Spinach and Lentil Burgers

 Spinach and Lentil Burgers: A Nutritious Plant-Based Delight 

Ingredients

For the Burgers

1 cup cooked lentils (mashed)

2 cups fresh spinach (chopped)

½ onion (finely chopped)

2 garlic cloves (minced)

½ cup breadcrumbs or oat flour

1 egg or flaxseed egg

1 tsp cumin

1 tsp paprika

½ tsp salt

½ tsp black pepper

1 tbsp  oil

 

Preparations

Heat oil in a non-stick skillet over medium heat.

Add the finely chopped onion and minced garlic; sauté until soft.

Add the chopped spinach to the skillet.

Cook until wilted, stirring occasionally.

In a mixing bowl, mash the cooked lentils using a fork or food processor.

Combine the mashed lentils with sautéed vegetables, egg (or flaxseed egg), breadcrumbs (or oat flour), cumin, paprika, salt, and black pepper.

Form the mixture into 4–5 equal-sized patties using your hands.

Ensure they are compact so they hold together during cooking.

In the same skillet used earlier, pan-fry each patty for 3–4 minutes on each side until golden brown.

Serve your delicious spinach and lentil burgers on buns or over a fresh salad for a nutritious meal that’s sure to please!

Carrot and Chickpea Patties

 Crispy Carrot and Chickpea Patties 

  • Gluten-Free Option: Use gluten-free breadcrumbs or oats as a binder to make the recipe suitable for those with gluten sensitivities.
  • Vegan Option: Replace any eggs with a flaxseed or chia seed egg alternative for a completely plant-based recipe.
  • Spice Level: Adjust the spiciness to your preference by adding more or less chili powder, cayenne pepper, or hot sauce.
  • Protein Boost: Incorporate ingredients like cooked quinoa, chickpea flour, or lentils to enhance the protein content of the patties.

Ingredients

  • 1 can chickpeas - 15 oz, drained and rinsed
  • 1 cup grated carrot
  • 1/4 cup finely chopped onion
  • 2 tbsp chopped fresh coriander leaves
  • 1 clove garlic - minced
  • 1 egg
  • 1/3 cup breadcrumbs - or oat flour for gluten-free
  • 1/2 tsp  cumin/ jeera pdr
  • 1/2 tsp paprika
  • salt and black pepper - to taste
  • Oil for frying

    Method In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture. Add grated carrot, onion, parsley, garlic, egg, breadcrumbs (or oat flour), cumin, paprika, salt, and pepper. Mix until the mixture holds together. Scoop out portions and shape into small patties using your hands or a scoop. Heat oil in a skillet over medium heat. Cook the patties in batches for 3–4 minutes per side until golden brown and crispy. Transfer patties to a paper towel-lined plate to remove excess oil. Serve warm with lemon wedges or a dollop of Greek yogurt or green chutney

    Ragi Cutlet


     

    Preparations

    Finely chop the onion and grate the carrot. Collect them in a bowl. Now peel the boiled potato and mash it roughly. Mix the mashed potato with the chopped veggies.

    Now add ragi flour, salt, red chili powder, coriander powder, garam masala and garlic paste. Mix well to prepare a thick mixture. Add 3-4 tbsp water and again mix well.

    Place the breadcrumbs in a plate. Make small cutlets from the mixture and roll them in breadcrumbs. Ensure that the cutlets are properly coated.

    Heat oil in a pan and place the cutlets in it. Shallow fry the cutlets until golden brown from all sides.

    Serve the cutlets with mint chutney or tomato ketchup.

    Tips
    1. You can add spices as per taste you make the cutlets more delicious as per your taste buds.
    2. You can also air-fry the cutlets and add more veggies to make them more nutritious
