The 8 Best Foods to Eat With Cottage Cheese for More Fiber, According to Dietitians

The popularity of cottage cheese is still going strong, as food influencers and home cooks alike praise its versatility in the kitchen—and its high protein count. While the focus is often on protein, protein, and more protein, eating adequate amounts of fiber poses a bigger challenge. The recommended daily intake of fiber is 25 to 28 grams for women and 28 to 34 grams for men, or about 14 grams per 1,000 calories. But most people don’t eat enough.

“Nearly 95% of American adults aren’t meeting daily fiber recommendations, which is concerning because fiber intake influences every system in the body,” says a registered dietitian at My Crohn’s and Colitis Team. Fiber is crucial for healthy digestion as well as blood-sugar and cholesterol levels. It also supports the gut microbiome and is associated with a lower risk of certain cancers, cardiovascular disease, and other chronic illnesses.

Plus, fiber can help keep you full for longer—especially when it's paired with protein. “Fiber and protein both independently stimulate satiety signals, which contribute to normal appetite regulation,” Zenker says. “Pairing fiber and protein together can be even more effective for satiety than either alone.”

To get started, try these expert-recommended cottage cheese and fiber duos.

 1. Bean chili

 Chili

Shredded cheese or sour cream are common chili toppers, but Zenker recommends using cottage cheese instead, which has more protein and is lower in saturated fat. Beans are full of fiber (about 15 grams per cup), so try a chili made with a melange of several varieties, like black beans, kidney beans, lentils, and chickpeas. One serving could contain more than 10 to 20 grams of fiber, Zenker says.

2. Avocado

 mashed avocado in a bowl

Need a healthy appetizer for your next gathering or an afternoon snack? Whip up this dip and eat with sweet-potato chips, suggests a professor and department director of nutrition and dietetics at Johnson & Wales University. Blend or mash 1 cup of 2% cottage cheese, one medium avocado, and one to two garlic cloves until creamy, and season with salt and black pepper. One avocado contains about 9 grams of fiber, plus healthy fats.

3. Baked potato

bake potato with cottage cheese

Both experts love adding dollops of cottage cheese to baked russet or sweet potatoes. The trick is to keep the skin on (and eat it!) for the most fiber, Zenker says. A medium potato contains about 2 grams of fiber and a medium sweet potato has about 4 grams of fiber, primarily in the skin.

Soares makes a twice-baked version with sweet potatoes by baking the potato, topping with a mixture of cottage cheese, pumpkin seeds, cinnamon, and honey or maple syrup, then baking it again until everything is warm. The pumpkin seeds add even more fiber, with about 5 grams per ounce.

4 . Oat flour

Homemade pancakes with berries and banana

If you’ve never made oat flour pancakes, now is the time. The fiber in oat flour (and the berries you put on top!) plus the protein in cottage cheese make these pancakes way more satisfying than your typical diner breakfast. There are about 7 grams of fiber and 30 grams of protein per serving, Soares says.

Mix 1 cup of 2% cottage cheese, four large eggs, 1 cup of oat flour, 2 teaspoons of baking powder, a pinch of salt and cinnamon, and stir it into a smooth batter. Let the batter sit for about five minutes, then cook the pancakes in a nonstick skillet on medium heat until golden-brown. Top with mixed berries, and drizzle with honey or maple syrup.

5. Chickpeas

Chickpeas salad with onion and dried tomatoes.

For a light lunch, Soares suggests filling a bowl with a ½ cup of cottage cheese. Mix together chickpeas , chopped cucumber, chopped tomato, a drizzle of balsamic vinegar and extra-virgin olive oil, and a garnish of fresh chopped parsley or cilantro, then spoon on top of the cottage cheese. You’ll get about 8 grams of fiber.

6. Fruit

Bowl of cottage cheese with fruit and almonds

This is a classic combo for good reason. Fruit is loaded with fiber, and virtually any one will pair well with the tangy, salty taste of cottage cheese. For a fruit bowl for two, Soares recommends mixing one sliced peach and 1 cup each of blueberries and strawberries to 1 cup of 2% cottage cheese. Mix in 1 teaspoon each of chia seeds and cinnamon, plus 2 teaspoons of honey or maple syrup, and a tablespoon of fresh lemon or lime juice. Each serving will provide 7 grams of fiber.

7. Protein pasta

 Pasta with zucchini

Parmesan is the go-to cheese for pasta, but cottage cheese is a tasty, creamy alternative, Soares says. Adding zucchini, spinach and tomatoes bumps up the fiber count.

Cook 4 ounces of protein pasta, reserving some pasta water. Gently sauté two cloves of minced garlic in olive oil until fragrant. Add one thinly sliced zucchini, 2 cups of fresh spinach, and 1 cup of cherry tomatoes to the garlic. Blend cottage cheese until smooth, then pour it into the garlic and veggies with a bit of pasta water to make a creamy sauce. Toss with the cooked pasta, and season with salt and pepper.

8. Chia seed jam

Square glass jar with homemade chia seed jam

You can buy chia jam at a store, but making your own is easy, Zenker says. Heat a saucepan with mashed fruit (like raspberries, which are high in fiber) and add 1 to 2 tablespoons of chia seeds. Brighten the flavor with a squeeze of lemon juice, or sweeten it with a dash of vanilla extract or your sweetener of choice.

“Depending on how you make it, chia jam can provide 4 to 8 grams of fiber per 2 tablespoons,” Zenker says. “A tablespoon of store-bought chia jam contains about 4 grams of fiber.”

The bottom line

Yes, cottage cheese serves up much-needed protein for your body, but you might benefit even more if you pair it with fiber-rich foods. Just don’t overdo it too quickly if your diet doesn’t already contain a lot of fiber. “When eating fiber, it is important to start slow and stay hydrated, as increasing fiber intake too rapidly can cause bloating, constipation, or abdominal discomfort in some people,” says Soares. So, help yourself to that cottage cheese and fruit, but don’t forget to have a glass of water with it.

2 tsp baking pdr

 1/2 tsp baking soda

1/2 tsp salt

1 tsp cinnamon pdr

3/4 cup / 180 ml unsweetened plant-based milk

1/3 cup / 80 ml maple syrup

1/3 cup / 80 ml melted coconut oil

1 tbsp flax seed meal + 3 tbsp water for flax egg binding

1 tsp vanilla extract

1/2  cup / 120 gm unsweetened applesauce

Preparations

Start by preheating your oven to 350°F (175°C) and prepare your cake pan by greasing it or lining it with parchment paper.

In a spacious bowl, mix together the oat flour, almond flour, baking powder, baking soda, salt, and cinnamon. Give it a good whisk so everything is evenly mixed.

In another bowl, whisk together the plant-based milk, maple syrup, melted coconut oil, flax egg, vanilla, and applesauce until smooth.

Pour the wet mixture into the dry ingredients and gently stir until they’re just combined. Be careful not to over-mix, as the batter should be slightly thick but easy to pour.

If you want to add a little extra, fold in some raisins, nuts, or chocolate chips for an added crunch or flavor.

Pour the batter into the prepared pan, smoothing it out so it’s even.

Bake for 30 minutes, or until the top turns golden and a toothpick inserted comes out clean.

Guilt-free Chocolate bars With Caramel

 Ingredients

For the Base

1 cup (120g) almond flour

1/2 cup (40g) oat flour

1/4 cup (30g) coconut sugar

1/4 cup (60ml) melted coconut oil

1/4 tsp salt

For the Tahini Caramel Layer

1 cup (240g) Medjool dates, pitted and soaked in hot water for 10 minutes

1/4 cup (60ml) tahini

2 tbsp plant-based milk

1 tsp vanilla extract

1/4 tsp salt

For the Chocolate Topping

1 cup (170g) vegan chocolate chips

1 tbsp coconut oil

Optional: sesame seeds,/ nuts for garnish

Preparations

Preheat your oven to 350°F (175°C). Take an 8×8 inch baking pan and line it with parchment paper, ensuring there’s an overhang on at least two sides. This will make it easier to lift the bars out later. For the dates, place them in a bowl and cover with hot (not boiling) water to soften them. They should soak for about 10 minutes.

Create the Base Layer

In a medium bowl, combine the almond flour, oat flour, coconut sugar, melted coconut oil, and salt. Mix thoroughly until a crumbly dough forms. The texture should be similar to wet sand and should hold together when pressed. If it seems too dry, add an additional teaspoon of coconut oil. Transfer this mixture to your prepared baking pan.

Form and Bake the Base

Using your fingers or the back of a spoon, press the dough firmly and evenly into the bottom of the pan. Take your time with this step, as an even base will ensure uniform bars. Using the bottom of a glass can help create a smooth, even surface. Place the pan in your preheated oven and bake for 12-15 minutes, or until the edges are lightly golden. Be careful not to over-bake, as almond flour can burn quickly.

Cool the Base

Once baked, remove the pan from the oven and place it on a wire rack. Allow the base to cool completely before adding the next layer. This is crucial for structural integrity—if the base is still warm when you add the tahini caramel, the layers may blend together.

Prepare the Tahini Caramel Layer

While the base is cooling, drain the soaked dates and discard the water. Place the dates in a food processor or high-powered blender. Add the tahini, plant-based milk, vanilla extract, and salt. Blend on high speed, stopping occasionally to scrape down the sides, until the mixture becomes smooth and creamy. This process may take 3-5 minutes depending on your equipment and the softness of your dates.

Apply the Tahini Caramel Layer

Once the base has completely cooled, spread the tahini caramel mixture evenly over it. Using an offset spatula will help you achieve a smooth, even layer. Work slowly and carefully to ensure the caramel reaches all corners and has a uniform thickness throughout.

Create the Chocolate Topping

In a microwave-safe bowl, combine the vegan chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each interval, until the chocolate is completely melted and smooth. This should take approximately 1-2 minutes total. Alternatively, you can use a double boiler method: place the chocolate and coconut oil in a heat-safe bowl over a pot of simmering water, stirring until melted.

Add the Chocolate Layer

Pour the melted chocolate mixture over the tahini caramel layer, spreading it evenly with an offset spatula or the back of a spoon. Work quickly before the chocolate begins to set. If desired, sprinkle sesame seeds over the top for a decorative touch and to hint at the tahini flavor within.

Chill the Bars

Transfer the pan to the refrigerator and chill for at least 2-3 hours, or until the bars are completely firm. This patience-testing step is crucial—proper setting time ensures clean cuts and the perfect texture contrast between layers.

Cut and Serve

Once fully chilled, use the parchment paper overhang to lift the entire block out of the pan. Place it on a cutting board and, using a sharp knife, cut into 16 squares (4×4 grid). For the cleanest cuts, run your knife under hot water and wipe it dry between each cut. Store any leftovers in an airtight container in the refrigerator for up to one week

Variations

Nutty Pistachio Variation

For a Middle Eastern twist that complements the tahini beautifully, add 1/4 cup of finely chopped pistachios to the base mixture. Additionally, sprinkle another 2 tablespoons of chopped pistachios over the chocolate layer before it sets. The vibrant green color of the pistachios creates a striking visual contrast with the dark chocolate, while their flavor pairs harmoniously with the tahini. This variation adds a delightful textural element and increases the nutritional profile with additional protein and healthy fats.

Spiced Cardamom and Orange Variation

To create a more aromatic and complex flavor profile, add 1/2 teaspoon of ground cardamom and the zest of one organic orange to the base mixture. Then, incorporate 1/4 teaspoon of cardamom and 1 teaspoon of orange zest into the tahini caramel layer. These warm, citrusy notes transform the bars into a more sophisticated dessert with a subtle Scandinavian-Middle Eastern fusion character. The orange brightens the rich chocolate and tahini, while cardamom adds an exotic depth that makes these bars truly memorable.

Cooking Notes

Temperature management is crucial when working with these bars. When melting the chocolate, be careful not to overheat it, as this can cause it to seize or develop a grainy texture. If using a microwave, always err on the side of caution and use shorter intervals with frequent stirring.

The consistency of the tahini caramel layer depends largely on the dates you use. Medjool dates are specified because they’re typically softer and more caramel-like than other varieties. If your dates are particularly dry, you may need to soak them longer, or add an extra tablespoon of plant-based milk to achieve the right consistency. The tahini caramel should be smooth and spreadable, but not so runny that it won’t set properly in the refrigerator.

Regarding the chocolate layer, the addition of coconut oil serves two purposes: it helps the chocolate melt more smoothly and gives the finished layer a slight sheen. It also ensures that the chocolate doesn’t become too hard when chilled, which would make the bars difficult to cut. If you prefer a firmer chocolate layer, you can reduce the coconut oil to 2 teaspoons.

Gluten Free Seed Butter Cookies

 seed butter cookies

Makes about 1.5 dozen cookies

Ingredients

1/2 cup seed butter any flavor

1/3 cup granulated sugar

1 chia egg (1 tbsp ground chia + 2.5 tbsp water)

3/4 cup oat flour, plus more if needed to bring dough together

1/4 tsp kosher salt

Directions

Preheat oven to 350 degrees.

In the bowl of a stand mixer fitted with the paddle attachment, cream together Seed Butter and granulated sugar on medium-high speed for 1 minute. Add chia egg and beat on medium-high speed until well combined, scraping the bowl a few times as needed.

Add salt and flour, beat on low speed until dough pulls away from the sides. Scrape the bowl and fold a few times to make sure everything is well mixed.

If using cookie cutters or stamps: Roll dough out on a floured surface to about 1/4-inch to 1/2-inch thickness and cut into shapes using cookie cutters and/or stamps. The dough might be a bit crumbly for rolling out at first, but the more you work it and warm it with the roller, the more the oils are released and it becomes workable. Place cookies an inch or so apart on parchment- or silicone mat-lined baking sheets. If decorating with just sprinkles, do so before popping the cookies in the oven. Bake for 8-10 minutes or until bottoms are lightly golden.

If you like a thicker cookie: Roll dough into 2-tablespoon balls and gently flatten on the baking sheet. Place cookies an inch or so apart on parchment- or silicone mat-lined baking sheets. Bake for 10-12 minutes or until bottoms are lightly golden.

If making thumbprint cookies: Roll dough into 2-tablespoon balls. Place cookies an inch or so apart on parchment- or silicone mat-lined baking sheets. Bake for 8 minutes, then remove from oven to make indents with your thumb. Return to oven for another 4 minutes or until bottoms are lightly golden. Once cooled, fill with jam or Seed Butter of choice.

Cookies will keep in an airtight container at room temperature for up to one week.

Pumpkin Seed Butter Chocolate Eggs

 Ingredients

1/2 cup Pumpkin seeds butter

1/4 cup sifted confectioner’s sugar

1/4 cup oat flour (store bought, or blend rolled oats in a blender or food processor until they turn to flour)

1/8 tsp  kosher salt

2/3 cup semi or bittersweet chocolate chips (vegan if desired)

1 tsp flaky sea salt, for topping (optional)

pumpkin seed butter chocolate eggs  pumpkin seed butter eggs  pumpkin seed butter chocolate eggs

Directions

In a small bowl, use a fork to mix together the Pumpkin Seed Butter, confectioner’s sugar, oat flour, and kosher salt until well combined.

Scoop 1 tablespoon of the Seed Butter mixture out of the bowl and into your palm. Gently roll it into an egg shape and place on a parchment-lined plate or tray. Repeat until all the Seed Butter mixture has been formed into “eggs.” Place them in the freezer for 20 minutes or until firm.

Meanwhile, make the melted chocolate. Pour the chocolate chips into a small microwave-safe bowl, and microwave in 30-second intervals, stirring between each interval. We did three 30-second rounds in the microwave, but every microwave is different.

Take the Pumpkin Seed Butter “eggs” out of the freezer. Gently plop each “egg” in the melted chocolate, tossing with two forks to coat on all sides. Using the two forks, gently lift the chocolate-covered “eggs” out of the melted chocolate mixture and let excess chocolate drip off the eggs and into the chocolate bowl for a few seconds. Place the eggs on the parchment paper and sprinkle the tops with flaky sea salt, if using. Pop them back into the freezer to set for 5-10 minutes, or until the chocolate is fully set.

Enjoy! They can be stored in the fridge or freezer for up to one week.
