No bake Chocolate Eclair Cake

 

Ingredients:
2 (3.5 oz) package of instant vanilla pudding mix
1 (8 oz) container of whipped topping (COOL WHIP) thawed
3 cups milk
2 sleeves graham cracker squares
1 (16 oz) tub chocolate frosting

Directions.
In a medium bowl, mix together the pudding mix, milk and Cool Whip.
In an 9 x 13 baking dish, arrange a single layer of graham cracker squares on the bottom. You may have to break them up a bit to get enough crackers to cover the bottom of your dish.

Spread half of the pudding mixture on top of the crackers.

 Layer another layer of graham crackers over the pudding mixture.
Then layer the other half of the pudding mixture on top of crackers.
Top with a final layer of graham crackers.
Put plastic wrap over dish and put in fridge for about 30 min to an hour to allow pudding to set.
When ready, put the tub of chocolate frosting in the microwave for about 15 seconds to soften (remove lid and aluminum foil top before microwaving).
Take out and stir frosting. It should be easily spreadable now.
Remove plastic wrap from dish and evenly spread chocolate frosting all over the top layer of graham crackers.
Place plastic wrap over top of dish and put back in fridge and let it chill overnight.
This dessert gets better over time. The graham crackers need plenty of time to soften up.
When ready, slice and serve!

Copycat Cool Whip Ingredients

  • 3/4 cup of heavy whipping cream
  • 2 tablespoons of powdered sugar (you can have more or less dependent on your taste)
  • You’ll need a glass jar preferably with a handle
  • water 1/4 cup
  • unflavoured gelatin 1 tsp
  • cream of tartar 1 tsp
  • You’ll need a tall bowl, ice cubes, spoon and an electric hand blender with a whisk attachment.

 Instructions

you need  to dissolve gelatin in water and wait for about 2 minutes, once it is dissolved, heat it for 2 minutes so that all granules are completely dissolved. As it cools down, in a bowl, mix cream of tartar with little cream well, so that no lumps are there.

Then pour the cream in a big bowl in which you can use whipper blades. Add cream as you whip, also add gelatin and sugar. once it forms a nice peak, stop whipping. This can be used on your desserts. You can also store it in the fridge in an airtight container for a week, it will hold good.

CHOCOLATE PUDDING CAKE

INGREDIENTS

flour    1 cup
butter  1/2 cup
chopped nuts 1 cup
cream cheese   225 gm
powdered sugar    1 cup
1 tub of Cool Whip, about 2 cups (reserve some for topping) 
2 X 85 gm  boxes instant chocolate pudding 
3 cups milk 

METHOD
Preheat oven to 350 degrees F.   
Combine flour, butter  and chopped nuts until it roughly forms a ball. 
Press in the bottom of a  pan and bake for 20 minutes. 
Let crust cool.   
Combine cream cheese, powdered sugar and Cool Whip, blend well. 
Spread on top of crust.   
Then mix chocolate pudding with milk and pour over cream cheese layer. 
Top the pudding layer with cool whip. Chill.

Caramel Apple Salad


Ingredients

  • 4-6 snickers candy bars, frozen
  • 4-6 apples, chopped
  • one 8-oz. carton Cool Whip
  • one 3-oz. pkg. dry instant vanilla pudding

Method


Smash frozen candy bars in wrappers with hammer. Mix all ingredients together.

Sugar Free Pistachio Salad


Ingredients

  • 1 pkg. sugar-free pistachio pudding mix
  • 1/2 C. boiling water
  • 1 sm. can crushed pineapple
  • 1 C. mini marshmallows
  • 1 8 oz. container sugar-free Cool Whip

Directions

Blend pudding mix and water. Add pineapple (do not drain juices) and marshmallows. Fold in Cool Whip until thoroughly blended. Chill for at least one hour.

Pecan Pudding

Ingredients

Pecan Puddin

  • 1 small pre-made pecan pie
  • 1 large tub Cool Whip

Directions

In large bowl, dump pie and add Cool Whip. Mix well. Put in the refrigerator for at least 2 hours or more to blend flavors.

Quick and Easy Key Lime Pie


Time needed

5-10 min preparation

Serving Size / Yield

6-8 servings

Ingredients

  • 1 graham cracker crust
  • 1 pkg. lime Jello
  • two 3-oz. containers key lime yogurt
  • one 8-oz. container Cool Whip

Directions

Dissolve the package of Jello in 1 cup boiling water. Mix in the containers of yogurt and Cool Whip. Pour lime mixture into pie crust and chill.
