Tiny Tomato Galettes

 

Ingredients

For the Crust

 cups all purpose flour

½ tsp sea salt

10 tbsp cold unsalted butter,

tbsp ice water

1tsp cold apple cider vinegar

For the Galette

pound tomatoes

½ tsp sea salt

ounces goat cheese

1 tbsp extra virgin olive oil

1tbsp chopped chives

1 tbsp fresh thyme leaves

1 garlic clove

½ tsp lemon zest

large egg

1 tbsp water

Fresh basil

Flaky sea salt

 freshly ground black pepper

 

Preparations

Make the crust: In a food processor, place 1 cup of the flour and the salt. Pulse to combine. Spread the butter pats evenly on top of the flour mixture. Pulse until the butter is well combined with the flour and the dough starts to form clumps. There should be no dry flour remaining.

Spread the mixture evenly in the bowl of the food processor and sprinkle the remaining ½ cup flour on top. Briefly pulse until the dough becomes crumbly.

Transfer the dough to a large bowl and sprinkle the water and vinegar on top. Use a spatula to fold and press the dough until it comes together into a ball. Form the ball into a 1-inch-thick disk. Wrap tightly in plastic wrap and chill for at least 2 hours, or up to 2 days.

Make the filling: Place the tomato slices in a large bowl and gently toss with the salt. Set aside for 30 minutes to draw excess moisture out of the tomatoes. Drain and transfer to paper towels or kitchen towels to soak up additional moisture while you assemble the galette.

In a medium bowl, stir together the goat cheese, olive oil, chives, thyme, garlic, lemon zest, and several grinds of pepper until creamy.

Assemble the galette: Preheat the oven to 400°F and line a large baking sheet with parchment paper.

In a small bowl, whisk together the egg and water.

Place the chilled dough on a lightly floured surface. Dust the top with flour and use a rolling pin to roll it out into a 12-inch circle about ⅛-inch thick. As you work, rotate the dough a quarter turn every few rolls to prevent it from sticking to your work surface. I also like to dust the top of the dough with flour and flip it over a few times during the rolling process.

To transfer the rolled-out dough to the prepared baking sheet, roll the dough over your rolling pin and unroll it onto the baking sheet. Spread the goat cheese mixture in the center of the dough, leaving a 1-inch border all around. Arrange the tomato slices on top and fold the edges of the dough over the edges of the tomatoes, leaving the center of the filling exposed. Brush the crust with the egg wash.

Bake for 40 to 45 minutes, or until the crust is golden brown. Allow to cool for 10 minutes on the baking sheet. Garnish with fresh basil and sprinkle with flaky sea salt. Slice and serve.

Green Beans with Creamy Mushroom Sauce

Ingredients 

3 tbsp olive oil

1 cup thinly sliced shallots

1 pound fresh green beans, trimmed

2 tbsp water

½ tsp kosher salt 

¼ tsp black pepper pdr 

2 cups sliced fresh cremini mushrooms / White button mushrooms

1 tbsp fresh thyme leaves

2 to 3 cloves garlic, minced

1 tbsp all-purpose flour

1 cup low-fat milk (1%)

½ cup crumbled goat cheese (chèvre) (2 ounces)*

*  The best substitutes for goat cheese (chevre) are feta (for tang and crumbliness), cream cheese (for creamy texture), or ricotta (for mild, soft dishes). Other good options include creamy, mild mascarpone for pasta or Boursin for spreads. Use these in a 1:1 ratio for salads, pizzas, and spreads.

 

Preparations

In a 12-inch nonstick skillet, heat 2 tablespoons of the oil over medium-high. Add shallots; cook 4 to 5 minutes or until deep golden, stirring occasionally. Drain shallots on paper towels, reserving drippings in skillet.

Add green beans, the water, 1/4 teaspoon of the salt and 1/8 teaspoon of the pepper to reserved drippings. Cook, covered, over medium-high 2 minutes. Cook, uncovered, 6 minutes more or until beans are crisp-tender and starting to blister, stirring occasionally. Transfer to a platter; keep warm. 

For mushroom sauce, add the remaining 1 tablespoon oil to skillet. Add mushrooms; cook and stir over medium 1 minute. Add thyme, garlic and the remaining 1/4 teaspoon salt and 1/8 teaspoon pepper. Cook 2 minutes more or until mushrooms are golden, stirring frequently. Stir in flour; gradually stir in milk. Cook and stir until thick and bubbly. Cook and stir 2 minutes more. Pour mushroom sauce over beans and top with shallots and cheese.

Cheese Balls

Makes 1 large cheese ball or 2 small ones 

Ingredients

¼ cup high-quality blue cheese (I like Maytag) *

1/3 cup (5 ½ tablespoons) unsalted butter

¼ cup fresh goat cheese #

¼ cup plus 2 tbsp cream cheese

¼ cup chopped dates

2 tbsp finely chopped scallions (both white and green parts work here)

½ tsp hot sauce

¼ tsp salt

1/3 cup Salt-and-Butter-Roasted Pecans, (recipe below), roughly chopped (or plain, toasted pecans)

2 tbsp chopped flat-leaf parsley

*  For blue cheese substitutes, try tangy Feta or creamy, tangy Goat Cheese (Chèvre) for similar flavor profiles, or use Cream Cheese mixed with other flavors for milder dishes; dairy-free options include cashew-based vegan alternatives, while Nuts add crunch, and tangy Yogurt/Sour Cream can mimic creamy dressings

#  For goat cheese substitutes, cream cheese, feta, and ricotta are top choices, offering creamy texture and tanginess, while labneh, Boursin, or even Persian feta (marinated feta) mimic its spreadability and tang well, with options like cottage cheese or soft vegan alternatives (like seasoned tofu) for specific needs like salads, spreads, or baked dishes. 

SALT-AND-BUTTER-ROASTED PECANS

2 cups pecan halves or pieces

2 tbsp melted butter

¾ tsp salt, divided

Directions

Soften the cheese: Take the blue cheese, butter, goat cheese, and cream cheese out of the refrigerator to soften 30 minutes before making your cheese-ball mixture.

While the cheese softens, roast the pecans: Preheat your oven to 350 degrees. Toss the pecans thoroughly with the melted butter and ½ teaspoon of the salt. Spread them out in a single layer on a baking sheet and slide that sheet onto the middle rack of your oven. Roast the pecans for 11 minutes if using pecan halves and 10 minutes if you’re using pieces. Bring the slightly darkened and toasty-smelling pecans out of the oven and hit them with the remaining salt. Let them cool. Any extra pecans will keep for 2 weeks in an airtight container at room temperature.

Finish the cheese ball: In the bowl of a mixer fitted with the paddle attachment, combine all the ingredients except for the pecans and parsley. Paddle it up till homogenous. It will be loose and sticky and you’ll wonder how you’re ever going to form that mess into a ball. The answer is, you transfer the bowl to the refrigerator for 15 minutes or so. During that time the cheese mix will firm up enough for you to pat it into a sphere. Once it’s stiff enough to hold up, form the ball and roll that ball in the pecans, followed by parsley.

NOTE-

Once you get used to the idea of making a cheese ball, keep a few things in mind. Bring it out at least 30 minutes before you plan on serving it. This forethought will make it spreadable and allow the complexity of its flavor to come through. Also, consider doubling the recipe. A fully formed cheese ball freezes and travels nicely. And, last, keep your cracker choice simple. Sea salt or plain Jane is the way to go here, possibly everywhere.

Note: This recipe calls for dates. Please do not use pre-chopped dates from a bag. They are covered in sugar and taste like sweet cardboard. Use whole, dried dates and remove the pits.

Goat Cheese Logs

 Goat Cheese Logs 

 A cheese log is a great snack that both children and adults adore. It's an unforgettable taste and is really easy to make. You can serve it with an assortment of breads and crackers. This snack looks both impressive and irresistible.

Ingredients
 
Goat Cheese - 2 logs 
 
Cream cheese - 4 oz. 
 
Sweet sherry - 3 tsp. (aged) *
 
Salt - 1 tsp. 
 
Ground black pepper - 1 tsp. (fresh) 
 
Paprika - 1 and 1/2 tsp
 
Cumin - 1/2 tsp.
 
Parsley - 4 tsp. (finely chopped and fresh) 
 
Dill - 4 tsp. (finely chopped and fresh) 

* Sweet sherry -For non-alcoholic options, a mixture of apple or orange juice with apple cider vinegar and a sweetener can work, or for a simpler substitute, try adding a touch of brown sugar or honey to a sweet vinegar like balsamic or apple cider vinegar. 
 
 
Preparation: 
 
Combine the goat cheese, cream cheese, sherry, salt and pepper together in a small bowl. Wrap the cheese mixture in a plastic wrap and roll to shape into a log. 
 
Chill the cheese in the freezer until slightly firm - about 10 minutes. 
 
In a small dish, mix the paprika and cumin together. 
 
Mix the parsley and dill together in a separate small dish. 
 
Remove the goat cheese log from the freezer, unwrap and slice in half. 
 
Then spread the paprika-cumin mixture on 1 sheet of parchment paper and the parsley-dill mixture on another sheet. 
 
Roll 1 log in the paprika-cumin mix and the other in the parsley-dill mixture. 
 
Serve with toasted pita and crostini

Crostini- instead serve with  bruschetta, which can be larger and often uses rustic bread, and tartines, the French open-faced sandwich that is similar in concept. Other options include using different types of crusty bread like sourdough or bagels, or, for non-bread bases, try polenta slices, potato slices, or blinis.

Sweet Potato and Cheese Quiche

 Sweet Potato and Cheese Quiche 

A wonderful quiche that’s good for any time of day with a salad on the side. This recipe is so flexible that you can use almost any vegetable you find in the kitchen to prepare it. And the quinoa gives the pie a crispy layer at the bottom while also providing you with plenty of protein and fiber!

Ingredients
 
Quinoa-  3/4 cup
Water - 1 1/2 cups 
Egg - 1 
Salt - a pinch 
Ground black pepper - a pinch 
Olive oil - 2 tbsp.
Sweet potato - 1 (cut into cubes) 
Onion - 1 (thinly sliced) 
Leek - 1 (thinly sliced) 
Thyme - 1 tsp. 
Eggs - 5 
Milk - 1/4 cup 
Goat cheese - 4 oz  110-115 gm approximately

 
Preparations

Heat oven to 375°F. Cook the quinoa and let cool.
 
Mix the egg, salt, and pepper into the quinoa. Pour the mixture into a round, oiled baking pan, and press it down to the bottom and sides of the pan evenly. Bake the crust in the oven for 10 minutes. 

When you take the crust out of the oven, crank the oven's temperature up to 425°F. 
 
Mix the sweet potato, onion, leek, thyme, and olive oil and pour into a baking paper-lined baking dish.
 
Bake the vegetables for 15 minutes or until soft. 
 
Make sure to turn the vegetable over midway through cooking. 
 
Once the vegetables are done, lower the oven's temperature back to 375°F. 
 
In a bowl, mix the roasted vegetables with the eggs, milk, goat cheese, salt, and pepper. 
 
Pour the mixture into the quinoa pie crust and place back in the oven for 30-40 minutes. 
 
Take the quiche out of the oven once it’s golden brown and let cool before serving.

Sweet Potato Kale Frittata

 Sweet Potato Kale Frittata Sweet potatoes are top-of-the-list comfort food for all seasons. Its natural sweetness provides long-lasting satisfaction. They are incredibly versatile and provide a wealth of health benefits. But who said they're only reserved for lunch and dinner? This delicious and easy frittata is a perfect breakfast that incorporates sweet potatoes seamlessly. They're good for diabetics !

Ingredients 
Eggs - 6 
 
Half and Half - 1 cup 
 
Salt and Pepper - as needed 
 
Sweet potato - 2 cups (diced) 
 
Olive oil - 2 tbsp. (divided) or any oil without flavour
 
Kale - 2 packed cups (chopped) 
 
Red onion - 1/2 (chopped) 
 
Garlic - 2 cloves 
 
Goat Cheese - 3 oz. , roughly 85 + gm
 
Preparations: 
 
Preheat the oven to 350°F. 
 
Whisk the eggs together, along with the half and half, salt and pepper. Set aside.
 
In an ovenproof nonstick skillet, sauté the sweet potatoes in 1 tbsp oil over medium heat for about 8-10 minutes or until tender and golden. Set aside. 
 
In the same pan, add the remaining 1 tbsp oil and sauté the kale, onion and garlic, until the kale has wilted - about 3 to 4 minutes. 
 
Stir in the potatoes and pour the egg mixture evenly over the vegetables, cooking for 3 minutes. Sprinkle with goat cheese. 
 
Bake at 350°F for 10 to 14 minutes or until the eggs have cooked through.

Grilled goat cheese sandwich with tofu and dates

Ingredients

4 strips tofu OR for non-veg bacon

½ red onion

1 Tbsp red wine vinegar

pinch of sugar

5 oz/ 140 gm goat cheese

8-10 dates, chopped

4 slices bread

1 cup spinach

honey & thyme mayo (2 Tbsp mayo, 1 Tbsp honey and 1 tsp thyme) for serving

Instructions

Prepare a compact grill.

Heat a non-stick skillet over high heat and cook the bacon until crispy. Set aside.

In the bacon fat, cook the onion until soft, for about 3 minutes. Add the red wine vinegar and the sugar and let it boil down on low heat. Set aside.

Mix the goat cheese with the chopped dates and spread out on both slices of the bread. Top one side with the spinach, the cooked tofu strips and the caramelized onions. Place the other side with just the goat cheese on top (so you have layers in this order -> bread, goat cheese, spinach, tofu, onion, goat cheese, bread)

Toast the sandwiches on the compact grill (or just a grill pan and flip them when 1 side is toasted) until golden brown.

Serve with honey & thyme mayonaise.

Fried Pineapple & Caramelised Onion Pizza

 Ingredients

1/2

1 tsp active dry yeast

 

Preparations

Add yeast to warm water and let it sit for 10 to 15 minutes.
Combine all the dry ingredients in a bowl.
Add oil and yeast mixture to dry ingredients and knead until smooth and elastic.
Lightly oil a large bowl, add the dough ball to it, cover and set in a warm place until doubled, about 1 hour.
Divide the dough in half and roll into 1/4-inch thick rounds.
Heat the oil and drop the pizza dough rounds. Cook for 2 minutes, turn over and cook for 1 minute more.
To caramelise onion, saute onions in oil/butter with salt for 12-15 minutes. Add brown sugar, balsamic vinegar and pepper powder and cook for 5 more minutes.
Preheat oven to 475 degrees F.
Whisk goat cheese with splash of milk to thin so it’s spreadable.
Place fried pizzas in a baking tray. Spread with goat cheese and top with pineapple pieces, caramelised onions and fresh basil. Drizzle with olive oil.
Bake at 475 F for 12 -15 minutes.
