Sugar Free Khajoor Dates Barfi

INGREDIENTS

for roasting:

1 tsp ghee

½ cup almonds, chopped

½ cup cashew, chopped

¼ cup walnuts, chopped

3 tbsp pumpkin seeds

3 tbsp pistachios, chopped

2 tbsp sunflower seeds

other ingredients:

1/2 cups dates / khajoor, seedless

1 tsp ghee

2 tbsp anjeer, chopped

2 tbsp raisins

½ tsp cardamom powder

 

PREPARATIONS

in a pan heat 1 tsp ghee. add ½ cup almonds, ½ cup cashew, ¼ cup walnuts, 3 tbsp pumkin seeds, 3 tbsp pistachios, and 2 tbsp sunflower seeds.

roast on low flame until the nuts turn crunchy. keep aside.

in a mixer grinder take 11/2 cup dates.

pulse and grind to a smooth paste.

in a large kadai heat 1 tsp ghee, add 2 tbsp anjeer, 2 tbsp raisins.

roast on low flame until they turn aromatic.

add in ground dates paste and cook on medium flame.

mash and cook until the dates paste turn glossy.

add roasted nuts, ½ tsp cardamom powder, and mix well.

combine until everything is well combined and starts to hold shape.

cool slightly, and shape into a small ladoo.

or you can roll over poppy seeds and shape them into a cylindrical log.

wrap in aluminum foil and refrigerate for 2 hours.

finally, cut into thick slices and enjoy dry fruit burfi for a month.

Oats Laddu

 Ingredients

  1 cup rolled oats

¾ cup almonds

½ cup cashew

½ cup peanut

2 tbsp sesame

2 tbsp sunflower seeds

2 tbsp poppy seeds

½ cup coconut, shredded

1 tsp ghee

5 anjeer, chopped

2 tbsp raisins

½ tsp cardamom powder

5 dates / khajoor, seedless

1 cup jaggery

 

Instructions 

  • Dry roast 1 cup of rolled oats until they turn aromatic.
  • Keep roasting for 5 minutes on low flame. Cool completely.
  • In the same pan take ¾ cup almonds, ½ cup cashew and ½ cup peanut.
  • Roast on low flame until the nuts turn crunchy.
  • Transfer to the plate and allow to cool completely.
  • Now take 2 tbsp sesame, 2 tbsp sunflower seeds, 2 tbsp poppy seeds and ½ cup coconut.
  • Roast on low flame until the coconut turns aromatic and golden brown. Keep aside.
  • In the pan heat 1 tsp ghee, add 5 anjeer, 2 tbsp raisins and roast well.
  • Roast until the raisins puff up and turn aromatic. Keep aside.
  • Once the oats are cooled completely, transfer them to the mixer jar and grind them to a fine powder.
  • Transfer the oats powder to a large bowl.
  • Also, take roasted nuts into the mixer jar, and grind to coarse powder.
  • Transfer the nut powder to the same large bowl.
  • Add in ½ tsp cardamom powder, roasted sesame, sunflower seeds and anjeer.
  • Mix well making sure everything is well combined.
  • Now in a mixer jar take 5 dates and 1 cup jaggery.
  • Pulse and grind until the smooth paste is formed.
  • Transfer the dates and jaggery paste into the ladoo mixture and mix well.
  • Crumble and mix making sure everything is well combined.
  • You can also rub between your hands to combine the dates mixture uniformly.
  • Once the mixture is moist, start preparing the ladoo.
  • Oats Laddu can be kept for a month when stored in an airtight container.

FIG HALWA



INGREDIENTS
Sugar 4 tbsp
Water little
Ghee 1 tbsp
Walnut ½ cup
Figs ½ cup
 Roasted Suji / semolina 2 tbsp
Mawa / thickened milk ½ cup

METHOD
Add sugar and just enough water to cover in a pan, boil stirring till sugar melts
Then let it simmer for 3 minutes, keep aside
Put walnuts in a micro-safe plate for 1 ½ minutes, stirring after every 30 seconds. Cool and coarsely powder it
In a pan add ghee, fry figs which were soaked for 2 hours and crushed to a paste with little milk, once it is well fried, add roasted suji, mix well, cook for 2 minutes, add mawa, mix well, cook for another 2 minutes, then add crushed walnuts and sugar syrup, cook stirring till thick and dry, remove, serve garnished with some nuts on top.

DRY FRUITS- NUTS BALLS

INGREDIENTS
figs soaked and drained  1 cup in just enough water
dates de-seeded and soaked 1cup in just enough water
almonds 2 tbsp
char-magaz/ melon seeds 2 tbsp
white til roasted 2 tbsp

to coat
poppy seeds /khua-khua 3 tbsp
desiccated coconut 1/4 cup
roast these two till a nice aroma comes and keep aside

METHOD
remove water if any from dates and figs, put in the blender jar, along with nuts and til, blend to a smooth paste, roll into small balls, roll in toasted coconut- poppy seeds well , or you can shape them flat or out in moulds to shape and then coat too. 

this is a very healthy protein, fibre rich, also in minerals dessert, which is easy to make, unlike other Indian desserts which demand a lot of stirring, to give you muscles or shall I say exercise your muscles to lose !

Fig & walnut cookies

Ingredients: 
1 and 3/4 cup all purpose flour(maida)
1 cup butter
5 tbsp dried figs(finely chopped)
1/4 cup brown sugar
6 tbsp honey
1/2 tsp vanilla essence
1 tsp mixed spices
1 tsp baking soda
2 tbsp dried dates(finely chopped)
2 eggs
175 g rolled oats
1/2 cup walnuts(finely chopped)
Pinch of salt

Method:
Take a bowl, add butter and whisk. Add dried figs, brown sugar and honey and mix.
In a bowl, add vanilla essence, mixed spices, pinch of salt, baking soda and chopped dates and mix.
In a bowl, break the eggs and beat well.
Add the mixture of (vanilla essence, mixed spice and dates) and mix. Add the butter and dried figs mixture and mix well.
Add walnuts and mix well. Add flour and rolled oats and mix.
Grease a baking tray with oil. Put a tablespoon of batter onto the greased tray keeping enough distance between each spoonful.
Bake in a preheated oven at 180-degree centigrade for 25 minutes.
Cool and serve

Fig/ anjeer halwa

Ingredients

dry figs chopped  1/2 kg
milk  2 litres
sugar  1/4 kf
coconut grated  1 cup
cardamom pdr.  1 tsp
slices of nuts to decorate

Method

wash, clean and chop figs
add milk, cook on low flame
when milk reduces, crush the figs with a hand blender
add sugar and coconut, cook till it leaves the sides of the pan on medium flame, stirring continuously
spread on a greased plate, sprinkle nuts on top, press down when still hot, once set, cut into desired shape and serve.

Anjeer basundi

INGREDIENTS
low fat milk    4 cups
finely chopped fresh figs (anjeer)   1 1/2 cups
lemon juice   1 tsp
1 tsp cornflour dissolved in 1 tbsp low fat milk
low fat mava (khoya)   1/2 cup
sugar substitute   2 tbsp
To Garnish
4 fig slices

Method
Refrigerate the fig pieces to chill.
Pour the milk into a broad non-stick pan and bring to a boil. Simmer over a medium flame stirring continuously.
Add the lemon juice drop by drop to the milk stirring continuously. You will see tiny curdled particles, which are required for the grainy texture of basundi. Do not add the lemon juice all at once, if you do so the milk may curdle completely and you will get bigger curdled particles, which is not desirable.
Add the cornflour mixture, khoya and sugar substitute and mix well and simmer for another 1 to 2 minutes.
Cool and refrigerate for at least 1 hour.
Add the chilled figs to the cooled thickened milk and mix well.
Serve chilled garnished with fig slices.

Crumble cake

sweet biscuits crumbs 2 cups                           chocolate pdr 1 tbsp
butter 2 tbsp                                                    sugar 2 tbsp
raisins, dates & figs chopped together 1 cup         caramel syrup 1 tbsp

Mix together butter, sugar & syrup, heat slowly to melt the sugar.
add biscuit crumbs followed by mixed fruits & chocolate pdr.
press thin into a tray & allow to set for 4-6 hours in the fridge.
cut into pieces & serve.

Anjeer ( Figs) basundi

Anjeer ( Figs) basundi           serves 4
Ingredients
4 cups low fat milk         1 ½ cup finely chopped fresh figs     ½ cup low fat khoya
½ tsp lemon juice          1 tsp corn flour dissolved in 1 tbsp milk
2 tbsp sugar substitute/ sugar

Method
Refrigerate the fig pieces to chill. Pour milk into a broad non-stick pan & bring to boil. Lower the flame & simmer on a medium flame for 2-3 minutes, while stirring continuously, add the lemon juice drop by drop. You’ll see the milk curdling. Add the corn flour mixed with milk, milkpdr/ khoya grated, sugar/ sugar substitute, mix well & simmer for 2 minutes. Cool & refrigerate for at least an hour. Then add the fig pieces to the thickened milk, mix well. Serve garnished with fig pieces, nuts & raisins
