Green Moong Dal Laddu With natural sugars and fibers

 Craving something sweet after a meal but avoiding sugar and jaggery for fitness reasons? Try these green moong dal dry fruit laddus. Made with moong dal, dates, raisins, nuts and seeds, they are easy to prepare and can be stored in an airtight container for a snack. Dates and raisins add natural sweetness, while moong dal, almonds, walnuts, cashews and seeds provide protein, healthy fats and energy.

  

 Ingredients

Take 1 cup of green moong dal (green lentils), soaked for 5-6 hours. 

You will also need 1/4 cup each of almonds, cashews and walnuts, 

2 tbsp pistachios, 

2 tbsp pumpkin seeds, 

2 tbsp sunflower seeds, 

1 tbsp chia seeds, 

1 tbsp roasted flax seeds, 

1/2 tsp cardamom powder and 

2 tbsp ghee. 

For natural sweetness, use 

1/4 cup raisins and 

8-10 seeded, finely chopped dates.

 

Preparations

Add the almonds, cashews, walnuts, pistachios, pumpkin seeds, sunflower seeds and flax seeds to the same pan. Lightly toast them over low heat, taking care not to over-toast them as the dried fruits and seeds may burn. Allow the mixture to cool, then chop it coarsely. Heat ghee in a pan and add the finely chopped dates and raisins. Cook, stirring constantly, for 2-3 minutes until they soften and begin to blend. Turn off the heat and let the mixture cool slightly.  

These laddus get their sweetness from dates and raisins, so there is no need to add sugar or jaggery. If you prefer a completely unsweetened version, you can leave out both. However, the laddus will taste less sweet and the mixture may be more difficult to bind. If needed, add a little extra ghee to help shape the laddus.  

Dry roast the soaked green moong dal and coarsely grind it. Lightly roast and chop the almonds, cashews, walnuts, pistachios and seeds. Meanwhile, soften the dates and raisins in ghee. Mix all the ingredients together, allow the mixture to cool slightly and shape it into laddus of your desired size.

Low Calorie Teen Ratna Dal

 Ingredients

1 Cup Mix of chana, green moong and tuvar dal

1 tsp Turmeric pdr

3-4 Green chili, slit

Salt to taste 

2 Tbsp Onion, chopped

1/2 tsp Ginger, chopped

1/2 tsp Garlic, chopped

1 tsp Cumin seeds

2 Whole red chilies

1 tsp Hing

1/2 tsp Garam masala pdr

1 Tbsp Mustard oil

1 tsp Ghee

Freshly chopped coriander - to garnish

 

Preparations

Boil dal with turmeric, green chili and salt. Keep aside.

Heat oil in a kadhai and add red chili and cumin seeds.

Add some hing and let it all splutter.

Add ginger, garlic and onion and let them cook until they turn golden brown in colour. Add some salt.

Pour the boiled dal in the mix and let it simmer.

Sprinkle some garam masala powder and ghee on the top.

Garnish with coriander leaves, switch off the flame and cover the lid.

Green gram n Thinai dosa

 Ingredients and preparations

thinai rice  1 cup

green gram dal  1 cup

whole urad dal 1/2 cup

fenugreek seeds 1 tsp 

wash and soak overnight or for 8 hours 

drain the water and grind with salt n water to a smooth batter

cook on hot tawa , making dosa as usual

serve hot with chutney of your choice.

Quinoa Dosa

 ingredients of quinoa dosa  

Ingredients:

1½ Cup Quinoa, 

½ Cup brown Rice, 

½ cup yellow or green moong dal, 

½ Cup Skinless black gram /urad dal, 

1 tablespoon Chana dal, 

1 tablespoon Fenugreek seeds, 

4 tablespoon Cooking Oil or as required, 

½ teaspoon Salt or as required, 

1 teaspoon cumin seeds

 

 

Method

Wash and soak Quinoa, rice, dal and methi seeds together for at least 4-6 hours. If possible, soak it overnight. After soaking, discard the water and blend the soaked grains in a high-speed blender with ½ to 1 cup of water. Add salt and blend well. The batter should be of flowing consistency. 

Ferment: the batter overnight.

 Heat griddle or a dosa tawa.

Now use a ladle to pour half a cup of batter and spread evenly by moving the ladle in a circular motion.

Next, drizzle some cooking oil on the dosa. Let the dosa cook till golden brown. 

Serve this dosa hot and with chutney and sambar. 

Notes:

  • If the dosas are not crisp enough, add a tablespoon of rice flour mixed with roasted tapioca flour. This helps to make the dosas crispier.
  • Use sea salt for fermenting batter. Regular salt has iodine and it hinders the fermentation process.

Paruppu Payasam / kheer

Ingredients

Method :

Dry roast the dal in a kadai till light brown, stirring constantly. Cook the dal in a pressure cooker with 2 cups of warm water for 5 minutes after the whistle.
Melt jaggery in ½ cup of water, strain the syrup.
Add the jaggery syrup into the cooked dal, mix well and boil for a minute.
Mix the Coconut Milk Powder in 1½ cup of warm water and add to the dal-jaggery mixture.
Allow to simmer and thicken. Add the dry ginger powder and cardamom powder and mix well. Remove from fire and pour into a serving bowl.
Heat ghee in a pan, add the cashew nuts, raisins and coconut bits. Fry till the nuts turn light brown.
Pour the payasam in the bowl. Serve hot or chill in the fridge and serve cold. 
 
Payasam is a must in all our festivals in the southern part of the country, especially this payasam.
It is healthy, protein, iron rich dessert.

Moong dal Idli with vegetables !

 Ingredients

 whole moong dal as needed , wash and soak for 2-3 hours 

you may grind it with green chilies and ginger as per taste or you can chop and add with carrots and beans, peas as you wish

salt as per taste

Grind the dal, let it ferment well.

then add salt, veges mix well.

Keep an idli steamer or pressure cooker with water to boil, grease the idli plates lightly, pour the batter, you may add a cashew on top if desired, steam for roughly 15-20 minutes, after the steam comes, keep it on medium flame, check and remove.

You may serve with chutney of your choice  Or

make a chutney with star fruit 

In a pan heat 2 tbsp oil, add jeera, garlic chopped fine 1 tbsp

ginger 1 tbsp chopped fine or ginger-garlic paste 2 tbsp

onion chopped 1 medium, tomatoes puree 1 cup

star fruits 1, reserve 2-3 pieces for garnishing.

after frying ginger-garlic well, add onion and wee bit salt for onion to fry well

once onion is light brown add tomato puree, add wee bit turmeric pdr, mix well

add red chili pdr to taste or green chilies finely chopped

once tomato is also cooked, add finely chopped star fruit, salt to taste and sugar 1 tsp, mix well

let it all cook for 2 minutes, if you want slight gravy, then add little water and serve this unique chutney with a protein and fiber rich idli. This will make a complete meal along with a small bowl of curd.

Lentil cutlet

 For vegetarians, lentils are very important, as they're one of the main source of protein after dairy products. Most of us use daily some form of lentils, at least 2 different types of lentils daily.


INGREDIENTS

2 cups of green whole/ split moong dal with the green skin, soak it overnight whole moong, split one for at least 4 hours, then drain to grind

onion  1 big roughly chopped

green chilies to taste

ginger 2" chopped

jeera 1 tsp

carrots grated 2 small 

coriander leaves chopped 1/2 cup

mint leaves a handful to grind and garnish 3-4 leaves

salt to taste

bread crumbs to bind or cornflour as needed

oil for shallow fry


METHOD

once the lentils are well soaked, drain not full leaving about a tbsp or 2 of water to grind . first grind coarse the lentils, then add onion green chilies, ginger, jeera and grind, if need be add the soaked water little.

remove the mixture in a big bowl, add the grated carrot, coriander leaves, few mint leaves chopped, adding salt to taste mix well. 

Now add breadcrumbs or cornflour enough to bind, so that you can shape as desired and shallow fry in hot oil, keep the flame medium. Once fried turn, if need be put some oil all around and on top little.

Once the cutlets are well cooked on both sides, serve hot with chutney of your choice and garnish with mint leaves.

health tips- protein rich, vitamin C from green chilies,coriander leaves, ginger aids digestion, carrots Vit. A, jeera also aids digestion.

NOTE- those interested may add little garam masala or channa masala to the mixture. You may use a mixture of dals too to make this cutlet.

Indian Curried Green Lentils Dal

 Green lentils – You can substitute with with other types of lentils such as red lentils, split peas, french lentils (puy lentils) which a variety of green lentils. It is slightly smaller in size, darker in colour. 

Cumin seeds or mustard seeds

 Optional:

Green leaf veggies – optionally stir in baby spinach or kale once the dal is cooked for extra flavour and nutrition.

Coconut milk or cashew cream – if you can not handle spicy food, stir in some in the end for a creamy lentil dal.

Ingredients  

  • 1 cup Green lentils dry
  • 1 medium Onion
  • 1 tbsp garlic- ginger paste
  • 2 small green chilies chopped
  • 2 tbsp oil
  • 1 tsp cumin seeds / jeera
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • 1 tbsp ground coriander and cumin
  • ½ tsp garam masala
  • ¼ cup tomatoes
  • 1 tbsp lemon juice
  • hing 1/4 tsp

Garnish

  • 2 tbsp coriander leaves cilantro

Instructions 

Cooking the green lentils

  • Thoroughly wash dried green lentils under clean running water. You need to wash the lentils as they often contain debris and dirt.

Instant Pot

  • I used my instant pot pressure cooker to cook the lentils. Place the lentils in the inner pot with enough water to cover the lentils. Cook the lentils for 5 minutes on high pressure with natural pressure release.
    OR Pressure cook  depends on the type of dal you're using 3-5 whistles

Stovetop

  • To cook the green lentils on the stove, place in a saucepan with water that covers the lentils. Bring the water to a boil then reduce to heat to medium-low, cover with a lid and cook until the lentils are creamy. Do not cover too tightly as the water may boil over and spill. This will take around 20-30 minutes. Ensure you add more water if required.

Making the green lentil curry

  • In a pan, heat oil on medium heat. Once hot, add the cumin seeds and asafoetida/ hing if using.
  • As the cumin seeds crackle, add in the onions and sauté for 1-2 minutes.
  • Then add in the ginger-garlic paste, green chilies and tomatoes.
  • Optionally add coriander stems.
  • Allow the tomato mixture to reduce a bit then add the spices – turmeric, dhana jeera, red chili powder, garam masala.
  • Tip in the cooked lentils with a little water if too thick and salt. Cook for another 5 minutes then turn off the heat.
  • Squeeze lemon juice and sprinkle chopped coriander leaves before serving.

HEALTHY VEGE CHILA OR DOSAI !

INGREDIENTS
semolina/ rava 1 cup
curd 4 tbsp
water as needed
boiled and crushed green moong dal 1/2 cup or you can soak and grind dal and add too
ginger- green chili paste 2 tsp or to taste
salt to taste
spring onion 1 finely chopped along with green
tomato 1 finely chopped optional
cabbage finely chopped or grated 2 tbsp
corn crushed 2 tbsp ( optional)
capsicum finely chopped 2 tbsp
oil to cook

METHOD
mix rava with curd, adding little water, rest for 30 minutes
then add all the ingredients, except oil, mix well, add enough water to make a batter like for uttapam
heat a tawa, smear little oil, spread batter thin, cook on medium heat till brown in the bottom, turn, add little oil and cook till light brown. serve hot with chutney of your choice.

for typical South-Indian coconut chutney
roasted chana dal ( pottukadalai)  2-3 tbsp
green chilies to taste
salt to taste
coconut grated 1/2 cup
 water  as needed to grind 
grind all to a smooth paste
for tempering
oil 1 tsp
urad dal 1 tbsp
hing little 
curry leaves few tear with your hands and put
heat oil, add mustard seeds,once it crackles, add urad dal and off the gas, in the heat itself, it will turn golden, then add hing and curry leaves, pour over chutney.
