High-Protein Breakfast Casserole

 Ingredients

 2 tbsp extra-virgin olive oil, divided

4ounces sliced fresh wild mushrooms, such as oyster or shiitake (about 1cup

1 medium red bell pepper, chopped (about cups)

 1smallyellow onion, chopped (about 1cup)

¼tsp salt, divided

1(5-ounce) package baby kale

1½ tsp garlic powder

¼ tsp crushed red pepper

large eggs

½ cup small-curd 2% reduced-fat cottage cheese

 cup whole milk

 cups shredded Colby-Jack cheese, divided OR mozzarella / mild cheddar cheese can be substituted

 

Preparations

Preheat oven to 350°F. Lightly coat an 8-inch-square baking dish with cooking spray. 

Heat 1 tablespoon oil in a large skillet over medium-high heat. Add 4 ounces sliced mushrooms; cook, undisturbed, until browned, about 4 minutes. Stir and continue to cook, stirring occasionally, until the moisture has evaporated, about 3 more minutes. Add chopped bell pepper, chopped onion, ⅛ teaspoon salt and the remaining 1 tablespoon oil; cook, stirring often, until softened, about 4 minutes. Add 5 ounces baby kale, 1½ teaspoons garlic powder and ¼ teaspoon crushed red pepper; cook and stir until the kale is wilted, about 2 minutes. Set aside to cool slightly, about 5 minutes.  

Combine 8 eggs, ½ cup cottage cheese, ⅓ cup milk, ¾ cup Colby-Jack and the remaining ⅛ teaspoon salt in a blender; process on low speed until smooth, about 20 seconds. 

Spread half of the kale mixture in the bottom of the prepared dish; pour the egg mixture over the top. Scatter the remaining kale mixture over the egg mixture (most of the vegetables will sink to the middle). Top with the remaining ¾ cup Colby-Jack. Bake until puffed around the edges and golden brown, about 40 minutes. Let stand for 10 minutes before serving.

Cheesy Broccoli Rice Casserole

Ingredients 

3 cups cooked rice 

1/4 cup butter 

1/4 cup onion diced

1/4 cup celery diced 

16 ounces steamed fresh broccoli or frozen broccoli thawed
 
10 3/4 ounce condensed cream of mushroom soup, undiluted
 
10 3/4 ounce condensed cream of celery soup, undiluted
 
1/3 cup half and half
 
1 1/4 cup Velveeta cheese diced 
 

Instructions

Preheat oven to 350 deg F / 180 C
 
Cook the rice according to package directions. Set aside. Steam or thaw chopped broccoli and set aside.
 Melt the butter in a large skillet over medium-high heat. Add the onion and celery and cook, stirring often, for 5 minutes, or until the vegetables are just softened.Stir in the canned soups and half and half until combined. Add the processed cheese cubes and cook, stirring constantly, until melted. Stir in the steamed or thawed broccoli and rice until combined. Transfer the broccoli mixture to a 2-quart baking dish that has been sprayed with cooking spray. Bake the casserole for 60 minutes, until casserole is bubbly and beginning to brown on the top.  Cool for 10 minutes before serving.

Delicious Cauliflower Casserole

Comfort food at its best, casseroles are a winter favorite. But while most casseroles tend to include rice or potatoes, here's a low carb alternative you'll undoubtedly enjoy. This casserole recipe features cauliflower as its star ingredient and will make for a tasty and filling vegetarian side dish. Combined with melted cheese, another main ingredient, this casserole recipe will surely not disappoint! 

Ingredients: 
 
1 large cauliflower head, cut into florets 
 
1 cup whole milk 
 
1 egg 
 
2 tbsp flour 
 
2 tsp salt 
 
1/2 tsp fresh ground black pepper 
 
1 1/2 cups shredded mozzarella cheese 
 
2 tbsp grated Parmesan cheese
 
1 tbsp minced coriander leaves

Preparations
 
1. Fill a large pot with water, place over heat, and bring to a boil. Boil the cauliflower florets for 5 minutes, until they have slightly softened. In the meantime, preheat your oven to 350°F.  
 
2. In a medium bowl, add the milk and the egg, and whisk. Add the flour, salt, black pepper and 1 cup of mozzarella to the mixture and continue whisking. Finally, stir in all the cauliflower.

3. Pour the whole mixture into a 7x11" casserole dish and top it off with the remaining mozzarella. Place the dish on a rack placed in the upper half of the oven. Cook for 25 minutes, until the top is golden brown and bubbling. 
 
4. Remove from the oven and sprinkle with Parmesan and coriander before serving.

Yummy Zucchini Casserole

  

Ingredients

4 medium zucchinis, sliced

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

3 large eggs

1 sweet onion, finely chopped

1 tsp garlic powder

1 cup seasoned breadcrumbs

2 tbsp olive oil

Salt and pepper to taste

 

Preparations

Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

In a skillet over medium heat, heat olive oil and sauté the chopped onion until translucent (about 5 minutes).

Add sliced zucchini and garlic powder; sauté until slightly softened (3-4 minutes).

In a bowl, whisk together eggs, salt, and pepper.

Combine sautéed vegetables with cheeses and egg mixture in a large bowl; mix gently.

Pour the mixture into the prepared baking dish, top with breadcrumbs, and bake for 30-35 minutes or until golden brown.

Eggplant Casserole

 Ingredients

2 tbsp butter
2 tbsp olive oil
1 large onion, diced
2 garlic cloves, minced
1 yellow pepper, diced
2 portabello mushroom caps, sliced into bite-sized pieces
3 large tomatoes, diced
1 tbsp fresh parsley, finely chopped
1 tbsp fresh basil, finely chopped
1 tsp fresh thyme
1/4 cup vegetable oil
2 medium eggplants, cut into bite-sized pieces
salt to taste
1 tbsp flour
1/2 cup Parmesan cheese
4 ounces fresh mozzarella, sliced OR roughly 1 cup

Instructions

Preheat the oven to 375°F. Coat a 2 1/2-quart casserole dish with cooking spray.

In a large skillet heat the butter and olive oil over medium-low heat. Add in the onions and cook for 3 minutes or so (don’t let them brown). Add in the peppers and garlic and continue to cook for an additional 3 minutes. Add in the mushrooms and cook them until they start to release their moisture (about 3 to 4 minutes). Finally, add in the tomatoes and herbs and allow to simmer for a couple of minutes. Remove the mixture to a large bowl and set aside.

In the same skillet, heat the vegetable oil and then add the eggplant and salt. Allow the eggplant to cook until it’s browned, stirring frequently. Once lightly browned add in the flour and stir. Add the tomato mixture and stir everything together and bring it to a simmer.

Spoon in 1/3 of the vegetable mixture into the prepared baking dish. Top it with some Parmesan cheese and a few slices of mozzarella. Spoon more of the veggies on top of the cheese followed by more cheese. Spoon in the last of the mixture and top it all of with a layer of cheese on top.

Bake the casserole for 30 minutes. Allow the casserole to stand a few minutes before serving.

Zucchini Casserole

 Loose Zucchini Casserole
 
 
Ingredients- 
 
Zucchini - 2 1/2 lb. (1/4-inch-thick slices) 
Red bell pepper - 1 (diced) 
Yellow onion - 1/2 (chopped) 
Olive oil - 3 tbsp. 
Salt and Pepper - to taste 
Heavy cream - 3/4 cup *
Eggs - 2 large **
Cheddar cheese - 8 oz. 
Garlic - 3 cloves (chopped) 
Parmesan cheese - 1/2 cup grated 
Parsley - 1/3 cup (chopped) 
Breadcrumbs - 1 1/2 cups 
Butter - 1/2 stick

**  For a savory casserole, you can effectively replace eggs with . silken tofu, yogurt or a mixture of vinegar and baking soda. Silken tofu provides a similar binding and creamy texture as eggs. Yogurt can be used in place of eggs for binding and adding richness. A mixture of vinegar and baking soda can help with leavening, particularly in recipes where eggs are used for that purpose.

 

Method of preparation:
Preheat the oven to 400°F. On a large sheet tray, combine the zucchini, bell pepper, and onion. Drizzle with oil, season, and toss. 
 
Bake for 30 minutes and drain through a colander. Press to release liquids. 
 
Pat with a towel and set aside. 
 
In a large bowl, whisk together the heavy cream and eggs. Mix in the cheddar cheese, garlic, 1/4 cup of the Parmesan cheese, and all but 2 tablespoons of parsley (reserve this for later). 
 
Mix in the zucchini mix. Transfer to a buttered 9- by- 13-inch, or three-quart, casserole dish. 
 
Reduce the oven temperature to 350°F. 
 
In a small bowl, combine the breadcrumbs and melted butter. Mix in the remaining 1/4 cup of grated Parmesan cheese and 2 tablespoons of parsley. Sprinkle on top and bake for 35-40. 
 
If the topping is browning too quickly, cover loosely with a piece of foil. Let rest for 10 minutes, then serve.

Tips using tomatoes to cook quickly

Keep canned tomatoes in the cupboard and add to pasta sauce, casseroles and soup. Make your own sauce by roasting tomatoes and red capsicum with a splash of olive oil and balsamic vinegar, then puree with a spoon of chili paste or herbs of your choice. Keep in the fridge. This can be used for any recipe which requires tomato gravy- tacos, paneer masala, channa masala, peas-potato. You can try your own recipe using it. Good luck.
