Roasted Cauliflower Chowder

 roasted cauliflower chowder recipe soup red bell peppers low carb vegetarian vegan gluten free 

Ingredients

large head cauliflower, washed and cut into florets

tbsp olive oil

pinch of salt

tbsp butter, vegan/paleo: use olive oil

1medium yellow onion, chopped

cloves garlic, minced

medium carrots, chopped

celery ribs, chopped

large red bell pepper, seeds removed and diced

cups veg broth

tsp chopped fresh thyme

small bay leaf

1/8 tsp freshly ground black pepper

tsp salt

cup heavy cream, vegan/paleo: use cashew milk

 tbsp chopped fresh parsley

 

Instructions 

Preheat the oven to 400 degrees F.

Place the cauliflower florets onto a lined baking sheet and drizzle with the olive oil and a pinch of salt. Roast for 20-25 minutes until nicely browned, turning with a spatula after 15 minutes. Set aside until ready to use.

Heat the butter in a stock pot over medium-high heat and cook the onion until soft and translucent, 5-7 minutes. Add the remaining vegetables and cook for another 5-7 minutes until softened. Add the roasted cauliflower, stock, thyme, bay leaf, salt and pepper and bring to a boil. Reduce the heat to medium-low, cover and simmer for 25 minutes. Discard the bay leaf.

Use an immersion blender to puree the soup to consistency you prefer (I like to puree just part of it and leave the rest chunky). Alternatively transfer a portion of the soup to a regular blender, puree it, and add it back to the pot.

Add the cream and parsley and heat through. Add salt and pepper to taste. Note: If you prefer a thicker consistency you can dissolve some cornstarch in a little water (e.g., 1 tablespoon cornstarch in 3 tablespoons water) and pour it into the soup at the end. Let the soup simmer for a minute or two until slightly thickened.

Moongdal pakodi with kadi

Ingredients and Preparations

Moongdal 1 cup wash and soak for an hour, drain well

Coriander leaves a handful with stem

Green chilies 1-2 chopped

Ginger 1 tsp chopped

Grind all the above ingredients without adding any water ( save 2 tbsp of batter)

Add some chopped carrots and onions ( optional) mix well and drop small balls with your hands in hot oil, fry till brown, drain and add directly to the boiling kadi

Kadi

200 ml curd

Moongdal paste 2 tbsp

Turmeric pdr ¼ tsp

Red chili pdr ½ tsp

Water 100 -150 ml, beat well adding salt

In a pan heat 1 tsp oil, add mustard seeds ½ tsp, methi seeds ¼ tsp, red chili broken 1, curry leaves few, fry the above ingredients, add little hing, pour the prepared curd mixture, mix well, let it cook on medium flame stirring in between.

Meanwhile fry the pakodis, after mixing well all the veges that you want to use, once brown, drain well and add directly to boiling kadi, let it simmer for another 2-3 minutes. Serve hot with rice.

Stir Fried Tofu With Rice

Ingredients
  • Cooked Basmati Rice - 3 cups cooked
  • Oil - 3 tbsp
  • Ginger Garlic Paste - 1 tbsp
  • Onion - 1 chopped finely
  • Green Chilli - 2 chopped
  • Cabbage - ½ cup chopped finely
  • Beans - ½ cup chopped finely
  • Carrots - ½ cup chopped finely
  • Capsicum - ½ cup chopped finely
  • Salt to taste
  • Sugar - 2 tsp
  • Soy Sauce - 1 tbsp or to taste
  • Vinegar - 2 tsp
  • For Marination:
    • Tofu - 1 cup cubed
    • Red Chilli Powder - ½ tsp
    • Salt to taste
    • Soy Sauce - 1 tsp

     Marinate tofu with the above ingredients for at least 30 minutes,

    Preparations

  • Mix tofu with the ingredients given, Heat oil in a pan, add tofu and fry till golden, drain and set aside.
  • Now in the remaining oil, add in ginger garlic paste and saute for a min.
  • Add in onions and chillies and cook them for a min.
  • Add in all veggies and toss well. Add salt and sugar and saute them for 5 mins or so.
  • Add in tofu and mix well.
  • Now add in cooked rice and stir fry for 2 mins or so.
  • Add soy sauce, vinegar and mix well. Serve hot.

    High Protein Healthy bhel

     Ingredients

    High-protein Soy noodles – 60 g

    tofu  120 gm

    Oil spray

    Salt to taste

    Black pepper pdr to taste

    Cornflour – 1 tsp

    Sesame seeds – 1 tsp

    ¼ cup purple cabbage (shredded)

    ¼ cup carrots, thinly sliced

    ¼ cup capsicum

    ¼ cup red bell pepper

    For the sauce

    1 tbsp Schezwan chutney

    1 1/2 tbsp soy sauce

    1-2 tbsp ketchup

     

    Preparations 

    Cook the noodles: Boil noodles in salted water until cooked. Drain completely and pat dry.

    Crisp the noodles: Spread noodles, spray lightly with oil, toss, and air fry at 180°C for eight to 10 minutes until crisp.

    Prepare tofu: Crumble tofu, add salt, pepper and cornflour. Toss well, spray lightly with oil and air fry at 180°C for 10 to 12 minutes until crisp.

    Sauté vegetables: In a pan, add sesame seeds and all chopped veggies. Sauté on high flame for two to three minutes (keep crunchy).

    Prepare sauce: Mix Schezwan chutney, soy sauce and ketchup.

    Combine: Add crispy tofu, crushed noodles and veggies into the pan. Pour the sauce and toss well.

    Serve: Serve immediately while crunchy and enjoy.

    Carrot cake

     Ingredients:

    Cake: 

    • 4 large eggs 

    • 1 1/3 cup vegetable oil 

    • 2 1/4 cup sugar 

    • 2 1/4 cup all-purpose flour 

    • 2 tsp baking soda 

    • 2 tsp baking powder 

    • 1/2 tsp salt 

    • 2 tsp cinnamon pdr

    • 1/2 tsp cloves pdr

    • 1/2 tsp nutmeg pdr

    • 20 oz. carrots, finely chopped (about 3 1/4 cups) 

    • 1/2 cup chopped walnuts 

    • 1 cup crushed pineapple, well-drained  

    White Chocolate Cream Cheese Icing  

    • 1 1/2 pounds cream cheese, room temperature 

    • 2 cups white chocolate chips, melted 

    • 3/4 cups (1 1/2 sticks) unsalted butter, room temperature 

    • 2 tsp grated lemon rind 

    • Chopped walnuts, for garnish 

     

    Method For the Cake 

    1. Preheat the oven to 350℉. Line the bottom of three 8-inch round cake pans with parchment paper. Leave sides of pans dry - no cooking spray needed. 

    2. Combine eggs and oil in a large mixing bowl and beat for 2 minutes with a mixer on medium speed. Add 1 cup of sugar and continue mixing for 2 minutes. Add the remaining sugar and mix 3 to 4 minutes. 

    3. Combine flour and the next 6 ingredients (flour through to nutmeg); add to the egg mixture, beating on low speed until blended, about 1 minute. Add carrots, walnuts, and pineapple; mix until well combined. 

    4. Divide the batter evenly among pans. 

    5. Bake for 60 minutes, or until a wooden pick inserted in the center comes out clean. 

    6. Cool to room temperature on a wire rack. Run a knife around the edge of the cakes and remove from pans. Wrap in plastic wrap and refrigerate overnight.

    To Prepare Icing 

     7. Place cream cheese in mixing bowl; beat with a mixer on medium speed until smooth. Add melted chocolate a little at a time, continuing to beat at medium speed. Add butter a little at a time. Scrape down sides of bowl; add lemon rind and beat until combined. 

    8. Remove cakes from the fridge. Ice top of one layer. Places the second layer on top; ice top. Place the third layer on top; ice top and sides of cake. Press chopped walnuts into sides of cake.

    Carrot Cake Thumbprint Cookies

     recipe 

    Ingredients

    3 carrots, peeled  

    1 cup flour  

    3/4 tsp. kosher salt  

    1/2 tsp. cinnamon  

    1/2 tsp. ginger  pdr

    1/3 cup granulated sugar  

    1/3 cup brown sugar  

    1 stick unsalted butter, melted + 4 Tbsp. butter at room temperature  

    1 egg yolk  

    3/4 cup old-fashioned rolled oats  

    1/4 cup golden raisins, chopped  

    3/4 cup pecans, finely chopped  

    1/4 cup powdered sugar  

    2 oz. cream cheese  

    1 1/2 tsp. apricot jam

    Preparations

    Pulse the carrots in a food processor until they are finely shredded. Set 3/4 cup aside. 

    Meanwhile, in a bowl, add flour, salt, cinnamon and ground ginger and whisk well.  

    Add the flour mixture to the butter mixture in batches, stirring in between. Then, mix in the oats, raisins, and carrots. Combine well, cover and refrigerate for 30 minutes. 

    Roll out the dough into 1 1/2 inch balls, then coat each one in pecans. 

    Place the balls on a parchment-lined baking sheet then bake for 10 minutes at 350°F/ 180 C

    Remove from the oven and press at the center of each cookie, baking for a further 10 minutes. 

    In a bowl beat 4 tablespoons of butter and powdered sugar until smooth. Beat in the cream cheese until combined then swirl in the jam.   

    Pipe this filling into the center of each cookie. Then serve and enjoy!

    Carrot soup

    10 Reasons You Should Add More Carrots to Your Diet Ingredients  

    2 tbsp unsalted butter or extra-virgin coconut oil  

    1 onion, chopped  

    1 tbsp red curry paste, or to taste  

    2 pounds carrots, peeled and chopped - 1/2-inch chunks  

    1 14-ounce can full-fat coconut milk  

    1 1/2 tsp sea salt, or to taste  

    1 1/2 cup of water, or to cover  

    1 lemon or lime

    Directions

    1. Take a large soup pan, and over a medium to high heat add in butter and onion. 

    2. Stir well until the onions look well-covered. Sauté until they are translucent. 

    3. Stir in the curry paste, then add the carrots. Cook only for a minute before adding the coconut milk, salt, and water. Although you may wish to add more water. 

    4. Let this simmer around 10-15 minutes until your carrots seem tender. Next puree the mix with a blender or hand blender, giving yourself a lovely smooth soup. 

    5. Try and get the soup thinned out as much as you like by adding water. Then season to taste. Optional - add a squeeze of lemon or lime. 

    6. Serve your soup with a topping of choice.

    Spicy Blackbean Soup

    Ingredients

    2 jalapeño peppers

    2 tbsp extra-virgin olive oil

    3 cups chopped onion

    1 ½ cups diced carrot

    5 cloves garlic, minced

    4 cups low-sodium vegetable broth

    4 (15 ounce) cans low-sodium black beans, rinsed

    1 (28 ounce) can fire-roasted diced tomatoes

    3 tbsp molasses

    2 tbsp lime zest

    5 tbsp lime juice

    1 ½ tsp cumin pdr

    1 ½ tsp smoked paprika

    tsp cayenne pepper, or to taste

    3 bay leaves

    1 tsp salt or to taste

    ¾ tsp pepper pdr

    4 cups chopped kale

    Chopped scallions & chopped fresh tomato for garnish

     

    Preparations

    Heat a medium skillet over high heat. Split jalapeños in half lengthwise, remove ribs and seeds, and place skin-side down in the pan. Carefully cover the pan with foil and cook until the skins are blackened, 7 to 10 minutes. Let cool, then dice.

    Meanwhile, heat oil in a large pot over medium-high heat. Add onion and carrot and cook, stirring often, until starting to brown, 6 to 8 minutes. Reduce heat to medium and continue cooking, stirring often, until soft, 3 to 5 minutes more. Add garlic and the diced jalapeños and cook, stirring, for 1 minute more.

    Stir in broth, scraping up any browned bits. Cover and bring to a boil over high heat. Add beans, tomatoes, molasses, lime zest and juice, cumin, paprika, cayenne, bay leaves, salt and pepper. Cover and return to a boil. Reduce heat to maintain a gentle simmer and cook, uncovered, for 30 minutes.

    Remove bay leaves. Puree 4 cups of the soup in a blender (use caution when pureeing hot liquids), then stir it back into the pot. Stir in kale, cover, and simmer until tender, about 5 minutes. Serve garnished with scallions and tomatoes, if desired.
