Elderberry Cookies

The blossoms of the elderberry can be identified immediately with the appearance of small white flowers in late spring along with black-red fruits reminiscent of berries. The elderberry itself can be found in any health-food store as an ingredient in cold and flu and syrups. The fascinating thing that I discovered is that elderberry extract is great for cooking and baking and so easy to prepare at home, so I came up with a recipe that uses elderberry extract to make a delicious cookie that is sure to sweeten your day.


Ingredients for elderberry extract: 

Sugar - 3.5 oz. 

Water - 3.5 fl oz. 

Elderberry flowers - 0.7 oz 

Ingredients for elderberry cookies: 

Flour - 1 3/4 cups 

Butter - 9 oz. 

Sugar - 3.5 oz. 

Elderberry extract - tbsp. 

Chocolate chips - 1/3 cup 

Lemon zest - 1 tbsp. 

Vanilla Extract - 1 tbsp. 

Powdered sugar - as garnish

Method of preparing the elderberry extract: 

Take a few elderberry flowers and cook them in water, almost to a simmer, at a ratio of 1 : 5 (flowers : water) 

Remove the flowers and leave only liquids in the pot. Bring to a boil, stirring. Add the sugar and simmer. Let the sugar melt slowly, simmering, until you have a syrup consistency, stirring constantly. Once you're satisfied with the consistency, remove from the heat, allow cooling and store in a glass jar in the fridge.

Method of preparing the elderberry cookies: 

 In a bowl mix 1/2 a cup of sugar, vanilla extract, lemon zest, and 3 tbsp. of elderberry extract. 

Add the butter and beat until you get a creamy texture. Sift the flour and add to the sugar and butter, mix until a soft dough is formed. Add the chocolate chips. 

Roll the dough to a thickness of 1/3-inch (1 cm) and wrap in plastic wrap, put in the refrigerator for an hour. 

Preheat your oven to 350 °F (180 °C), remove the dough from the refrigerator, and cut the roll into slices. Apply some elderberry extract over the cookies and sprinkle with powdered sugar. 

Bake in the oven for 15-20 minutes until lightly golden. You can sprinkle powdered sugar on top before serving, after the cookies have cooled down a little. 

Chef's Tip: The syrup will last 3 months in the fridge. It can be used to top many desserts, you can also add it to drinks or use it as a homemade cough syrup.

Cherry Brownie Dream Bars

  

Ingredients

10 ounces maraschino cherries

18 ounces brownie mix plus ingredients needed to make brownies

7 ounces marshmallow creme

1 cup creamy peanut butter

12 ounces semi-sweet chocolate chips

3 cups crispy rice cereal

Instructions

Drain maraschino cherries and pat dry with a paper towel. Cut in half and set aside.

Prepare brownies according to package directions for 9×13 baking dish. Cool completely and refrigerate for at least one hour. Spread marshmallow creme on top of chilled brownies and return to the refrigerator for at least 30 minutes. Top with halved cherries.. Melt peanut butter and chocolate chips together in a microwave safe-container. Heat on high heat in 30 second intervals, stirring in between. 1 cup creamy peanut butter, 12 ounces semi-sweet chocolate chips Stir in crispy rice cereal until completely coated. Spread mixture carefully over the top of the cherries. Return to refrigerator for another hour before cutting into bars.

 Options for variations

  • Top with a layer of cherry frosting for even more cherry flavor and richness.
  • Swap semi-sweet chips for dark chocolate chips for a richer, deeper chocolate flavor.
  • Adds even more texture to the topping by swapping the creamy peanut butter for crunchy peanut butter.
  • Stir in chopped peanuts or other nuts into the brownie mix for extra crunch.
  • Add a drizzle of melted chocolate or white chocolate over the top before chilling for a decorative touch.
  • Tips

    • Letting the brownies cool completely before adding the marshmallow layer is essential, this ensures the marshmallow cream won’t melt everywhere.
    • Sprinkle a touch of flaky sea salt over the top of the crispy rice topping before it sets. The salty contrast will enhance the flavor and sweetness of the other ingredients.
    •  Line your baking dish with parchment paper or foil for easy removal and cleaner slicing.
  • Use a sharp knife and wipe it clean between cuts for perfect layers.

    Protein Bars With fiber

     Ingredients

     1 can black beans- 15-oz can (425g) drained, rinsed *

    ¼ cup unsweetened cocoa pdr

    ¼ cup peanut butter  OR any nut butter

    cup maple syrup  OR date or agave syrup

     1 cup old fashioned oats



    Chocolate Layer – optional

     1/4 cup chocolate chips

    1/2 tsp coconut oil  OR olive/ avocado oil

     

    Preparations In a food processor, add drained, rinsed black beans, cocoa powder, peanut butter, maple syrup, and oats. Process at medium to high speed until it forms a chocolate paste. You will have to stop the food processor 2-3 times, scrape down the sides of the bowl with a rubber spatula, and process again. You want all the black beans to be puree, but you will still see pieces of oats; that's normal. If the batter is too wet – you should be able to squeeze the batter into a ball. If it's too wet, add a bit more oats, and process to incorporate. Press the batter onto a pieces of lightly oiled parchment paper, place another piece of parchment paper on top, and press to form a flat top. Shape into a rectangle. In a microwave-safe bowl, melt the chocolate chips and coconut oil. Microwave in 30-second bursts, stir between, until it's fully melted. Pour the melted chocolate on top of the bar, leaving the sides free from melted chocolate to make it easier to cut. Place the bar 12 minutes in the freezer to set the chocolate layer. Place the bar on a chopping board, cut into 6 even bars.  

    Store the bars in the fridge for up to 3 days or freeze up to 1 month. Thaw in the fridge the day before.

    Paleo Pumpkin Chocolate Chip Bread

    Ingredients

    2 cups almond flour
    1/4 cup cassava flour (plus a little extra for dusting)
    1/4 cup arrowroot flour
    2 tbsp pumpkin pie spice
    1 tsp baking powder
    1/4 tsp salt
    1/4 cup melted butter, ghee, or coconut oil, melted and cooled
    1/3 cup maple syrup
     1 cup pumpkin puree
    2 medium eggs at room temperature 
    1 tsp vanilla extract
    1 cup chocolate chips (plus a few more for sprinkling on top) you can use a no-added sugar chocolate or paleo chocolate bar if you'd like to follow strict paleo rules  

    InstructionsPreheat oven to 350ยบ F. Grease a loaf pan and line it with a strip of parchment paper. Sprinkle a dusting of cassava flour into the pan and tap the pan to coat each corner and all sides with flour. Tap out excess. In a bowl, combine the flours, baking powder, pumpkin pie spice, and salt. Whisk thoroughly to Combine. With an electric mixer, beat the butter and maple syrup until combined. Add the pumpkin and mix to combine. Scrape the bowl down on all the sides and across the bottom. While mixer is on low speed, add the eggs, one at a time, followed by the vanilla. Beat until batter is thoroughly combined and there are no crumbs. Stir in the chocolate chips. Pour the batter into the prepared pan. Using a spatula or spoon, smooth the top of the loaf and sprinkle with a few more chocolate chips. Bake for 50-60 minutes, or until golden-brown and a toothpick inserted into the center comes out with just a few moist crumbs. Let cool completely. Remove from pan and slice. Enjoy!

    Crinkle Brownie Cookies

      

     

    Ingredients

    1/4 

    Preparations

    Preheat the oven to 180C.
    Place the butter and chocolate into a heatproof bowl and set over a pan and gently simmering water.
    Allow to melt, stirring occasionally until fully melted. Remove the bowl from the heat and set aside for the moment.
    In the bowl of a stand mixer fitted with the whisk attachment, or using an electric hand mixer, whisk together the eggs and sugars, on medium-high speed, for exactly 5 minutes.
    Once the eggs have been mixing for exactly 5 minutes pour in the chocolate mixture and mix for a minute or so to combine.
    Meanwhile mix together the dry ingredients, sieving the cocoa powder if it has lots of lumps.
    Add the dry ingredients and mix very briefly just until combined. Use your spatula to give one last mix, scraping the bottom of the bowl to make sure everything is evenly combined.
    Use a ice cream scoop to form the cookies. The batter will be a little on the wet side, so invert the cookie scoop just above the baking tray to avoid spills.
    Make sure to leave plenty of space between each cookie as they will spread. Sprinkle each cookie with a little flaked sea salt before placing into the oven and baking for 12 minutes.
    The cookies will come out of the oven with that wonderful crinkled look and slightly domed. They will collapse a little as they cool but this helps form that perfect fudgy center.
    The cookies will be very soft so allow them to cool on the baking trays for at least 20-30 minutes before removing from the tray to cool completely. These cookies will keep for 4-5 days but will be best within the first 3 days.

    Hot Chocolate

      

    Ingredients

     Preparations
    In a vessel, add milk once it starts heating, add chopped white chocolate, chocolate chips and condensed milk. Stir it continuously to ensure it doesn't stick to the bottom.
    Add vanilla essence to it and mix it well.
    Once the chocolate melts switch off the gas.
    Transfer it into cups and serve it hot, topped with whipped cream.

    Brownie Sundae

      

     Ingredients

    Brownies – store-bought or mix 

    Vanilla ice cream – 2 scoops per person

    Chocolate sauce – to drizzle

    Whipped cream, nuts, or chocolate chips – optional

    Method

    Warm the brownies slightly.

    Place them on a serving plate or in dessert bowls.

    Top generously with ice cream.

    Drizzle with chocolate sauce.

    Finish with your favourite toppings.

    Plating Hack: Serve in dessert cups for a cafรฉ-style look.

    Pro Tip: Cookies, cake, or muffins work as substitutes for brownies.

    Banana Oat Energy Bites

    Ingredients: 
     
    2 ripe bananas 
     
    2 cups rolled oats  
     
    ¼ cup almond butter (or peanut butter) 
     
    ¼ cup honey 
     
    2 tbsp chocolate chips  
     
    ½ tsp cinnamon pdr

    Directions: 
     
    1. In a large mixing bowl, mash up the bananas, then stir in the oats, almond butter, honey, chocolate chips and cinnamon. 
     
    2. Next, form the balls using about 2 tablespoons of the mixture. Repeat until all the mixture has been used up. 
     
    3. Refrigerate for 2 hours until the oats have softened and keep stored in the refrigerator.

    Rice Crispies Chocolate squares

      

    Ingredients 

     rice crispies 6 cups

    canola oil 

    unsalted butter 2 tbsp 

     corn syrup 1 cup

    chocolate chips 1/2 cup

    sugar 1 cup 

    Preparations

    Generously butter 9x13" baking pan and set aside.

    Mix peanut butter, corn syrup, and 1/2 cup sugar in a large pot, stirring over medium heat until the peanut butter melts. Bring the mixture to a boil. Remove from the pot from the heat.

    Stir in rice crispies until well combined.

    Transfer the mixture into the prepared pan and pat it down with buttered hands or a spatula.

    Make a caramel mixture using 1/2 cup sugar, butter and a little water. Once the caramel turns golden, add the chocolate chips. when the chips are melted, spread the mixture over the flattened, crispy mixture and let it cool for about 20 minutes before cutting into squares.

    Note:  Rice crispies can be made by frying long-grained rice in canola oil using a fine sieve in small batches.

    Vegan Oatmeal Chocolate Chip Cookies

    Ingredients

    • 3/4 cup (5 1/4 ounces) packed light brown sugar

    • 1/2 cup canola oil

    • 2 tbsp agave nectar

    • 1/2 tsp salt

    • 1 tbsp water

    • 2 tsp vanilla extract

    • 1 cup (5 ouncesall-purpose flour (see notes)

    • 1 cup rolled oats

    • 1/4 cup desiccated coconut

    • 1/4 tsp baking soda

    • 1 1/4 cups chocolate chips (see notes)

    Directions

    Adjust rack to middle position and preheat oven to 375°F (190°C). Line baking sheet with parchment paper.

    In a large bowl, whisk brown sugar, oil, agave, salt, water, and vanilla until combined. Stir in flour, oats, coconut, baking soda, and chocolate chips until combined.

    Scoop onto baking sheet, spacing evenly apart and gently press to about 3/4-inch thick. Bake until lightly golden and just set, about 10 to 12 minutes. Cool on pan 10 minutes, then transfer to cooking rack to finish cooling. 

     

    Notes

    Whole wheat flour can replace 1/4 cup of the all-purpose flour.

    You can purchase vegan chocolate chips online or look for high-quality dark chocolate that doesn't contain dairy or animal products and then chop it into chunks.
