Vegetarian Spinach Enchiladas

 Ingredients 

1 14-ounce can diced tomatoes 

1  small onion, chopped 

3 tsp minced canned chipotle chilies divided  OR smoked paprika and cayenne pepper

¼ tsp salt 

1 ½ cups low-fat, reduced-sodium cottage cheese

1 10-ounce package frozen chopped spinach, thawed and squeezed dry

1 cup shredded Monterey Jack cheese, divided

1 bunch scallions, sliced, white and green parts separated

½ tsp garlic powder 

8 6-inch corn tortillas


Preparations

Preheat oven to 450 degrees F. Coat an 8-inch-square baking dish with cooking spray.

Place tomatoes, onion, 2 teaspoons chipotle and salt in a blender. Puree until smooth. Mash cottage cheese in a medium bowl; stir in spinach, 1/2 cup cheese, scallion whites, garlic powder and the remaining 1 teaspoon chipotle.

Spread 1/4 cup of the tomato sauce in the prepared baking dish. Cover with 4 tortillas (they will overlap). Spread on 1/2 cup sauce, then all the spinach filling. Top with another 1/4 cup sauce. Layer on the remaining 4 tortillas and the remaining 1 cup sauce. Sprinkle the remaining 1/2 cup cheese on top.

Bake the casserole until the cheese is melted and the filling is hot, about 25 minutes. Sprinkle with 2 tablespoons of the reserved scallion greens.

Gluten Free Chipotle Chocolate Cake

 Gluten Free Chipotle Chocolate Cake

This delicious chocolate cake will come in storming to prove them wrong. And what a stir it will cause! With some surprising spicy hues under all the chocolate, don't be shocked if your guests will stand speechless. 

Ingredients for flour-less cake
Dark chocolate - 10 oz. 
Unsalted butter - 7 tbsp. (cut into cubes) 
Eggs - 5 (room temperature) 
Sugar - 1 cup 
Vanilla Extract - 1/2 tsp. 
Cinnamon pdr- 1/2 tsp. 
Chipotle chili powder - 3/4 tsp. OR smoked paprika
Cayenne pepper - a pinch 
Salt - a pinch 
Powdered sugar - for dusting



Method of preparing the Flourless Chocolate Cake: 
 
Preheat oven to 350°F/ 175°C. Line and grease a 9.5-inch spring-form pan with parchment. 
 
Melt the butter and chocolate together. Stir periodically during the melting process. 
 
In a bowl, whisk the eggs and sugar together. 
 
Gradually add in the melted chocolate, salt, spices, and vanilla extract. 
 
Bake in the oven for 22-25 minutes. Check the progress by dipping a toothpick into the center. 
 
If it comes out clean, the cake is ready. Let cool and serve dusted with powdered sugar.

Anti-Inflammatory Snack You Should Be Making

Tips from the Eating Well Test Kitchen

These are the key tips we learned while developing and testing this recipe in our Test Kitchen to make sure it works, tastes great and is good for you too! 

Don’t be tempted to speed things up by increasing the oven temperature. A low oven temperature of 250°F is key to not burning the nuts and their sweet coating.
 
Let the nuts cool to room temperature before storing them. The coating will continue to harden as they cool, making them less likely to stick together during storage.
 
If you want to double the recipe, spread the walnuts out between two baking sheets, and bake them in the top and lower thirds of the oven, swapping positions halfway through.

Ingredients

  • 1 large egg white

  • 1 tbsp water

  • 4 cups walnut halves

  • 2 tbsp pure maple syrup

  • 2 tsp ground cinnamon

  • 1 tsp ground ginger

  • ¾ tsp salt

  • ½ tsp ground allspice

  • ½ tsp ground chipotle chili

 

Directions 

Preheat oven to 250°F. Line a large rimmed baking sheet with parchment paper. 

Whisk 1 egg white and 1 tablespoon water together in a large bowl until frothy, about 30 seconds. Stir in 4 cups walnuts until evenly coated; let stand, undisturbed, for 5 minutes. Stir in 2 tablespoons maple syrup until evenly combined.  

Bake, stirring every 10 to 15 minutes, until the walnuts are toasted and the coating is just dry to the touch, 35 to 40 minutes. (The coating will continue to dry and set out of the oven.) Let cool completely on the baking sheet on a wire rack, about 30 minutes.
