Easy cheesy potato bake

   

Ingredients

Preheat oven to 180°C. Use a mandolin to slice potatoes 2mm thick, then pat dry with paper towel. Set aside. Combine butter, Parmesan and thyme in a large bowl. Add potatoes and toss well. Season with salt and pepper. Arrange vertically in a 11⁄2L capacity baking dish and pour over cream. Cover with baking paper and foil.

Bake for 45 minutes. Remove baking paper and foil, then bake for a further 30 minutes or until crispy and golden on top. Serve.

Marmalade French Toast Casserole

 10 Healthy Casserole Dishes

Ingredients: 
 3 tbsp butter, softened 
 
1 (16-ounce) sourdough French bread loaf, cut into 24 (1/2-inch) slices 
 
Cooking spray 
 
1 (12-ounce) jar orange marmalade 
 
2 3/4 cups 1% low-fat milk 
 
1/3 cup sugar 
 
1 tsp vanilla extract 
 
1/4 tsp ground nutmeg 
 
 6 large eggs 
 
1/3 cup finely chopped walnuts 
 
 
Directions:  
Spread softened butter on one side of each bread slice. 
 
Arrange 12 bread slices, buttered side down, slightly overlapping in a single layer in a 13 x 9-inch baking dish coated with cooking spray. 
 
Spread marmalade evenly over bread, and top with remaining 12 bread slices, buttered side up. 
 
Combine milk and next 4 ingredients (through eggs), stirring with a whisk. Pour egg mixture over bread. 
 
Cover and refrigerate 8 hours or overnight. 
 
Preheat oven to 350°. Sprinkle casserole with walnuts. 
 
Bake at 350° for 45 minutes or until golden. Let stand 5 minutes before serving.

Nutella Swirl Cupcakes

 Ingredients:

1 ¾ cups all-purpose flour
¼ cup unsweetened cocoa powder
1 ¼ tsp baking powder
¼ tsp salt
¾ cup unsalted butter, softened
1 cup sugar
3 large eggs
1 tsp vanilla extract
½ cup milk
¾ cup Nutella, divided


Directions:

Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
In a separate bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla extract.
Gradually add dry ingredients to wet ingredients, alternating with milk, beginning and ending with dry ingredients. Mix until just combined.
Fill each cupcake liner with batter about 2/3 full. Dollop a teaspoon of Nutella on top and use a toothpick to swirl.
Bake for 18-20 minutes, or until a toothpick inserted comes out clean. Allow to cool.
For the frosting, beat ½ cup Nutella and ½ cup softened butter until creamy. Gradually beat in 2 cups powdered sugar and 2 tablespoons milk until smooth and spreadable.
Pipe frosting onto cooled cupcakes and garnish with chopped hazelnuts if desired.

Naan Bread (Serves 16)

Ingredients
• 1 2/3 lb of plain flour
• 1 ½ teaspoons of baking powder
• 1 tablespoon salt
• 1 pint of whole milk
• 1 ¼ oz vegetable oil
• Butter, softened
• 1 handful of garlic cloves, chopped and peeled
• Coriander, chopped

Directions

1. To make the dough, place the flour in a bowl and mix with the baking powder and salt.

2. In a separate jug, mix the milk, sugar, and eggs until the sugar has dissolved. Add this to the bowl with the dry ingredients and combine, kneading to create a soft dough.

3. Once you have your dough, cover the bowl with a damp cloth and leave it to rest for about 15 minutes.

4. If you’re baking your naan bread in the oven, preheat it 437 degrees Fahrenheit (225 degrees Celsius), and place a baking tray in to heat up.

5. After the dough has rested, add the oil to the bowl and mix well.

6. Divide the dough into 16 small pieces and roll out on a floured surface to form circles that are about 4 inches in diameter. Place the dough circles onto the hot tray in the oven and bake for 5 minutes, turning if necessary.

7. Alternatively, you might wish to grill your naan bread. If this is the case, instead of preheating the oven, turn the grill on to its highest setting and set out as many pans as you can on the hob over a high heat. Place one circle of dough in each pan to cook for 2-3 minutes, allowing the underside of the bread to color. Place directly under the grill until the naans begin to puff up.

8. Once cooked, brushed the naans with butter and, while still hot, add the chopped garlic and coriander. Serve immediately.

Cheesy garlic bread

Ingredients:
  • 500 g all purpose flour( maida)
  • ½ tbsp. dry yeast
  • ½ tbsp. salt
  • ½ tbsp. sugar
  • 1 ½ cups water, room temperature
  • ½ tsp bread improver (optional)
  • 1 clove of garlic, crushed
  • 1/3 cup parsley, dry
  • 1/3 cup basil, dry
  • ¼ cup rosemary, dry and chopped
  • 1 tbsp. butter
  • 2 cups mozzarella, grated
Directions: 
1. Mix half the water, the dry yeast, the bread improver, the flour, the sugar, and salt into the mixer bowl and turn it on. Add the remaining water gradually, kneading until you get a uniform dough.
2. Add the olive oil to the bowl and knead for about 2 minutes (add flour if the dough is too sticky), continue to work the dough for about 5 minutes until it separates from the sides of the bowl.
3. Allow the dough to rise for about 1- 1 ½ hours or until it doubles in size. Once it rises, beat the dough to knock it down and let it rise again.
4. After the second rise, remove the dough from the bowl onto a lightly floured work surface and roll out into a 50 x 25 cm sheet.
5. Butter the top of the dough sheet and sprinkle with crushed garlic, the herb mixture, and grated cheese and roll into a loaf. Place the loaf in a baking pan, let the bread rise for about 15 minutes.
6. Bake in a preheated 350°F (180°C) oven for about 40 minutes until the top turns golden brown, remove the bread from the oven and let it cool for about 10 minutes before serving.

This is not my recipe, saw it, while reading about natural antibiotic properties  of garlic and onion, so wanted to share with you all, as most of us may already are going through harsh winter, this will help to keep you warm. INDIAN STYLE ROTI PIZZA



INGREDIENTS
For base
Atta/ wheat flour 1 cup
Maida/ all purpose flour ½ cup
Baking pdr. ½ tsp
Salt to taste
Onion finely chopped ½ cup
Green chilies finely chopped to taste
Coriander leaves finely chopped  1 tbsp
Oil  3 tbsp
Garlic paste 1 tsp ( optional)
Water to make dough
For topping
To marinate
Hung curd  ½ cup
Besan 1 tbsp
Oil 4 tbsp
Garlic finely chopped 1tsp ( optional)
Jeera 1 tsp
Chili pdr. to taste
Hadi/ turmeric pdr. ½ tsp
Garam masala pdr. 1 tsp
Salt to taste
Kasturi methi crushed 1 tsp
Water little to mix
Parboiled vegetables-
cauliflower florets ¼ cup
carrots chopped ¼ cup
 tomatoes 2 de-seed and chopped
paneer cubes ¼ cup
boiled potato cubes ¼ cup
capsicum chopped ¼ cup
grated cheese as needed
oil 2 tbsp to fry veges

METHOD
Mix all ingredients for base, add little water to make soft dough.
Roll into rotis, poke with fork, bake in pre-heated oven @ 170 deg. C. for 10-15 min. or till golden.
For topping, mix all ingredients for marinating, add the vegetables, mix well, marinate for 30 minutes.
Heat oil in a pan, lightly fry the vegetables, spread over baked rotis, put cheese, either put in oven till cheese melts or in microwave for roughly 30-40 seconds, serve hot, cutting with pizza cutter.

BREAD WITH STUFFING



 INGREDIENTS
for dough
maida/ all purpose flour  2 cups
milk pdr. 5 tsp
butter 2 tsp
water 200 ml
yeast 1 1/4 tsp
sugar 1 tsp
salt 1 tsp

for stuffing
red kidney beans/  rajma cooked with spices of your choice 1 cup
cheddar cheese + processed cheese grated as needed
milk for brushing
water for brushing
seasonings- chili flakes, mixed herbs as desired for sprinkling

METHOD
for dough
in little warm water, mix yeast with sugar and keep aside to prove for 10-15 minutes
add butter, salt with flour and milk powder, mix well, add the proven yeast mixture, mix well, add  water little by little to make a soft dough.
cover the dough and keep aside to prove.
punch it well to remove the air, knead well again.
make small balls of the dough, to cover all the sides of the baking tray, cover and allow it to prove for 30 minutes, brush them with milk.
put the rajma in the centre, put grated cheese and seasoning over rajma, sprinkle some chili flakes if desired on the bread.
bake in pr-heated oven at  170 deg. C for 20 minutes or till the bread are nice and brown on top, remove, brush with butter on the bread.
