Feta-and-Dill-Stuffed Artichokes

Ingredients

12 ounces rustic bread (¾ loaf)
 
6 artichokes (8 ounces each), bottoms and leaf tips trimmed
 
2 tbsp extra-virgin olive oil, plus more for drizzling and baking dish
 
3 ounces feta cheese, crumbled
 
3 tbsp chopped fresh dill leaves, plus sprigs for serving
 
1 cup low-sodium chicken/ veg broth 
 
Coarse salt and freshly ground pepper

 

Directions

Preheat oven to 350 degrees. Remove crust from bread and tear into 1/2-inch pieces (you should have 4 cups). Spread in a single layer on a rimmed baking sheet; dry in oven, 10 to 15 minutes. Let cool.

Stand artichokes in a saucepan just large enough to hold them. Add water until 3/4 inch up sides of pan; bring to a boil. Reduce to a simmer, cover, and steam until artichokes are tender, 30 to 35 minutes. (Add more water as needed.) Transfer to a plate; let cool, then slice in half lengthwise. Scoop out fuzzy chokes with a spoon; discard.

Preheat oven to 375 degrees. In a bowl, combine bread, oil, cheese, dill, and broth. Season mixture and insides of artichokes with salt and pepper. Divide stuffing among artichokes, mounding tops; drizzle with oil. Place in an oiled baking dish; bake until heated through and tops are golden brown, about 25 minutes. Drizzle with more oil, top with dill sprigs, and serve.

Avocado, Chocolate Chip Cookies

Avocado is a great way to substitute butter in a dessert recipe.

Ingredients  
 
1 avocado (4 1⁄2 ounces) 
 
1⁄2 cup (1 stick) unsalted butter, at room temperature 
 
1 1⁄2 cups dark brown sugar 
 
2 large eggs, at room temperature 
 
 2 tsp. pure vanilla extract 
 
2 cups all-purpose flour 
 
1 tsp. baking soda 
 
1 tsp. coarse salt 
 
1⁄2 tsp. baking powder 
 
1 1⁄2 cups old-fashioned rolled oats 
 
 1 3/4 cups semi-sweet chocolate chips 
 
 
Directions:  
 
Cut the avocado lengthwise, removing the pit and the skin. Place the flesh in a large bowl, add the butter and the brown sugar. Combine until texture appears fluffy and creamy - this should take about three minutes. 
 
Add the eggs one at a time, then add the vanilla extract. Add the flour, baking soda, salt and baking powder, combining slowly and ensuring that you do not over-mix the batter. Add the oats and the chocolate chips, mixing well. Refrigerate for 1 hour. 
 
Next, preheat the oven to 325°F and line a baking sheet with parchment paper. Using wet hands, roll the dough into 12 balls, flattening the cookies with the palm of your hands, creating 2 1/2-inch disks. Place on a baking sheet and bake for 20 minutes. The cookies should be slightly golden brown on the edges, but soft in the middle.  
 
Remove from the oven and leave to rest for at least three minutes. Transfer to a cooling rack, then serve immediately or store in an airtight container in the refrigerator for five days. The cookies may also be stored in the freezer for up to three weeks.

Portobello Mushrooms with Avocado Pesto

Ingredients (3 servings)  
 
2 cups baby kale leaves 
 
1-2 tbsp. pine nuts, lightly toasted 
 
1/3 cup freshly grated Parmesan cheese 
 
3 cloves garlic 
 
4 tbsp. extra-virgin olive oil, divided 
 
1 pinch coarse salt 
 
1 avocado 
 
 1/4 cup crumbled queso fresco / fresh cheese
 
Salt and pepper 
 
 
Directions:  
 
Preheat the oven to 450°F. Meanwhile, rub a tablespoon of olive oil onto the mushroom caps and place them cap side down on a foil-lined rimmed baking sheet. Sprinkle with salt and pepper and roast for a good 15 minutes until soft. 
 
While the mushrooms are in the oven, put the kale, pine nuts, cheese, garlic, and a pinch of salt in a food processor, adding three tablespoons of olive oil until the texture takes on a pesto-like consistency. 
 
Mash up the avocado until smooth, adding it to the pesto mix. Stir well and spoon the pesto and guacamole sauce into each roasted cap, topping it with some queso fresco cheese.

Carta di musica Flatbread

Carta di musica, also known as Pane Carasau, is a Sardinian flatbread that is very simple to make and can last for months. The name 'carta di musica' comes from how thin the bread must be to turn out right, thin enough to be able to read a sheet of music through it. The result is a thin and crispy dried bread that goes perfectly with any kind of dip and smells divine.

Traditionally, carts di musica is the bread Sardinian shepherds would take with them in the fields, and they paired it with other simple local foods like wine, cheese, and olives.

Carta di Musica Flatbread  

Ingredients for Carta di Musica Flatbread
 
All-Purpose flour - 3/4 cup (4 oz) 
 
Water - 1/4 cup plus 2 tbsp. 
 
Olive oil - 2 tbsp. (extra-virgin) 
 
Kosher salt - 1 1/2 tsp. 
 
Olive oil - 1/2 cup 
 
Coarse salt - 2 tbsp. 
 
Method of preparing the Carta di Musica Flatbread: 
 
Preheat the oven to 450°F (220°C). 
 
Add the flour, water, extra-virgin olive oil, and salt in a bowl of an electric mixer fitted with the dough hook. Mix for 5 minutes. 
 
The dough should be firm to touch and smooth. If needed, adjust the dough with additional flour or water. 
 
Make sure that the dough isn't sticky. Form the dough into a ball and wrap it in plastic wrap. 
 
Let it rest for at least 30 minutes. 
 
Now, divide the dough into 3-oz pieces. 
 
Flour each piece properly and then roll it on a floured surface until very thin. 
 
If you have one, you can run each dough ball through a pasta machine. 
 
Prick the entire surface of the flatbread with a fork. 
 
This will help the steam to escape. 
 
Bake the bread on a sheet pan for 3-4 minutes. 
 
Make sure it has a golden brown color. 
 
After you remove the bread from the oven, brush it with the olive oil and sprinkle it with the coarse salt.

                       Clean--cooking oil Or hot water + coarse salt  + dish towel       

6. Enamel--  Baking soda + warm water + soft bristle brush

7.  Non-stick Or Anodized aluminum-   dish washing detergent + hot water + non-abrasive sponge

This 2 ingredients stainless steel cleaner recipe will work well even on small kitchen appliances. You can even try it on your toaster. It will remove all those little scorch marks in next to no time.
All you need are equal parts Olive Oil and Vinegar. Mix them up and use in a spray bottle. It’s that simple!
