Sweet Spicy Mango Pickle

 आम की लौंजी (चटनी)बनाने का यह ... 

 Ingredients

500 grams Mango (Raw), peeled and chopped
1/4 cup Jaggery
1/2 tsp Red Chili powder
Salt to taste
1 tbsp Oil
1/2 tsp Asafoetida 
1/4 tsp Methi Seeds 
1 tsp Cumin seeds
1 tsp Fennel seeds (Saunf)
1/2 tsp Turmeric pdr
 
Black Salt to taste

1/2 tsp Garam masala powder

 

Preparations 

Wash and wipe the mango, cut into wedges and set aside. 

Heat a pan with oil on medium heat, to this add the cumin seeds, fenugreek seeds, fennel seeds and allow them to sizzle. 

To this add hing and turmeric powder. 

Now add the freshly cut raw mango wedges and give it a good stir. 

To this mango mixture, add about three fourth cup of water, salt, black salt and red chili powder. 

Mix thoroughly until the mixture is well combined. 

Cover and cook the mangoes for about 10 minutes on medium flame until it has softened. Sometimes it will take a little longer based on how raw the mangoes are.

Open the lid, add the jaggery and garam masala. Stir to combine. 

Cook the Aam Ki Launji until the jaggery has completely melted and the mixture has thickened. 

Switch off the flame and allow the Aam Ki Launji Pickle to come to room temperature.

Refrigerate the sweet n spicy mango Pickle  in a glass bottle for about 2 to 3 weeks and use as required.

Serve the sweet n spicy Pickle Recipe with paratha, roti, curd rice, dosa, bread toast.

Left-over roti noodles

 This may contain: someone is cutting up some tortillas on a plate  

At times, you may have quite a few left-over rotis. At present state of economy, with millions starving in the world, it is not wise to waste food in any form. Best idea is to turn left-over rotis into noodles !  You can be innovative, make a nice dessert too, in the next recipe.

Ingredients

left over rotis see from the photo above how to roll roti and cut into thin strips

onion 1-2 finely chopped depending on the amount of rotis leftover

green chilies chopped to taste

ginger 1 tsp finely chopped

garlic 1 tsp finely chopped ( optional)

tomatoes 1-2 finely chopped

capsicum finely chopped 2 tbsp

corn boiled 2 tbsp

salt to taste

chaat/ garam masala 1/2 tsp

coriander leaves 1 tsp finely chopped

some grated cheese ( optional)

 oil 1 1/2 tbsp

Preparations 

heat oil in a pan, add ginger, garlic fry well for a minute

add onion, green chilies fry well till onion is light brown 

add tomatoes, add wee bit salt and fry till soft

add capsicum, corn fry for another 2-3 minutes adding salt and garam masala to taste

now add cut roti noodles, coriander leaves, mix well on low flame

keep the pan covered for 2 minutes, now add cheese, mix well, cover for another minute for the cheese to melt

serve your yummy roti noodles hot with some sauce if desired.
