Delicious Microwave Potato Chips

The wonderful thing about this simple base recipe is that once you know it, you can add any flavors you wish. I'm quite partial to using dried thyme, paprika, and even Worcestershire sauce. But everyone has their own favorite flavors, right?

Ingredients
 • A potato 
• Salt 
• Pepper
 • A potato/vegetable peeler 
• A long thin wooden stick 
• Olive oil 
• A microwaveable bowl 
• A microwave 
• Kitchen roll

Directions 
 
1. Using the peeler, slice the potato into chip sized slices, making sure they are thin enough to become crispy.
 
2. Now fill the bowl with water and give the slices a good wash. 
 
3. Remove the water and dry the slices of potato, placing them on sheets of kitchen roll. 
 
4. Put the potato slices in the now dry bowl and sprinkle them with olive oil. Then give them a good mix. 
 
5. Now put your potato slices onto the stick, like a kebab. 
 
6. Rest the points of the stick onto the sides of the bowl, and season the potato slices with salt and pepper. 
 
7. Then put them in the microwave while still resting on the bowl. You should cook them for 4 to 8 minutes.
 
8. Take them out and check that they are crispy. Give them a minute to air away any moisture. Then place them in a bowl for serving.

Black bean chips

Ingredients

  • 1 cup dried black beans
  • 60 grams nuts or seeds of choice, see notes; this will be between 1/3 to 1/2 cup
  • Boiling water for soaking
  • 11/2 cups water
  • 1 tsp baking pdr
  • 1/2 to 3/4 tsp salt
  •  
  • Preparations
  • Place the dried black beans and nuts/seeds in a medium bowl. Cover with boiling water and let sit for 30 minutes. Drain through a sieve or colander.  Discard soaking water. Rinse under cold water. 
  • Preheat the oven to 350F (180C). Line a large rimmed  baking sheet with a silicone baking mat or a parchment  paper.
     
  • In a blender, process the drained black beans and nuts/ seeds along with 1.5 cups fresh water until completely smooth. Scrape down the sides of the container, add the baking power and optional salt, and blend again.
  •  Pour the batter onto the prepared baking sheets. Lift and tilt the baking sheets into an even layer (and/or use a spatula or back of spoon).
  •  Bake in the preheated oven for 15 minutes.
  •  Remove the baking sheets from the oven and reduce oven temperature to 325F. Using a knife, pizza cutter or pastry scraper, cut diagonal lines to create triangle shapes (no need to be perfect!)
  •  Return the cut chips to the oven and bake for another 25 to 30 minutes until dry crispy. Watch closely, and remove outer chips, as needed, and cook the inner chips longer (as needed).
  •  Remove all the chips that look done. If any chips need additional baking, keep them on the baking sheet and return to  the oven for several more minutes until the chips are crisp.
  •  Completely cool the crackers on a cooling rack and enjoy your nutritious, guilt free chips

    Jackfruit Chips

     

     

    Ingredients:

    2 cups jackfruit flesh, half-ripe, cut into long wedges

    1-2 tbsp salt

    1 glass of water

    Coconut oil, for deep frying

    Method:

    1. Slice the jackfruit flesh/bulbs lengthwise into moderately thin wedges. Remove the seeds.
    2. Heat oil in a heavy bottom frying pan.
    3. Add the jackfruit in batches and fry in medium-high heat till crisp. 
    4. In a glass of water, add the salt and mix until the salt is melted.
    5. Once the jackfruit is getting fried , add a tablespoon of saltwater to the fried chips and mix well. 
    6. Mix and strain the chips to a plate lined with a kitchen towel.
    7. Allow it to cool and transfer it to an airtight container.

    Beetroot Baked Chips

    Beet chips are a healthy and delicious substitute for potato chips or fries that are sure to win over any guests you’re having. Even people who dislike the taste of beets will like them. If your chips are ready before the baking time, take them out as beets are prone to browning. 
    Beetroot Baked Chips

    Ingredients for beet chips
     
    Beets - 2 
     
    Olive oil - as needed 
     
    Salt and Pepper - as needed 
     
    Rosemary leaves - as needed



    Method of preparing the beet chips
     
    Preheat oven to 350°F (180°C), place racks in the center. 
     
     
    Slice beets into thin slices using a sharp knife or (preferably) a mandoline. 
     
    Drizzle the slices lightly with some olive oil and sprinkle salt, pepper and rosemary on top. Arrange on baking sheets in a single layer. 
     
    Bake for 10-20 minutes. Check that they haven't browned and flip them for another 10-15 minutes. Once they're dried and curled at the edges, but not yet brown, they're ready.

      • Wash then cut the apples using a mandolin (or very thin, with a knife). Remove the seeds.

    We recommend eating them as soon as they are done and have cooled. These chips take on moisture easily, and although they are still perfect in taste, they lose their characteristic crunchy effect.

    Extra tips:
    * Remember to let the chips cool completely before eating them. This step is very important for them to be really crispy.

    * Cooking time is estimated. It will depend on the thickness with which you have cut your slices (make sure they are very thin) or the power of your microwave. If you see that your chips need a little more time, do not hesitate to take them out, turn them over and cook them for a few more minutes.

    * If you prefer, you can spray the oil on the sweet potato slices with a spray or apply it with a kitchen brush. Remember to do it on both sides.
