Ingredients
Tomatoes, onion, garlic, ginger, kaffir lime leaves, lemongrass, coriander stems, green chili, stock/water, olive oil, salt, sugar, crushed pepper.
Method
Sauté onion, garlic and ginger in oil. Add tomatoes and cook until soft.
Add stock, kaffir lime leaves, lemongrass, coriander stems, sugar and salt; simmer 12–15 minutes.
Mash lightly; strain into a clear broth.
Finish with crushed pepper; serve hot.
