Candied Ginger

Ingredients

  • 1 pound fresh ginger (preferably young ginger)
  • 2 cups reserved water (from boiling ginger)
  • 2 cups granulated sugar, plus extra for final coating
  •  

    Preparations

    Peel the ginger using the edge of a spoon. 

    Slice the ginger. Use a sharp knife to slice the ginger ⅛-inch thick. You can slice the ginger into rounds or wider pieces, it's up to you. Note: the ginger slices will reduce in size from boiling. 
    Boil the ginger. Bring a large pot of water to a boil over medium heat and add the sliced ginger. Boil for 30 minutes, covered, then drain in a colander over a bowl, reserving the water.

    Simmer with sugar. Add the ginger back to the pot along with 2 cups of the reserved water and two cups of sugar. Bring to a boil, then reduce the heat to a simmer, and simmer for 30 to 35 minutes, stirring occasionally, until most of the simple syrup has evaporated and the ginger is tender. Note: if your simple syrup is evaporating more quickly, you might be simmering too hot. You can always add a little bit more water.  Drain and cool. Drain the ginger again in a colander over a bowl to save the ginger simple syrup for future use  ( can be used while you make tea, or used in carrot cake instead of sugar, as it has all the goodness of ginger in it). Then, lay the ginger in a single flat layer on a cooling rack over a parchment-lined baking sheet. Let cool for 30 minutes. Toss in sugar. While the ginger slices are still sticky, toss them in a bowl with extra sugar for a final coating.  Dry and store. Lay the ginger flat on a parchment-lined baking sheet to completely dry (I prefer to let them dry overnight). Then store in a sealed container.

    Triple Apple Snacking Cake

    Ingredients

    Roasted Apples:

    2 medium apples (Honeycrisp, Braeburn, or Pink Lady), peeled, cored, and diced
     
    1 Tbsp unsalted butter, melted
     
    2 tsp  cinnamon pdr
     
    Pinch kosher salt

    Cake Batter:

    2 cups all-purpose flour
     
    1 tsp baking powder
     
    ½ tsp baking soda
     
    ½ tsp kosher salt
     
    1 ½ tsp cinnamon pdr
     
    ¼ tsp  nutmeg pdr
     
    Zest of ½ orange
     
    ½ cup (1 stick) unsalted butter, softened
     
    1 cup light brown sugar, packed
     
    2 large eggs
     
    1 cup unsweetened applesauce
     
    1 tsp vanilla extract

    Cream Cheese Frosting (Weeknight-Friendly):

    1 tub (about 16 oz) cream cheese frosting
     
    ¼ cup apple butter - recipe to make apple butter, please see my next post,
     
    Zest of ½  orange
     
    Splash of vanilla extract
     
    Pinch of salt

    Optional Toppings:

    Chopped toasted nuts
     
    Candied ginger
     
    Crushed pretzels (for salty contrast)

     

    Directions

    Roast the apples: Preheat oven to 375°F. Toss diced apples with butter, cinnamon and salt. Spread on a parchment-lined sheet pan. Roast 15–20 minutes, until tender and lightly caramelized. Cool.

    Grease a 9×13-inch baking pan or line with parchment. Lower oven to 350°F.

    In a bowl, whisk flour, baking powder, baking soda, salt, cinnamon, nutmeg and orange zest. In a large bowl, cream butter and brown sugar until fluffy. Beat in eggs one at a time, then stir in applesauce and vanilla. Fold dry ingredients into wet until just combined.

    Spread half the batter in the pan. Scatter roasted apples evenly over the top. Dollop remaining batter over and gently spread to cover.

    30–35 minutes, until golden and a toothpick comes out clean. Cool completely.

    In a medium bowl, stir together cream cheese frosting, apple butter, orange zest, vanilla and salt until smooth. This creates a frosting that’s glossy, aromatic, and just sweet enough to balance the apples.

    Spread frosting over cooled cake. Sprinkle with optional toppings. Slice into squares and enjoy.

    Jalapeno Pineapple Chutney

     This may contain: a glass jar filled with pineapple salsa on top of a wooden cutting board next to green peppers 

    Ingredients

    jalapenos 4 deseeded and chopped

    canned pineapple chunks drained, syrup preserved  3 1/2 cups

    white vinegar 1 1/2 cups

    firmly packed brown sugar 1 cup

    salt 1 tsp or to taste

    golden raisin 1/2 cup

    candied ginger finely chopped  2 tbsp

    garlic cloves 2 crushed

     

    Preparations

    Add the reserved pineapple syrup to a saucepan; add the peppers, vinegar, brown sugar, salt, raisins, ginger-root and the garlic and bring to a boil; reduce heat and simmer for 10 minutes. 

     add the pineapple chunks and simmer for about 30 minutes or until thick.

     You can process and can in the usual way (boiling prepped jars), or just 'keep' in the refrigerator in a covered, airtight container. I have kept this for up to 2 months in the refrigerator without a problem.

    Flourless Sweet Potato Ginger Cake

     A moist, tender, and warmly spiced flour-less sweet potato ginger cake that’s naturally gluten-free, rich in nutrients, and perfect for cozy gatherings. Sweet potatoes and ginger create an irresistible flavor combination in this wholesome dessert!

      

    Ingredients

    2 cups mashed sweet potatoes (about 2 medium)

    3 large eggs (room temperature)

    ½ cup coconut sugar (or brown sugar)

    ¼ cup maple syrup (or honey)

    ⅓ cup melted coconut oil (or butter)

    1 tsp vanilla extract

    1 ½ tsp ginger pdr

    1 tsp cinnamon pdr

    ½ tsp nutmeg pdr

    ¼ tsp cloves pdr

    ½ tsp baking soda

    ½ tsp baking powder

    ¼ tsp salt

    Optional Add-ins & Toppings:

    1tbsp freshly grated ginger (extra spice)

    ½ cup chopped pecans or walnuts (for crunch)

    Candied ginger pieces (for garnish)

    Whipped coconut cream or caramel/maple glaze


    Method

    Roast the Sweet Potatoes: Preheat oven to 400°F (200°C). Prick sweet potatoes with a fork, roast for 45–60 minutes until soft. Let cool, scoop out flesh, and mash until smooth.
     

    Prepare the Batter: In a large bowl, whisk together eggs, coconut sugar, maple syrup, melted coconut oil, and vanilla extract. Stir in mashed sweet potatoes until combined.

    Add Dry Ingredients: Sift in ginger, cinnamon, nutmeg, cloves, baking soda, baking powder, and salt. Gently fold until just combined. Stir in optional add-ins if using.
     

    Bake the Cake: Preheat oven to 350°F (175°C). Grease and line an 8-inch round cake pan. Pour in the batter, smooth the top, and bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.
     

    Cool & Serve: Let cool for 15 minutes in the pan, then transfer to a wire rack. Serve as is or top with whipped cream or glaze.

     

    Notes

    Roasting Sweet Potatoes: Enhances sweetness and prevents excess moisture.
     

    Spice Adjustment: Add more ginger for a spicier kick or a touch of cardamom for variation.
     

    Storage: Keeps for 2 days at room temp, 5 days in the fridge, or 3 months frozen.
     

    Vegan Option: Use flax eggs and maple syrup instead of honey.

    How to make candied ginger in easy steps

     Candied ginger Recipe

    Peel the ginger root and cut into 1/8” slices.

    Blanch the ginger for 30 seconds, then rinse under cold water to reduce spiciness.

    Weigh the ginger, take same quantity of sugar and equal quantity of water to prepare the syrup.

    Keep stirring till the sugar dissolves.

    Add the blanched ginger and pinch of salt, simmer for 45 minutes until the ginger turns translucent.

    Spread the ginger slices on a rack to dry for 24 hours, then coat them with powdered sugar.
