Dhaniya Panjiri Bhog for Janmashtami

Ingredients

3/4 cup whole coriander seeds

3 tbsp plus 1 tsp ghee

3–4 tbsp chopped almonds

3–4 tbsp chopped cashews

2 tbsp melon seeds

2 tbsp chironji

1/2 cup roughly broken makhana

1/2 cup grated dried coconut

1/2 cup powdered sugar or bhoora

1/2 tsp green cardamom powder


Preparations

Step 1: Roast The Coriander Seeds

Clean the coriander seeds and check that they are free of moisture. Place them in a heavy-bottomed pan and roast over low heat for two to three minutes, stirring continuously.

Once the seeds become aromatic, transfer them to a plate and allow them to cool completely.

Step 2: Roast The Nuts And Seeds

Heat two tablespoons of ghee in the same pan. Add the almonds, cashews, melon seeds and chironji. Roast over low heat until the nuts turn lightly golden. Transfer them to a large bowl and leave them to cool.

Step 3: Crisp Up The Makhana

Add one tablespoon of ghee to the pan, followed by the broken makhana. Roast over medium-low heat for 2 to 3 minutes, or until crisp. Transfer it to the bowl containing the roasted nuts.

Step 4: Roast The Coconut

Add the grated dried coconut to the same pan and roast it for two to three minutes. Keep the heat low and stir frequently, as coconut can brown quickly. Add it to the bowl and allow it to cool.

Step 5: Grind And Roast The Coriander

Grind the cooled coriander seeds into a fine or slightly coarse powder, depending on the texture you prefer.

Heat the remaining teaspoon of ghee in the pan. Add the ground coriander and roast for another one to two minutes. Transfer it to the bowl with the remaining ingredients.

Step 6: Add Sugar And Cardamom

Let all the roasted ingredients cool completely before adding the powdered sugar. Mixing sugar into a hot mixture can make the panjiri sticky or lumpy.

Add the cardamom powder and combine everything thoroughly. The traditional dhaniya panjiri is now ready to be offered as bhog.

Tips To Get The Recipe Right

  • Use whole coriander seeds for a fresher aroma and better control over the texture.
  • Roast every ingredient over low or medium-low heat to prevent burning.
  • Allow the coriander and dry fruits to cool before grinding them.
  • Keep the coriander slightly coarse if you prefer a more traditional, grainy texture.
  • Add the powdered sugar only after the mixture has cooled completely.
  • Use clean, dry utensils while preparing food intended for bhog.
  • Raisins may be added for extra sweetness, while the quantity of nuts can be adjusted to taste.
  • Whole coriander seeds should be carefully cleaned, lightly roasted and cooled before grinding.

How To Offer And Store Dhaniya Panjiri

Place the prepared panjiri in a clean bowl and offer it to Lord Krishna during the Janmashtami puja. Some families garnish the bhog with a tulsi leaf before distributing it as prasad.

Once the puja is complete, dhaniya panjiri can be served on its own or paired with panchamrit and sliced banana. Store any remaining panjiri in a clean, airtight container only after it has cooled completely.

Ragi Chocolate Sheera

 Ingredients: 

1 cup ragi flour, 

2 cups milk, 

2 tbsp ghee, 

4 tbsp sugar, 

2 tbsp cocoa pdr

cardamom pdr

chopped nuts.

Place a pan on the stove and heat the ghee. When it melts, add the ragi flour and stir the flour slowly so it mixes well with the ghee. Keep stirring so the flour roasts evenly.

Once the flour roasts for few minutes, pour milk into the pan and stir continuously as the mixture thickens quickly. Ensure milk and flour mix properly 

Add sugar and mix till it dissolves. Add cocoa powder or chocolate pieces, and allow them melt into the mixture. Continue to stir so the sheera stays smooth and does not form lumps. 

Add a small amount of cardamom powder if you want a light flavour. Taste and adjust the sugar of required. Cook for another minute or two till the sheera reaches the thickness you like. 

Turn off the flame and garnish with chopped nuts. Serve the sheera warm.

Healthy Flourless Cake with Nuts and Raisins

 Ingredients and Preparations

oats 1 cup

eggs 3

salt a pinch, mix the above ingredients well

banana 1 chopped

apples 2 chopped , blend both the fruits to a fine smooth paste and add to the pats mixture

raisins 40 gm, wash and soak in water, drain well, dry over paper towels, add to the oats mixture.

walnuts 50 gm, chop well

grease a baking pan well , pour the oats mixture, tap well, sprinkle walnuts on top, press it down lightly.

Bake in a pre-heated oven @ 180 C/ 360 F for 30 minutes.

Thick curd 150 gm, spread on top of the cake, cut the cake into small squares, spread the curd all around the sides well, spread some chopped nuts on top and serve.

Healthy Diet Cake without Flour and Sugar

 Ingredients and Preparations

Oats 1 cup

water  100 ml, mix well with oats

apples 3 chop into small pieces, blend in a mixer jar to a smooth paste

spread the apple over the oats mixture

eggs 3, separate the yolks and the white, add the yolks to the other mixture and mix well along with 1 tbsp curd and 1 tbsp honey, cinnamon pdr 1/4 tsp mix all well.

wash and soak 60 gm dates, drain well, chop fine and fold into the oats mixture. 

Bake in a pre-heated oven @ 180 C or 360 F for 30 minutes,

while the cake is being baked, beat the egg whites with a pinch of salt, after beating for a few seconds, add 1 tbsp sweetener and beat well.

add 1 tbsp corn starch beat well it forms a thick peak and hen you turn the bowl upside down, it should not fall down.

spread this egg white mixture over the baked cake, sprinkle some poppy seeds all over and bake again @ 180 C/ 360 F for 20 minutes.

Cool slightly, cut and enjoy your healthy cake without any guilt feelings.

Healthy No Flour Pancake

 Ingredients and Instructions

oats 1 cup

150 ml warm milk, mix with oats well

apples 2 peel and chop into small 

butter 20 gm melt in a pan, add the chopped apples and 

1 tbsp sweetener of your choice, keep stirring till the water evaporates

pour in a glass or vessel, where you can use hand blender and blend till smooth OR you can blend in your  mixer and add the apple puree to oats mixture  along with 2 eggs and mix well.

Heat a pan/ tawa smear with oil/ ghee, pour tbsp of batter, level it, as you can 3-4 small pancakes in your pan, once bottom is brown, flip over, cook for another 1-2 minutes,

Serve your healthy pancakes with some honey or any syrup or jam. Choice is yours.

Instant Tomato Dosa and Coconut chutney

 I'm sure that most Indians love dosa, all the more if the ladies don't have the time to grind, ferment and make. Today is such a quick dosa that anyone can do within 30 minutes and serve along with coconut chutney or milagai podi.

Ingredients

suji/ rava 1 cup

curd 1/2 cup

tomato 1 big chopped

green chili 1-2 chopped as per taste 

salt to taste

oil to cook

 

Preparations

blend together suji, curd, tomato, green chili to a smooth paste, add salt and let the batter rest for 15 minutes. Mix well.

Heat a tawa, smear well with coil, spread the batter as thin as possible, that depends on how thin and crisp dosa one wants. If one wants little soft dosa, don't spread the batter too thin. Put little oil all around, once the bottom is crisp, flip over , then cook for another minute and serve hot with everyone's favourite coconut chutney and milagai podi.

 

Coconut chutney

pottukadalai/ fried dal 2 tbsp or more depends on for how many people you're making the chutney.

fresh grated coconut 1 cup

green chilies as per taste, as the green chili I get in this city is so spicy 1 is enough.

coriander leaves if you've 2-3 tbsp chopped

salt to taste

blend all adding little water, it depends on how thick chutney you want.

for seasoning

oil 1 tsp

mustard seeds 1/2 tsp

urad dal 1 tsp

hing little 

red chili 1

curry leaves few chopped

once oil  is hot add mustard seeds, once it crackles, add urad dal, hing, red chili, curry leaves, saute as dal gets golden, pour over the chutney, mix well.

 

Note- if one likes, one can add some chopped onion once you spread the batter and press it down for onion dosa, OR you can add finely chopped onion to the batter and make the dosa. 

Those who like carrot, you can add grated carrot too, to make it more nutritious.
