Palak Pulao

Ingredients:

1 cup basmati rice

2 medium onions, chopped

2 Tbsp ghee plus extra

1 tsp brown sugar

1 Tbsp ginger-garlic paste, fresh

2 small tomatoes, chopped

Salt to taste

1/2 tsp turmeric  powder

1/2 tsp red chili powder

1/2 tsp coriander powder

1/2 tsp jeera pdr

bay leaves 2

For the spices

1 cinnamon stick

2 green cardamoms

2 black cardamoms

3-4 cloves

1 star anise

A pinch of mace

For the spinach puree

2 cups chopped spinach

1/4 cup grated coconut (optional)

1/2 cup coriander leaves

1-2 green chilies

For the garnish

1 cup crispy fried onions

1 cup roasted cashew nuts

 

Method:

1. Soak the rice in water for 15 minutes. Keep aide.

2. In a pan, dry roast the whole spices for a few minutes until aromatic. Then let it cool and grind them to make a coarse powder. Keep aside.

3. For the spinach puree, add all the ingredients in a mixer and grind to make a smooth paste.

4. In a pressure cooker, heat ghee and add brown sugar. Let it caramelize and then add the chopped onions. Sauté for 2-3 minutes.

5. Add ginger-garlic paste and tomatoes, turn up the heat and saute for 4-5 minutes until the tomatoes become pulpy and the oil separates.

6. Add salt, turmeric and red chili powder, and mix well. Then add the spinach paste and let it cook for 4-5 minutes.

7. Add cumin and coriander powders and mix well. Continue cooking for 4-5 minutes.

8. Now add the drained rice and mix well. Add the spice powder and saute for 2-3 minutes.

9. Fill the cooker with 2 cups warm water and add the bay leaves and pressure cook for three whistles.

10. Add a spoon of ghee and mix the rice well.

11. Serve hot topped with fried onions and roasted cashews.

Tomato Kaffir Lime Soup

 Ingredients

Tomatoes, onion, garlic, ginger, kaffir lime leaves, lemongrass, coriander stems, green chili, stock/water, olive oil, salt, sugar, crushed pepper.

Method

Sauté onion, garlic and ginger in oil. Add tomatoes and cook until soft.

Add stock, kaffir lime leaves, lemongrass, coriander stems, sugar and salt; simmer 12–15 minutes.

 Mash lightly; strain into a clear broth.

Finish with crushed pepper; serve hot.

Vegetable barley soup - benefits, who should avoid

Ingredients:

  • ½ cup barley (soaked for 2 hours)
  • 1 onion (chopped)
  • 1 carrot (diced)
  • ½ cup of cabbage (chopped)
  • ½ cup of tomatoes (chopped)
  • ½ cup of bell peppers (diced)
  • 3 cups of vegetable broth or water
  • 1 tbsp of olive oil
  • 2 cloves of garlic (minced)
  • 1 tsp of black pepper
  • ½ tsp of turmeric
  • ½ tsp of salt
  • ½ tsp of oregano
  • Fresh coriander or parsley for garnish

Instructions:

  • Rinse the barley thoroughly and soak it in water for 2 hours or keep it overnight.
  • Chop all the vegetables (onion, carrots, cabbage, tomatoes and bell peppers).
  • Take a large pot, and heat the oil over medium heat in it.
  • Add onion and sauté for about 2 to 3 minutes until it nicely turns translucent.
  • Add minced garlic to it and sauté for another 1 minute.
  • Add carrots, cabbage, bell peppers, and tomatoes to the pot. Stir and cook for at least 3 minutes, allowing the vegetables to soften a little bit.
  • Drain the soaked barley and add it to the pot with the vegetables.
  • Pour in vegetable broth or water and stir the ingredients together.
  • Add black pepper, salt, turmeric and oregano, and stir to combine all the ingredients.
  • Bring the vegetable barley soup to a boil then reduce the heat.
  • Cover the pot and let the soup simmer for 30 minutes, or until the barley becomes tender.
  • Taste the vegetable barley soup and adjust seasoning if needed.
  • Garnish with fresh coriander or parsley before having this healthy soup.

Who should avoid vegetable barley soup?

Like any food, vegetable barley soup may have adverse effects on your body:

 

  • Barley contains gluten, so it is not suitable for individuals with celiac disease or gluten intolercance. “If people with these conditions consume barley, it can lead to digestive discomfort and bloating,” says the expert.

Vegetable barley soup is considered a low glycemic index food. A 2015 study,  showed that the glycemic index of the vegetable barley soup was 36. “Due to its low glycemic index, having this soup won’t cause spikes in blood sugar levels, making it a good choice for people with diabetes,” says a dietitian.

5. Anti-inflammatory properties

Barley and the vegetables in the soup are full of anti-inflammatory compounds, which can help combat inflammation in the body. For instance, carrots have chemical compounds such as falcarinol and falcarindiol that can reduce inflammation, as per research published  in 2023. “Thanks to its anti-inflammatory properties, vegetable barley soup may benefit people with conditions like arthritis,” says the expert.

Lauki Kofta curry

 

 Ingredients for Kofta

 washed, peeled & grated bottle gourd  1 1/2 cup

besan/ gram flour  5 tbsp

rice flour  2 tbsp

turmeric pdr  1/4 tsp

green chili finely chopped

 ginger-garlic paste  1/2 tbsp

onion finely chopped  2 tbsp

oil for frying

salt to taste

 For gravy

tomatoes  2 

cashews 2 tbsp soaked in warm water for 20 minutes

cumin seeds  1/2 tsp

1/2 tbsp ginger-garlic paste

onion 2 medium finely chopped

1 tsp coriander pdr

1/2 tsp red chili pdr

1/2 tsp garam masala pdr

1/4 tsp turmeric pdr

1/4 cup thick curd- not sour

oil 2 tbsp

water 3/4 cup

salt to taste

 

Method for Kofta: 

 Peel and grate lauki. Squeeze out the water completely and keep that water for making gravy.

Take squeezed grated lauki in a large bowl. Add gram flour, rice flour, turmeric powder, ginger-garlic paste, finely chopped green chili, finely chopped onion and salt.

Mix all ingredients well. Mixture should have a thick consistency to make round shaped balls. If it is watery then add 1-2 teaspoons gram flour and mix. Do not keep this mixture idle for long time since lauki releases water over time and it will make mixture soggy and you will not be able to make the kofta balls. 

 Grease your palms with oil and divide mixture into 10 to 12 portions. Take each portion and turn it into round shaped balls. 

 

Heat oil in a frying pan over medium flame for deep frying. When oil is medium hot, add 3-4 balls at a time. Stir occasionally and deep-fry until they turn light golden brown and crisp. Take them out using slotted spoon, drain excess oil and place them over kitchen tissue on a plate.


Method for gravy

Blanch the tomatoes and crush them with cashew nuts to make tomato-cashew puree.

Heat 2-tablespoons oil in saucepan over medium flame. Add cumin seeds and cook until they sizzle, 7-10 seconds. Add ginger-garlic paste and stir-fry for 30-40 seconds. Add chopped onion and stir-fry until it turns light pink in colour.

Add tomato-cashew puree and mix well. Stir-fry for 3-4 minutes.

Add red chili powder, coriander powder, garam masala powder, turmeric powder and salt (add for gravy). Mix well and stir-fry for a minute.

 Add thick curd and mix.

 Stir-fry for a minute.

Add lauki water (kept in step-2) and 1/2-cup water and cook over medium flame for 3-4 minutes. Stir in between occasionally.

Add fried kofta balls to the gravy.

Cook for 5-6 minutes and turn off flame. Transfer it to a serving bowl and garnish with coriander leaves.
