Brazilina Cheese Bread

 Brazilian Cheese Bread

This gluten-free recipe makes small, light, and fluffy cheese puff snacks, using tapioca flour instead of regular wheat flour. Try them and serve them warm, to let these heavenly delights make your day.

Ingredients
Egg - 1 (room temperature) or substitute- flax seeds/ banana
Olive oil - 1/3 cup 
Milk - 2/3 cup 
Tapioca flour - 1 1/2 cup (170 g) or all purpose flour
Salt - 1 tsp. 
Queso fresco - 1/2 cup (or any other cheese, grated)

Preparations
Preheat oven to 400°F/ 200°C. 
Place all ingredients in a blender and blend until a smooth consistency is achieved. 
Grease a mini-muffin tin and place the batter in it, evenly. 
Bake for 15-20 minutes until the bread is puffy and lightly browned. 
 
Tip: You will need one or two mini muffin tins (these are half the size of regular muffin pans).

Mini Cheese Bread

 INGREDIENTS

Tapioca flour - 1 cup

Milk - ½ cup (room temperature)

Vegetable oil - ¼ cup

Large egg - 1 (room temperature)

Salt - ½ tsp

Mozzarella cheese - ¼ cup

Cheddar cheese - ¼ cup

 

METHOD

 Preheat the oven to 400 F.

In a blender jar or a food processor bowl, add the tapioca flour, milk, oil, salt and egg.

Pulse it a few times to blend it into a smooth batter.

Add the cheese and just do couple of small pulses to combine everything.

Grease the mini muffin pan liberally.

Fill each hole halfway with the batter. This allows plenty of space to let the bread puff up.

Bake in the preheated oven for 15 to 20 minutes until the bread is crusty on the outside and lightly browned. Mine took only 15 minutes to bake.

Remove the pan from the oven and let it sit for couple of minutes in the pan. Carefully remove the mini cheese breads and serve warm with some spicy chutney of your choice.
