Bajra Onion Dosa

 Ingredients roughly 5 small size dosas

bajra 1 serving spoon/ 2 tbsp

arhar dal  1 tbsp

urad dal 1 tbsp

rice flour  1/4 cup approximately OR raw rice 

green chilies 1-2

ginger 1 " chopped

onion chopped 1 small or 2-3 tbsp

curry leaves finely chopped

salt to taste 

 

Preparations

I washed the 1st 3 ingredients well, soaked in warm water, if using rice, soak it along with the rest of the ingredients

while grinding,  add green chilies, ginger, curry leaves, grind with little water to a smooth batter

remove the batter in a bowl, as I used rice flour, in little rice flour, I mixed with little batter well, mixed rest of the batter, add salt, finely chopped onion.

heat tawa, make dosa like you normally make, cook on medium flame till brown on both sides.

you can have it with milagai podi, chutney, sambar, choice is yours.

Have it hot.This was my meal for the day, as on Saturdays, I've one meal, was contemplating what to make avil upma, or akki roti, then decided to do this soaked the ingredients in hot water for roughly 3 hours and ground to a smooth batter. Had it hot with milagai podi.

NOTE- you can add more dal, add chana dal too, only thing to remember add raw rice to grind, roughly equal to other ingredients, or add rice flour if you've.

There's no hard and fast rule about the quantity of each ingredients, like we do for addai.  I had ordered bajra flour, without looking if it was bajra flour/ bajra, I just kept it in my store. When I wanted to make roti with bajra flour, realised that it was whole bajra, half gave to my maid to use. Thought let me try making onion dosa with it, it was quite good, as I was making had it with my home-made milaai podi

Watermelon Rinds

Most people enjoy the juicy flesh of watermelon and discard the rind, not realizing the rind's potential. A wonderful pickled watermelon rind can be created by boiling a mixture of rice wine vinegar, water, salt, sugar, and spices such as peeled ginger and star anise, adding the rinds in the last cooking minute. After cooling in a sealable jar, these pickles can be a unique addition to salads, sandwiches, or as a tangy snack. This method not only reduces waste but also introduces a novel delicacy to your culinary repertoire.
Old Food - Still Good

I cut the white parts after cutting the red part of the watermelon to eat,  cut the white part into small pieces, cook then along with arhar dal + turmeric pdr in the pressure cooker. Then grind some coconut, jeera and green chilies to taste, mix it well, let it boil well,  temper with a little oil, mustard seeds, urad dal, curry leaves and pour over the cooked mixture. It goes well with rice, roti, toasted bread if you like. No one can even find out that you used watermelon, it tastes like white pumpkin almost. It is called " kootu" in Tamil.

MEAL IN ONE

INGREDIENTS
rice soaked 1 cup
dals mixed ( arhar, moong, chana, masoor) 1 cup   OR you may use whatever dal you prefer, soak for a couple of hours
ghee 3 tbsp
onion 2 big chopped
carrot 1 chopped
peas 1/4 cup
cauliflower 2-3 tbsp
potato 1 big chopped
tomatoes 2 chopped
soya granules soaked in hot water for 10 minutes and squeezed  2 tbsp
capsicum 2 tbsp chopped
coriander leaves chopped 2 tbsp
kada masala ( bay leaf, cloves, cardamom, cinnamon)
jeera 1 tsp
turmeric pdr. 1/2 tsp
salt to taste
green chilies slit 3-4 or red chili pdr. to taste
cashew nuts fried for garnishing
garam masala 1 tsp
water 3-4 cups as required

METHOD
heat a pressure pan / cooker, add 2 1/2 tbsp ghee
once it melts, add kada masala, jeera, once aroma comes, add onion fry till light brown
add rest of the vegetables, seasonings, rice, dal, enough water to cook, mix well
cover and pressure cook  for 3-4 whistles
once the pressure is released, open, mix well adding coriander leaves and remaining ghee
serve hot garnished with cashew nuts, roasted papad and cucumber raita.
This makes a complete meal by itself, as it has carbs, proteins, minerals, vitamins.

ps- you may add vegetables of your choice and also you may add soya small chunks or omit them and add paneer.
even whole green moong dal can be used, after soaking it for a couple of hours along with chana & arhar dals.

MIXED VEGETABLE RICE - SOUTH-INDIAN STYLE

INGREDIENTS
for making masala
coriander seeds 1 tbsp
chana dal 1 tbsp
urad dal 1/4 tsp
methi seeds 1/8 tsp
dry red chilies 3-4 or as per taste
fresh grated coconut  1/4 cup or roughly 3 tbsp

For rice
rice 1 cup
arhar dal 1/2 cup
pressure cook both together for about 3 whistles or you may cook them separate too

For making gravy
tamarind juice thick 1 cup or paste 2 tbsp
pumpkin chopped 2 tbsp
carrot chopped 3 tbsp
beans chopped 2 tbsp
peas 3 tbsp
potato 1 big chopped
brinjal one chopped ( optional)
drum-stick 1 big chopped into 2-3" long pieces
curry leaves few
coriander leaves chopped 3 tbsp
oil 1 tbsp
mustard seeds 1 tsp
hing little
methi seeds 8-10
cashew nuts chopped 1 tbsp
ghee 1 tbsp
( keep the chopped vegetables in a vessel with water)
turmeric pdr. 1/2 tsp
salt to taste

METHOD
roast the ingredients for masala except coconut, add coconut, grind to a fine paste adding little water.
pressure cook rice and dal till soft not over-cooked
for making gravy
in a big pan / kadai add oil, once hot add mustard seeds, once it crackles, add methi seeds, curry leaves and hing, drain the veges and add to the pan, along with little turmeric pdr. adding tamarind juice, if adding tamarind pulp, add enough water, so that the vegetables can get cooked in that, you may cover and cook the pan till vegetables are soft. 
add the ground  masala, add little water, as the gravy can be little watery, let it simmer for about 4 minutes adding half of the coriander leaves, then add the cooked dal and rice along with salt to taste, mix well, last add ghee and half of the remaining dhania, reserving rest for garnishing along with cashew nuts( if preferred, cashew nuts can be fried in ghee and mixed too).

This in Tamil is called kadamba chadam, i.e. mixed vegetable rice, serve hot with roasted papad to complete the meal, have some buttermilk.

WATERMELON'S WHITE PART WITH LENTILS

We all love to eat water-melon in summer has it is 90% water, to hydrate our bodies. After cutting the red part of the fruit, we waste equally nutritious white part which can be used with lentils to make gravy, which we can have with rice, roti or bread.

Ingredients

white part of watermelon 3 cups ( as it shrinks when cooked, you may use less depending on the number of people at home)
chana dal cooked 1 1/2 cups or arhar dal or sprouts, you may use any lentil each time
salt to taste
to grind
coconut grated  3 -4 tbsp
jeera 1/2 tsp
urad dal / chana dal 2 tsp
red chilies or green chilies 2-3

for seasoning
oil 1 tsp
urad dal 2 tsp
hing little
jeera 1 tsp
curry leaves few

Method
cut the white part of the melon into small pieces, add little water, cover and cook till tender.
pressure cook the dal ( whatever you use with turmeric pdr.)
add the cooked dal to cooked pieces.
in the mean time, fry in little oil urad  dal or chana dal or you may use combo of the 2 dals, red chili, add coconut and grind to a fine paste
add the ground paste, salt, along with dal to the vege, let it simmer for a few minutes, adjust water as needed, or in case you find it a bit watery, add 1 teaspoon of rice flour/ atta in little water, mix well, add to the simmering mixture to thicken it. You may add some chopped coriander leaves and remove.
for seasoning, heat little oil in a small pan / kadai, add jeera and dal, once dal is golden, add hing and curry leaves, pour over the cooked gravy, serve hot with rice / roti / bread.

Jackfruit-seed lentil balls ( Microwave)


INGREDIENTS
seeds of jack-fruit 16-18
arhar dal 1/2 cup
chana dal 1/2 cup
molasses 3/4 cup or to taste
ghee/ clarified butter 1 tbsp
cardamom pdr. 1/2 tsp
nuts and raisins optional

METHOD
Since we ate some jackfruit, I had the seeds, with which earlier I had made a halwa with moong dal. But this time for variation, I used arhar and chana dal which were pressure cooked till soft. I also pressure cooked the jackfruit seeds with the outer skin. Once they're well cooked, I removed the outer skin, but the brown skin, I didn't peel, as it is good fibre.Then I chopped the seeds, ground them fine in mixie along with some water of the cooked dal. Then I added the dal and made a fine paste of it all. Put the mashed ingredients in a micro-safe dish, added molasses, mixed well, cooked in microwave in high power for about 25 minutes covered or so, cooking for 5 minutes, removing, stirring and keeping again for 5 minutes. Only in the last 2-3 minutes, when I added ghee, cardamom pdr., nuts and raisins, I didn't cover it, as by then it had become almost thick. I let it rest for another 2 minutes in the microwave, kept it out after stirring well for another 2 minutes, then rolled them into small balls, or else, you can spread on a greased plate and cut into desired shape.

Note- 1) you may moong dal instead of arhar and chana dal, or you may use the combo of all these dals.
2) You can use sugar instead of molasses, or brown sugar or gur, or even sugar free.
3) nuts and raisins are also optional.
4) This can be cooked in a heavy/ non-stick pan over gas, but then you'll have to keep stirring continuously till it gets thick. Use ghee last when it gets thick, but while cooking over gas, you may need a little more ghee.
