Potatoes baked with some spicy avil filling

 INGREDIENTS

potatoes boiled to just cooked, not mushy  3-4 big with smooth skin

for filling

avil/ flattened rice used to make poha /washed and drained

oil 2 tbsp

jeera 1/2 tsp

garlic finely chopped 1 tsp

ginger finely chopped 1 tsp

turmeric pdr 1/2 tsp

tomato puree 1/2 cup

you can use herbs like thyme, rosemary, chives and so on

green chilies finely chopped

onion 1 finely chopped

salt to taste

dry mango pdr 1 tsp


sour cream 1/2- 1 cup

salt little

oregano little

chives chopped 1 tbsp

green onion chopped 1 tbsp

coriander leaves chopped 1 tsp

mix all well

 grated cheese


Preparations 

boil potatoes with little salt in pressure cooker for 2 whistles, cool and cut into lengthwise half

scoop out carefully the inside, careful not to break the outer shell 

in a pan heat oil, add jeera, once it crackles, add garlic, let it get light brown

add green chili, hing, onion, herbs of your choice and mix well.

once onion is light brown, add tomato puree and dry masala powders, mix well

once the oil separates, switch off the gas, add avil, mix well, and lime juice and little sugar


Now in each potato shell, add some sour cream mixture prepared

top with avil mixture, top again with sour cream, some onion greens, chives

add some grated cheese,drizzle some oil on top and bake at preheated oven at 200 for around 15-18 minutes, till the cheese melts

serve hot with a dip or ketchup

Karela / Bitter gourd sabzi

Ingredients 

5 medium Karela bitter gourd

 1 large Onion 

tbsp Oil

1 tsp  Jeera /Cumin seeds

¼ tsp  Hing optional

1 tbsp Red chili powder

1 tsp  Turmeric

2 tsp Coriander powder and cumin powder (dhania jeera powder)

½ tsp  Garam masala

Salt to taste

2 tbsp Sugar or Jaggery

1 tbsp Lemon juice or dry mango powder

2 tbsp Coriander optional

 

Instructions

  • Scrape the skin of karelas using vegetable peeler or knife. If you wish to, you can also peel the skin.
  • Wash under running water.
  • Cut bitter squash into small pieces.
  • Heat oil in a heavy bottom kadai, add the cumin seeds and hing, then sauté the onion about 4-5 minutes on medium heat or till golden brown.
  • Now add bitter gourd slices or chopped karela and mix well.
  • Add chili pdr, turmeric pdr, garam masala and ground cumin and coriander along with little salt.
  • Stir well and cover the kadai/pan with a lid. You may add very little water (1-2 tablespoon) to create steam before covering the pan.
  • Cook bitter gourd fry about 10-12 minutes on a slow flame.
  • In between stir and make sure vegetables do not stick to the base and burn. When sabji is ready add jaggery/sugar and lemon juice.
  • Mix well and cook 1-2 minutes more on low heat.
  • Sprinkle coriander leaves and serve hot.

Okra with onion - bhindi with pyaaz

Ingredients
okra 15 wash, wipe dry, cut into roughly 1" pieces
onion 1 big chopped big
shallots/ sambar onion 15
oil 2-3 tbsp
jeera 1 tsp
spices to be mixed well
turmeric pdr. 1/2 tsp
coriander pdr.  2 tsp
jeera pdr. 1 tsp
chili pdr. to taste
salt to taste
dry mango pdr. 1/2 tsp
kitchen king masala 1/2 tsp


Method
in a big bowl mix well all the spices, add the chopped bhindi, mix well
In a heavy / non-stick pan, heat oil, add jeera, once it crackles, add onion( both chopped and shallots) fry till light brown, add the bhindi pieces with half of the masala pdr. mix well
cook till the vege it 3/4th done, add rest of the masala pdr. mix till done.
serve hot with roti / rice.

Baigan acharwale ( eggplant with pickle flavour)

Ingredients
small round brinjal 15 cut into 4 lengthwise with stem
onion 1 big sliced long 
turmeric 1/2 tsp
red chili pdr to taste
salt to taste
oil 2 tbsp
ghee 1 tsp
jeera 1 tsp
powder a little coarsely
jeera 1 tsp
mustard seeds 3 tsp
coriander seeds 2 tsp
methi seeds  1/2 tsp
saunf  2 tsp
 

Method
In a heavy/ non-stick pan heat oil and ghee, add jeera, once it crackles, add onion fry till light brown
add brinjal salt, turmeric and chili pdr., mix well
let it cook uncovered till almost done, add the pdr. spices, mix well, cook till done
serve hot with roti/ rice.

CAULIFLOWER & PEAS IN BLACK SPICES

INGREDIENTS
cauliflower diced   3 cups
green peas boiled  1 cup
oil   3 tbsp
cumin 1 tsp
green chillies finely chopped  1 tsp
salt to taste
fresh coriander leaves   1/4 cup

for black masala
black salt pdr  1 tsp
cumin pdr 1 tsp
dry mango pdr  1 tbsp
black pepper pdr   1/4 tsp
asafetida  1/3 ts[

METHOD

heat a wok, when hot, add oil & cumin.
when brown, add chillies after few seconds, add cauliflower, stir fry.
add salt, cover to cook.
cook until done, but veges are crisp, add the peas.
prepare a mixture of the black masala & sprinkle over the vegetables, mix well.
garnish with fresh coriander leaves & serve hot with roti.
