Gut-Friendly Veggie Sandwich

 Ingredients

2 tbsp whole-milk plain strained (Greek-style) yogurt

2 tbsp cream cheese (1 ounce), at room temperature

tbsp refrigerated basil pesto

2 (1½-ounce) slices sprouted whole-wheat bread, toasted

1 small clove garlic, peeled

½ cup frozen artichoke hearts, thawed, coarsely chopped and patted dry

½ cup shaved asparagus

1 tbsp extra-virgin olive oil

2 pickled cherry peppers, thinly sliced (about ¼ cup), plus 1 teaspoon brine, divided

1 small  tomato, sliced ¼-inch thick

½ cup packed spring mix salad greens


Preparations

Combine 2 tablespoons each yogurt and cream cheese and 1½ tablespoons pesto in a small bowl; stir until smooth. Place 2 toast slices flat on a cutting board; gently rub garlic clove on top side of both slices until evenly coated. Spread both with the yogurt mixture (about 2 tablespoons each).

Combine artichoke hearts, ½ cup asparagus, 1 tablespoon oil and 1 teaspoon pickled pepper brine in a medium bowl; toss until fully coated. Arrange tomato slices on top of 1 toast slice. Top with the artichoke mixture, ½ cup spring mix and sliced pickled peppers.

Top with the remaining toast slice, yogurt-side down. Cut in half diagonally and serve.

When you make it at home, the basil's bright, almost minty flavour shines through instead of being dulled by preservatives. The garlic adds punch, the nuts bring creamy richness, and the Parmesan ties everything together with its salty, umami depth. The result is a vibrant green spread that smells like summer and tastes like you spent hours in the kitchen, even though you spent five minutes. It's perfect for those days when you want your sandwich to taste gourmet without any actual effort.

Ingredients:

  • 2 cups fresh basil leaves (packed)
  • ½ cup olive oil
  • ⅓ cup pine nuts (or cashews/walnuts for budget-friendly)
  • 3 cloves garlic
  • ½ cup grated Parmesan cheese
  • Juice of half a lemon
  • Salt and black pepper to taste

Method:
Add basil, nuts, and garlic to the food processor. Pulse 5-7 times until roughly chopped. With the processor running, slowly drizzle in olive oil through the feed tube. Add Parmesan, lemon juice, salt, and pepper. Blend until smooth. That's it.

Pro Tips:

  • Toast the nuts first in a dry pan for 2 minutes—deeper flavour
  • Mix with cream cheese for a milder, creamier spread
  • Use half basil, half spinach if basil is expensive
  • Store in fridge with a thin layer of olive oil on top (prevents browning), lasts 7 days

Shortcut Soufflé With Pesto and Ricotta

 Shortcut Souffle with Pesto and Ricotta  

 

Ingredients

  • 1 Tbsp unsalted butter

  • 1 1/2 lb cream cheese, softened

  • 3 large eggs, at room temperature

  • 4 oz. Parmesan cheese, grated (about 1 cup)

  • 8 oz (1 cup) whole-milk ricotta cheese

  • 1/4 tsp kosher salt

  • 1/4 tsp freshly ground black pepper

  • 1/2 cup refrigerated basil pesto (such as Gotham Greens or Rana)

  • Toasted baguette slices, for serving

Directions

  1. Preheat oven.

    Preheat oven to 375°F. Grease a 6-cup soufflé dish with butter.

  2. Beat cream cheese.

    Beat cream cheese in a medium bowl with an electric mixer on medium speed until creamy, about 30 seconds. 

  3. Add eggs and cheese.

    Add eggs 1 at a time, beating on low speed and scraping down sides of bowl with a rubber spatula, until blended, about 1 minute. Add Parmesan, ricotta, salt, and pepper; beat on low speed until incorporated.

  4. Add the pesto.

    Fold in pesto with a rubber spatula, stirring until pesto is almost fully incorporated, with a few visible swirls. Scrape mixture into prepared soufflé dish; smooth top. Place soufflé dish on a baking sheet.

  5. Bake the soufflé.

    Bake until puffed, browned, and set around edges but slightly jiggly in center, 1 hour to 1 hour and 5 minutes, tenting with aluminum foil after 40 minutes to prevent over-browning.

  6. Serve with baguette slices. OR bread toast

    Serve warm with baguette slices and a spoon or butter knife for spreading

Pesto Ravioli

INGREDIENTS

 20 oz Cheese Ravioli

½ cup Basil Pesto

½ cup Heavy whipping cream

½ cup Sun-dried tomatoes in oil, Excess oil drained and chopped

Salt, to taste

¼ tsp Black pepper pdr

2 tbsp Vegetarian Parmesan cheese, freshly grated, for garnishing

 

Preparations

Begin by cooking the ravioli as per package instructions until al dente.

In a separate saucepan, combine the basil pesto, heavy whipping cream, sun-dried tomatoes, salt, and pepper.

Warm the sauce over medium heat, stirring occasionally, until heated through. Avoid boiling, just bring it to a gentle simmer.

Add the cooked ravioli to the saucepan and gently toss to coat them evenly with the sauce.

Serve hot, garnished with freshly grated Parmesan cheese.

 

NOTES-

 Ensure the ravioli is cooked just until al dente, as overcooking can make them too soft, and they may break apart in the sauce.

Drain excess oil from sun-dried tomatoes to prevent the dish from becoming too greasy.
