Rosemary-Pecan Mashed Sweet Potatoes

These rosemary-pecan mashed sweet potatoes—a dish that bridges the gap between traditional mashed potatoes and something more exciting. This recipe delivers all the comfort of classic mashed potatoes with an elegant twist that sweet potato lovers will adore.

Why This Recipe Works

The beauty of this dish lies in its simplicity and versatility. Unlike traditional mashed sweet potatoes that can skew overly sweet, this version strikes a perfect balance. The maple syrup provides just enough sweetness to complement the natural flavor of the potatoes, while the rosemary adds an herbaceous note that keeps things sophisticated. The real star, however, is the pecan topping—roasted with Parmesan, cayenne, and more rosemary, it creates a savory-sweet crunch that transforms each bite.

Another major advantage? This is a make-ahead dish, meaning you can prepare it before your guests arrive and focus on other elements of your meal. The entire recipe comes together in just 20 minutes and serves 8 people generously.

Ingredients

3 lb. small sweet potatoes

1½ cups pecans, broken into pieces

2 tbsp olive oil

¼ cup grated Parmesan cheese

⅛ tsp cayenne pepper

3 tsp roughly chopped fresh rosemary (divided)

3 tbsp pure maple syrup

Kosher salt

How to Prepare

Start by heating your oven to 425°F. The sweet potatoes get a head start in the microwave, which significantly cuts down on cooking time. Prick each potato with a fork and arrange them on a microwave-safe plate. Microwave on high for 6 minutes, then flip each potato and continue cooking for another 6 minutes until they're completely soft. Let them cool until you can handle them comfortably.

While the potatoes are cooking, prepare the show-stopping pecan topping. On a rimmed baking sheet, toss the pecan pieces with olive oil, then add the Parmesan cheese, cayenne pepper, 2 teaspoons of the rosemary, and ½ teaspoon of salt. Spread everything in an even layer and roast for about 3 minutes until the pecans are fragrant and lightly toasted. Once they come out of the oven, toss them with the remaining teaspoon of rosemary.

Now for the mashing: peel the cooled sweet potatoes and place them in a large bowl. Add the maple syrup and ½ teaspoon of salt, then mash until smooth. The consistency should be creamy but not runny—sweet potatoes naturally have more moisture than regular potatoes, so you won't need to add any butter or cream.

Transfer the mashed sweet potatoes to your serving dish and crown them with the rosemary-Parmesan pecans just before serving. The contrast between the smooth, slightly sweet potato base and the crunchy, savory topping creates an irresistible combination.

Serving Suggestions

These mashed sweet potatoes pair beautifully with roasted meats, particularly turkey, pork tenderloin, or herb-crusted chicken. They're substantial enough to hold their own on a holiday table but refined enough for dinner parties. The dish works equally well for Thanksgiving, Christmas dinner, or any autumn gathering where you want to impress without spending hours in the kitchen.

If you're making this ahead, prepare the mashed sweet potatoes and store them covered in the refrigerator. Warm them gently before serving and add the pecan topping at the last minute to maintain its crunch. This way, you'll have one less thing to worry about when your guests arrive, and you'll still serve a dish that looks and tastes like you spent all day in the kitchen.

Roasted Cauliflower Chowder

roasted cauliflower chowder recipe soup red bell peppers low carb vegetarian vegan gluten free

Ingredients

large head cauliflower, washed and cut into florets

tbsp olive oil

pinch of salt

tbsp butter, vegan/paleo: use olive oil

1medium yellow onion, chopped

cloves garlic, minced

medium carrots, chopped

celery ribs, chopped

large red bell pepper, seeds removed and diced

cups veg broth

tsp chopped fresh thyme

small bay leaf

1/8 tsp freshly ground black pepper

tsp salt

cup heavy cream, vegan/paleo: use cashew milk

 tbsp chopped fresh parsley

Instructions

Preheat the oven to 400 degrees F.

Place the cauliflower florets onto a lined baking sheet and drizzle with the olive oil and a pinch of salt. Roast for 20-25 minutes until nicely browned, turning with a spatula after 15 minutes. Set aside until ready to use.

Heat the butter in a stock pot over medium-high heat and cook the onion until soft and translucent, 5-7 minutes. Add the remaining vegetables and cook for another 5-7 minutes until softened. Add the roasted cauliflower, stock, thyme, bay leaf, salt and pepper and bring to a boil. Reduce the heat to medium-low, cover and simmer for 25 minutes. Discard the bay leaf.

Use an immersion blender to puree the soup to consistency you prefer (I like to puree just part of it and leave the rest chunky). Alternatively transfer a portion of the soup to a regular blender, puree it, and add it back to the pot.

Add the cream and parsley and heat through. Add salt and pepper to taste. Note: If you prefer a thicker consistency you can dissolve some cornstarch in a little water (e.g., 1 tablespoon cornstarch in 3 tablespoons water) and pour it into the soup at the end. Let the soup simmer for a minute or two until slightly thickened.

Perfect Baked Potato

Crispy, salty skin and a light, fluffy inside. No foil, a hot oven, and one simple test to check it's done. Serves: 4

Ingredients

4 russet (baking) potatoes, similar in size

1 tablespoons olive oil

1 teaspoons coarse salt

Steps Heat the oven:

Heat the oven to 425°F (220°C) and position a rack in the middle. A hot oven is what gives you a crisp skin and fluffy center.

Scrub and dry: Scrub 4 russet (baking) potatoes, similar in size clean under running water and pat them thoroughly dry with a towel.

Prick all over: Poke each potato 8 to 12 times all over with a fork. This lets steam escape so the potato does not burst in the oven.

Oil and salt: Rub each potato all over with 1 tablespoons olive oil, then sprinkle with 1 teaspoons coarse salt. The oil and salt are what make the skin crisp and tasty. Do not wrap in foil, which just steams the skin soft.

Bake: Place the potatoes directly on the oven rack (with a tray on the shelf below to catch drips) and bake for 50 minutes, turning them once halfway through.

Test to see it's done: Slide a knife or skewer into the centre of the biggest potato. It should go in with almost no resistance. If it still feels firm, give it another 5 to 10 minutes.

Rest and open: Let the potatoes rest for a few minutes. Then cut a cross in the top, squeeze the ends gently to open it up, and fluff the inside with a fork before adding your toppings.

Extra Tips: The foolproof test: a baked potato is truly done when its inside reaches about 205°F (96°C), which is where the flesh turns light and fluffy. If you have a food thermometer, use it. If not, the knife-slides-in-easily test does the same job. Choose russet (baking) potatoes for the fluffiest result, and pick ones of similar size so they finish together. Skip the foil for crisp skin.

Roasted Tomato Bread

roasted tomato bread recipe herb

Ingredients

cups cherry tomatoes or quartered Roma tomatoes

Optional: For enhanced tomato flavor add 1/4 cup sun-dried tomatoes in oil, drained and chopped

tbsp extra virgin olive oil

2 1/4 tsp instant yeast

3/4 cup lukewarm water(be sure it's not too warm)

tbsp honey

tbsp  extra virgin olive oil

cups all-purpose flour , or more or less as needed (the amount will depend on how much liquid remains in the tomatoes after roasting and blending them)

tsp salt

1/4 cup chopped mixed fresh Italian herbs(e.g., rosemary, basil, marjoram, thyme, sage, dill, oregano, parsley)

Instructions

To roast the tomatoes, spread them out on an aluminum foil-covered baking sheet and toss with 1 tablespoon olive oil. Preheat the oven to 400 degrees F and roast for 10-15 minutes or until the skins of the tomatoes are collapsed and just barely beginning to brown. Puree the tomatoes in a blender and set aside.

Combine the water, yeast, honey and 1 tablespoon of olive oil. Set aside.

Combine the flour and salt in the bowl of a standing mixer. Make a well in the middle of the flour and pour in the tomatoes, the water/yeast mixture and the herbs. Stir with a wooden spoon or wooden spatula just until the ingredients are starting to come together, then attach a dough hook to the standing mixer and knead the dough for about 8 minutes on medium ("2" on a stand mixer). The dough will still be a little sticky and tacky. If it's too wet, add a little more flour until you get a workable consistency. Remove the dough from the bowl and roll into a ball.

Lightly oil a clean bowl with oil and roll the dough ball around in it. Cover loosely with plastic wrap and place in a lightly warmed oven (not too hot) for about an hour, until doubled in size.  Remove the dough and place it on a flat surface. Divide it in half. Form each half into an 8-inch square about 1 inch thick. Starting at one end, roll the dough firmly into a cylinder, making sure the dough sticks to itself. Turn the dough seam-side up and pinch the seam closed. Place the dough seam-side down in a greased 9×5 inch loaf pan and gently shake the dough until all four sides touch the edges of the pan. Repeat with the other half. Cover loosely with plastic wrap and returned to a warm place until it is almost doubled in size, about 30 minutes. Preheat the oven to 350 degrees F. Boil 2 cups of water and pour it into a baking pan and place it on the bottom rack. If possible, place the loaf pans above the rack with the pan of boiling water. If not, place the boiling water in two smaller pans on either side of the loaf pans. Bake for 40-50 minutes or until the top of the bread is browned and the loaf sounds hollow when you tap on it with your knuckles. Transfer the bread to a wire rack and cool completely before slicing. Makes two 9×5 inch loaves.
