The recipes posted here are very simple, with no hard & fast rule, as I love to cook a variety but with ease. My dishes are such that it is nutritious & easy to cook. Of course one can always change the ingredients according to one's taste & availability. Do let me know which type of recipes are preferred, or in case you've any queries too. Feel free to comment.
Take quarter cup of each of the millets
(Barnyard, Kodo, Finger, Little, Foxtail, Pearl, etc.), urad dal, half
tsp methi seed and 3 tsp poha. Soak all in water for four hours.
Grind it to fine dosa batter and keep overnight.
Next morning, add finely chopped dill
leaves, one onion, 1 piece ginger, 1 tsp finely cut coriander leaves and
curry leaves, 1 tsp (or according to your taste) finely chopped green
chilies, 1 tsp jeera and salt to taste.
Make a plain dosa on the tawa and add
grated cheese on top of it. Or make masala dosa, spread the cheese on
the top of the potato and chutney which used for masala dosa. You can
also make idli the same way.
Serve hot with Coconut chutney and sambar.

In a pan heat 2 tbsp oil. Add 1 tsp mustard, ½ tsp cumin, ½ tsp chana dal, ½ tsp urad dal, pinch hing, and few curry leaves.
Splutter the tempering.
Add 1 cup rava and roast on low flame.
Roast until the rava turns aromatic.
Cool completely, and transfer to the bowl.
Drain off the water from the soaked sabudana, and transfer it to the bowl.
Add 1 tsp salt, ¾ cup curd and mix well.
Add water accordingly, and mix well adjusting the consistency as required.
Rest for 30 minutes, or until the rava is absorbed well.
Also add 3 tbsp dill leaves, ½ tsp Eno fruit salt and mix gently.
Once the batter turns frothy, pour in a greased idli plate.
Steam for 15 minutes, or until the idli is cooked well.
Finally, enjoy Sabudana Idli with chutney and sambar.
*For dill leaves, consider tarragon, parsley, or fennel as substitutes.Tarragon's licorice flavor complements dill well in seafood and dressings.Parsley, especially when combined with celery leaves, offers a similar fresh, herbaceous flavor.Fennel fronds mimic dill's feathery appearance and can be used as a garnish.

Clafoutis are baked French pancakes, usually filled with sweet cherries. This savory version calls for corn, Swiss chard and leeks instead of fruit, and includes plenty of Gruyère for a salty depth. It will emerge from the oven puffed and golden, then quickly deflate. Fear not, it still tastes wonderful after it flattens out, though for the best presentation, try to time it so your guests are at the table when it is ready. Serve it for brunch or a light dinner with a tomato salad on the side, if you’re making this in tomato season. In winter, sliced oranges drizzled with olive oil and salt are nice, too.
Ingredients
¾cup whole milk
¾cup crème fraîche- a thick cultured cream-Combine buttermilk and heavy cream in a non-reactive container. Cover and allow to rest at room temperature until thickened to desired texture, about 12 hours.
4large eggs
2½tbsp all-purpose flour
2tbsp chopped fresh parsley leaves
2tbsp chopped fresh dill leaves
¾tsp kosher salt, salt to taste
½tsp ground black pepper, more as needed
1cup coarsely grated Gruyère or Cheddar (about 4 ounces)
2tbsp extra-virgin olive oil
2large or 3 small leeks (white and light green parts), halved lengthwise and thinly sliced
2cups corn kernels (from 2 to 3 ears, or frozen and thawed)
1large garlic clove, grated on a Microplane or minced
Heat oven to 375 F/ 180 C. In large bowl, whisk together milk, crème fraîche, eggs, flour, parsley, dill, ½ teaspoon salt and ½ teaspoon pepper until smooth. Whisk in ¾ cup Gruyère.
Pour crème fraîche mixture over the corn and chard mixture, and then sprinkle the remaining Gruyère and the Parmigiano on top. Transfer skillet to oven and bake until custard is lightly set, about 40 minutes. Serve topped with a sprinkling of lemon juice and a pinch of red pepper flakes.
