Peri Peri Masala At Home

 Originating from African and Portuguese culinary traditions, Peri Peri (or Piri Piri) is centered around the African Bird's Eye chili. While the original recipe relies on a wet marinade made from crushed fresh peppers, garlic, and citrus, the dry spice seasoning version has taken the global food scene by storm. The seasoning has become a staple for everything from crispy French fries and buttered popcorn to grilled chicken, roasted veggies, and paneer. 

 Ingredients
2 tbsp Kashmir red chilli powder
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp dried oregano
1 tbsp black salt

1 tbsp caster sugar
½ tsp citric acid powder
½ tsp freshly ground black pepper  

 

Preparations

Ensure all your powdered ingredients and mixing bowls are completely dry to prevent the seasoning blend from clumping during the storage process.

 Combine the Kashmir red chilli powder, garlic powder, onion powder, dried oregano, black salt, caster sugar, citric acid, and black pepper in a small bowl.

Now, transfer the mixed spices to a small blender jar and pulse briefly for ten seconds to ensure all the herbs are finely ground and uniformly integrated. 

Store the freshly made Peri-peri masala in a dry airtight shaker and keep in a cool pantry up to 3 months.

Soak kokum petals in warm water for 10 minutes. Squeeze and strain to extract the liquid. Discard petals.
Whisk curd with cold water until thin and frothy.
Stir in kokum extract, green chilli, curry leaves, ginger, black salt, and salt.
Taste and adjust seasoning. Serve chilled, garnished with coriander. Tip: Strain before serving for a smoother texture.

Schezwan Style Corn (India-China Fusion)

Method
  1. Add sweet corn pellets to boiling water and boil for 3 minutes
  2. Strain out water. In a bowl, add the sweet corn kernels and add chilli flakes, black pepper, salt, lemon juice, Schezwan sauce, soya sauce and add the chopped spring onion mix well.
  3. Garnish with spring onion and shredded carrot and serve hot.

Matte Ke Aloo ( Potatoes in Buttermilk gravy)

Matthe ke aloo 

Ingredients

1 litre mattha (buttermilk)

250 grams boiled potatoes

5-6 green chillies, slit

1 tsp grated ginger

1 tsp cumin seeds

1 bay leaf

1 black cardamom

4-5 whole black pepper

2 whole red chillies

1/2 tsp red chilli powder

1/2 tsp turmeric powder

1 tsp coriander powder

1/2 tsp black salt

Salt to taste

1 tbsp roasted kasturi methi

1 tbsp fresh coriander leaves, chopped

Directions

1. Cook The Whole Spices

Heat mustard oil in a pan and add cumin seeds along with the bay leaf, cardamom, pepper and other whole spices. Once they start crackling, add whole red chillies, grated ginger and slit green chillies. Cook them on a low flame for about 2 minutes.

2. Cook The Powdered Spices

In a small bowl, mix the powdered spices with 2-3 teaspoons of water to form a paste. Add this paste to the pan once the whole spices are ready. Cook on low flame and stir carefully to avoid burning. If needed, switch off the flame while stirring to prevent the spices from sticking.

3. Add The Potatoes

After 2 minutes, add the boiled and lightly mashed potatoes. Mix well with the masala, adding a little water so that the flavours coat the potatoes evenly.

4. Add The Buttermilk

Keep the flame low and slowly pour in the buttermilk, stirring continuously so it blends smoothly with the potato and spice mix. Cook gently on low flame until the colour of the curry changes.

5. Season And Finish

When the curry begins to boil, add both black salt and regular salt. Stir in roasted kasuri methi and fresh coriander leaves. Allow the curry to simmer for a few minutes until it reaches the desired consistency.

Cucumber-Kasturi Methi Raita To beat the heat

Ingredients:

Kasturi methi - 2 tbsp

Water - 1/2 cup

Oil - 2 tbsp

Hing - 1/2 tsp

Curd - 2 cups

Green chilli, chopped - 1

Black salt as per taste

Coriander chopped - handful

Chilli powder - 1/2 tsp

Roasted cumin powder - 1½ tsp

Cucumber - 1, medium

 Preparations

Soak kasturi methi in water and set aside.

Heat the oil in a pan and add hing.

Drain out the water from the kasturi methi and add it to the pan.

Cook the methi for a moment and add it to the bowl of curd.

Into the bowl, add finely chopped green chilli, black salt, chopped coriander, chilli powder, roasted cumin powder, and one medium-sized cucumber, completely grated.

Mix it well and serve it in a bowl, garnished with chopped cucumber and mint.

Jamun Chia Cooler

Ingredients

30 grams jamun (approx. 5 pieces)

15 grams chia seeds (soaked)

1/2 tsp black salt

1/4 tsp salt

1/2 tsp chaat masala

2 sachets stevia

A pinch of chilli powder

Cold water or chilled soda 

Ice cubes

Method

In a small bowl, soak chia seeds in warm water for a few minutes and set aside.

Soak jamun briefly in warm water, then de seed and lightly mash them.

Add the mashed jamun and soaked chia seeds to a glass.

Add salt, black salt, chaat masala, and stevia.

Cucumber Chaas/ Buttermilk Is High In Protein With Curds & Sattu

The summer heat in India can get unbearable and having cooling drinks on hand is important. This cucumber chaas is not just refreshing and hydrating, but is also packed with protein from curd and sattu. What’s more, it has a lot of fibre and electrolytes from cucumber and sabja seeds, which makes it a cooling option for summer afternoons or post‑workout sipping. Sip on this high-protein, fiber-rich cucumber chaas on those summer days when the heat drains your energy, but you still want something light, cooling, and nourishing.

 

Ingredients :

For the green paste -

 
1/2 cucumber


Handful of coriander leaves
 

1/2 inch ginger
 

1 green chilli
 

2 tsp sattu powder
 

\Salt to taste

1/4 roasted cumin powder


3-4 tsp curd

Grind all the above ingredients to a smooth paste adding little water

For the drink -

 
1 cup curd


1/2 cup water


Prepared green paste


Ice cubes as needed or add cold water


Black salt (to taste)


Soaked sabja seeds

 

Method:

Make the green paste: Wash and chop the cucumber into small pieces.

Roughly chop the coriander leaves, ginger, and green chilli.

In a small mixer or blender jar, add the chopped cucumber, coriander leaves, ginger, green chilli, 2 tsp sattu powder, 3–4 tsp curd, ¼ tsp roasted cumin powder, and a pinch of salt.

Blend on medium speed until you get a smooth, bright‑green paste. If it is too thick to blend, add 1–2 tsp water just to help the blades move.

Once smooth, scrape the paste into a small bowl and set aside.

Whisk the curd base: In a large mixing bowl, add 1 cup curd and whisk it with a spoon or hand‑whisk until smooth and slightly frothy.

Add ½ cup water to the curd and whisk again until the mixture is well combined and of a light drinkable consistency.

Combine the green paste with the chaas: Add the prepared green paste to the whisked curd‑water mixture. Stir well until the chaas turns a uniform light green and the flavours are evenly distributed.

Taste and adjust: Add more salt or a little black salt if you want a stronger chaat‑style tang.

If it’s too thick, add a splash more water; if too thin, you can add a little extra curd.

Final flavour and chill: Grind a pinch of black salt lightly between your fingers and stir it into the chaas for a characteristic sharp, mineral‑like flavour.

Add the soaked sabja (basil) seeds and stir so they distribute evenly through the drink. The seeds will add a slight cooling texture and a tiny boost of fibre.

If you like it very cold, add a few ice cubes directly to the chaas and stir once, or chill the chaas in the refrigerator for 10–15 minutes instead.

Serve: Pour the high‑protein cucumber chaas into glasses.

Garnish with a few extra coriander leaves or a sprinkle of roasted cumin powder on top, if you like.

Serve immediately, either on its own or as a light meal accompaniment with roti, rice, or snacks.
