Kutchi Dabeli

Preparations

For dabeli masala, heat a pan and add all the whole spices, and a pinch of salt and sauté them on low heat.
Add the coconut and continue roasting all the ingredients until the spices are fragrant.
Cool the roasted spice and add them to a blender.
Add the powdered spices, sugar and blend to a smooth prefer.
Add salt to taste, blend again and keep aside.
For spicy chutney, soak the red chillies in hot water for 10 to 15 minutes.
Cool the soaked chillies and deseed them if you want the chutney to have a smoother consistency and be less spicy.
Add all the ingredients to the blender, with required amount of salt and water and blend to a semi thick, smooth paste.
For sweet chutney, heat some water enough to soak the tamarind and let it soak for 15-20 minutes.
After the water is cooled, squeeze the tamarind to separate the pulp.
Heat oil in vessel and saute the powdered spices briefly without burning.
Add the water with the tamarind pulp and the remaining ingredients and add some more water enough to boil the ingredients.
Let it boil on low heat till it become semi thick.
Remove the pieces of the date and set aside.
For dabeli filling, boil the potatoes very well, peel and mash them.
Heat oil in a vessel, add the cumin seeds and asafoetida and sauté it quickly.
Add the dabeli masala and saute it.
Add the mashed potatoes, sweet chutney and mix well.
Add the chopped coriander leaves and mix well.
Set the dabeli filling in a plate, cover the top with grated coconut, masala peanuts and pomegranate arils and press them well.
For assembling the Kutchi Dabeli, cut the pav in half alongside the width.
Toast it lightly.
Spread the sweet chutney on inner side of one half of the pav and the spicy chutney on inner side of the other half.
Add the dabeli filling in generous amounts on one half of the Fresho pav and place the other half on top.
Dip the pav sideways in the nylon sev, and the Kutchi Dabeli is ready to serve.

Air Fryer Samosas

  

Ingredients

Preparations

Boil the potatoes and peel them. Cut them into small cubes.
Roughly grind ginger, garlic, green chillies, coriander seeds, and cumin seeds.
Chop the onion finely.
Heat a pan and add ghee. When the ghee is hot, add the mustard seeds and when they splutter, add the finely chopped onion, the ginger, garlic, green chilli mixture, the turmeric and red chilli powder.
Add the potatoes, salt, amchur powder, and mix well. Keep aside to cool.
Take the samosa dough sheets and separate them. Make a paste with cornflour in water, which is thin and runny.
Preheat the air fryer for 5 minutes at 190°C.
Fold the pastry sheet like a cone. Add the potato mixture and seal the sheet with the cornflour and water paste at all the open edges.
Brush the samosa dough sheet with very little ghee.
Place the samosas in the air fryer basket, taking care to leave enough space between the samosas to cook evenly.
Cook for 15 minutes and flip over, and brush again with very little ghee, and cook for 5 more minutes until golden.
Serve hot with tomato ketchup or chutney of your choice.

 ps- If you don't have the samosa dough sheets, don't worry, make dough with maida with little salt, like we do for puris, adding little oil.

Singhada Aloo Ki Pakodi | Vrat Ki Pakodi

 Rainy evenings and pakoras are a classic Indian combination. For fasting days, pakoras can be prepared using ingredients like singhara flour, potatoes and permitted spices for a warm snack. 

Ingredients

3/4 cup Water chestnut Flour/ Singhada Aata *

medium Potatoes boiled

Green Chillies finely chopped

tsp Amchoor Powder

1 1/2 tsp White sesame seeds

tsp Cumin Seeds /

tsp Peppercorns

Rock Salt to taste

1/4 cup Fresh Coriander leaves chopped

Enough Cooking oil for frying

Instructions Peel the boiled potatoes and roughly mash them. Take a big wide bowl and add singhoda atta and all the dry spices in it and mix. Now add chopped green chilies, chopped fresh coriander and the mashed potatoes and mix again. Add just enough water and mix to make a medium thick batter of dropping consistency. Heat enough oil in a wide pan on medium temperature for deep frying the pakora Drop small pakora in the hot oil either using a spoon or with your fingers. Don't make big pakora else they may remain raw from inside or not become so crisp and crunchy. Deep fry pakora from all the sides till golden and crisp. Drain on a paper napkin when done. Serve hot pakora with mint chutney and aam papad chutney or just with plain curd and tea.

Notes
  1. you can use boiled raw banana instead of potato.
  2. you can also use rajgiri atta or kuttu atta instead of singhoda atta and follow the recipe.
  3. Use of green chilies and fresh coriander is optional , you can easily skip these if you don't use these during fasting.

Spinach - Paneer Tikki

 Description of the pic 

Ingredients

3 tsp oil
3 green chillies
1 inch ginger paste
1 bunch palak / spinach, chopped
3 potato, boiled & mashed
½ cup paneer / cottage cheese, grated

½ cup bread crumbs
1 tsp coriander powder
¼ tsp cumin powder
½ tsp garam masala
½ tsp aamchur / dry mango powder
2 tbsp coriander, finely chopped

½ tsp salt
2 tbsp corn flour
1 tbsp maida
¼ tsp chilli flakes
¼ tsp salt
½ cup water
1 cup bread crumbs

 

Method

In a large kadai, heat oil and sauté chillies and ginger paste, then add a bunch of palak, cooking until it wilts and shrinks.

Cool the palak mixture, blend into a smooth paste, then mix with mashed potatoes, paneer, and breadcrumbs in a large bowl.

 Combine the palak mixture with spices, herbs, and breadcrumbs to form a non-sticky dough, then prepare a smooth maida paste by mixing corn flour, maida, chilli flakes, and salt with water.

Shape veg mixture into cylinders, coat with maida paste & breadcrumbs (double coat). Deep fry or bake at 180°C for 15 min. Serve crispy palak cutlet with tomato sauce.

Moongdal Kachori, healthy version

Ingredients  and Prep

Besan 1 cup

Poha 1 cup

Suji 1 cup

Grind poha and suji  powder fine

Put the pdr in a bowl, add  2-3 tbsp besan

Salt, ajwain crush ½ tsp

Oil 2 tsp/ ghee, mix well,  with hand

Add water, little at a time and knead  to a soft dough., cover and rest dough

Moong dal 1 cup, wash and soak, you’ld be able to crush with hand

Peanuts 1 tbsp roast in medium flame, remove

Heat 2 tbsp mustard oil,  once hot, add the remaining besan, fry in low flame, stirring continuously, once nice aroma comes and oil starts coming out

Add moong dal and fry with besan in medium flame, stirring, you’ll find that the dal and besan are well combined. Now add

Jeer 1 tsp

Saunf 1 tsp

Dhania seeds 1 tsp

Red chili 1

Pepper corms 8-10

Turmeric pdr, ½ tsp

Kashmir red chili pdr ½ tsp

Roast all well

Amchur pdr ½ tsp

Off gas, keep stirring as pan is hot,  once cool, pdr the dal and masala, not fine pdr, hing, mix well

Add salt and mix well

Knead the dough again

Pdr peanuts, 2 green chilies, garlic 3, curd ½ cup  coconut, salt to a fine paste for chutney, grind the roasted peanuts with the rest of the ingredients to a fine paste adding just enough water to make a thick chutney. Heat oil 1 tsp, add mustard seeds 1/2 tsp, once it crackles, add few curry leaves finely chopped and hing, pour over the chutney, mix well, serve with hot kachori.

Take small ball of dough, shape into a cup, put 2 tsp of masala, close the dough well.

Roll the stuffing well, make it a nice ball that perfectly fits into your paniyaram pan

In a paniyaram pan, put few drops of oil in each hole, place the balls in each hole, cover and cook on medium flame

Turn once, keep turning, if need be spread some oil on each, fry in low flame

Put the balls in the center to the side, as center gets cooked fast. These kachoris can be stored as the ingredients are well roasted and powdered.

By frying in this, you use, minimum oil than you'ld while deep/ shallow frying the snacks.
