix well.

Now add ¾ cup water and prepare a smooth batter.

Further add ½ onion, ½ tomato, ½ carrot, 2 tbsp coriander, 1 chili and mix well.

Dip the bread slice in the batter coating the batter well.

Place the bread on hot tawa with some butter.

You can top it with some vegetables from the batter.

Cook for a minute and flip over.

Toast both sides adding butter as required until they turn golden and crisp.

Enjoy Besan Bread Toast with green chutney and tomato sauce.

Hare Mattar/ Green peas tikki With Tamarind Chutney

 Ingredients of Hare Mattar ki Tikki

  • 500 g green peas (shelled)
  • 2 Tbsp desi ghee
  • 1 tbsp ginger, chopped
  • Green chilies to taste
  • 1 tsp cumin powder
  • 1/2 tsp yellow chili powder
  • 1 Tbsp chaat masala
  • Salt to taste
  • Roasted chana powder (for binding, if required)
  • 1 potato
  • 1 Tbsp fresh coriander
  • For Tamarind Chutney:
  • 2 Tbsp tamarind pulp
  • 2 Tbsp jaggery (gur)
  • 1/2 tsp garam masala powder
  • 1/2 tsp cumin powder

How to Make Hare Mattar ki Tikki

For Hare Matar ki Tikki:

Boil green peas and mash coarsely using a potato masher.
 
Heat ghee in kadhai, and sauté chopped ginger and green chilies. Add mashed green peas and cook well till it leaves the sides of the pan.

Add remaining spices and continue cooking.

Remove from flame and add roasted channa powder for binding. Also add boiled, mashed potatoes and chopped fresh coriander.
.
Adjust seasoning.

Make small patties and cook over griddle using desi ghee till nice golden crust appears.

For Tamarind Chutney:

Boil tamarind pulp and jaggery together in 1 cup water.
 
Add garam masala powder and cumin powder. Cook well to a smooth consistency.

Plum chutney

 Plums, most of you think should be eaten as it is, or make jam or use in dessert. Now, enjoy plum chutney too.


INGREDIENTS

plums 6-8 remove the seeds chop fine

sugar 2-3 tbsp

coriander pdr 1 tsp

roasted jeera pdr  1 tsp

garam masala pdr 1 tsp

chili pdr 1 tsp

amchur pdr 1 tsp

dry ginger pdr 1 tsp

salt to taste

water little


Method

add all the ingredients, except water in a pan, mix well, cook till the juices come out.

add little water, cook well till the ingredients are well cooked and the chutney is getting thick

switch off the gas, take a hand blender, blend well

serve this chutney with the sabudana waffle or with anything else you love.

Green Veg kabab

 Ingredients

Take little ghee in deep bottom pan. Add the ginger garlic paste and saute till raw smell is gone.
Add finely chopped boiled vegetables, salt, jeera powder, spinach puree, boiled potato and cook it well. Add the besan powder and mix it well.
Saute the khoya in little ghee till light brown in colour.
Form a patty with the vegetable mixture and stuff it with khoya and cashew nuts, in the center of the patty.
Pan fry until crispy on the outside.
Sprinkle chaat masala powder.
Garnish with a lemon wedge and chopped coriander leaves.

Matar- paneer parantha

 Ingredients 

for stuffing

peas blanched 1 cup ( depends on how many people you're going to make)

paneer crumbled  1 cup

green chilies finely chopped to taste  OR red chili pdr to taste

chaat masala  1 tsp

jeera  1 tsp lightly crushed

turmeric pdr  1/4 tsp

ginger finely chopped 1 tsp

garlic finely chopped 1 tsp ( optional)

salt to taste

coriander leaves finely chopped 2 tbsp

oil 2 tbsp 

hing little


wheat flour as needed to make dough like for roti, with salt, chili pdr little, ajwain lightly crushed with palms, ghee as needed to cook paranthas


Method

in a pan, heat oil, add jeera, once it crackles, add hing, add peas, crush them well along with green chilies, ginger and garlic, cook them well for 4-5 minutes stirring well, adding turmeric pdr

then add paneer, add salt to taste and coriander leaves, mix all well for 2 minutes, remove and cool

make dough adding oil / ghee as desired, cover and rest the dough for 10 minutes.

roll out the dough, spread the filling, bring the sides together, covering the stuffing well 

roll it out gently, making sure the stuffing doesn't come out

once light brown on both sides, apply some ghee, cook it till well, remove, serve hot with pickles, curd.

Vegetable chop

 INGREDIENTS

panchpooran  1 tbsp

dry red chilies 2

ginger-green chili paste  1 tbsp

oil  2 tbsp

carrot grated  2 big

beetroot grated  2

salt to taste

peas  1/4 cup

potatoes 4 peeled and grated 

coriander pdr  1tsp

sugar 1 tsp

turmeric pdr  1/4 tsp

roasted jeera pdr  1 tsp

chaat masala pdr  1 tsp

breadcrumbs to bind and coat

maida slurry

maida to coat 1st the chops

oil for deep frying


METHOD
in a pan/ kadai add oil, add panchpooran, 2 dry red chilies, ginger-green chili paste, hing, fry well for 2 minutes

add grate carrots, and beets, mix well adding salt to taste

cover and cook the veges for 4-5 minutes

add peas and grated potato, mix well, adding the dry masala powders, add bread crumbs to bind the mixture well. remove, cool

roll the mixture like a 1"/ 4" rolls

coat the rolls in dry maida, then coat in maida slurry and coat in breadcrumbs, you can repeat by dusting with maids, then in slurry and breadcrumbs so it will be  nice and crispy

Fry in medium hot oil, till the chops are brown, serve how with chutney, dip of your choice.
