High-Protein Breakfast Casserole

 Ingredients

 2 tbsp extra-virgin olive oil, divided

4ounces sliced fresh wild mushrooms, such as oyster or shiitake (about 1cup

1 medium red bell pepper, chopped (about cups)

 1smallyellow onion, chopped (about 1cup)

¼tsp salt, divided

1(5-ounce) package baby kale

1½ tsp garlic powder

¼ tsp crushed red pepper

large eggs

½ cup small-curd 2% reduced-fat cottage cheese

 cup whole milk

 cups shredded Colby-Jack cheese, divided OR mozzarella / mild cheddar cheese can be substituted

 

Preparations

Preheat oven to 350°F. Lightly coat an 8-inch-square baking dish with cooking spray. 

Heat 1 tablespoon oil in a large skillet over medium-high heat. Add 4 ounces sliced mushrooms; cook, undisturbed, until browned, about 4 minutes. Stir and continue to cook, stirring occasionally, until the moisture has evaporated, about 3 more minutes. Add chopped bell pepper, chopped onion, ⅛ teaspoon salt and the remaining 1 tablespoon oil; cook, stirring often, until softened, about 4 minutes. Add 5 ounces baby kale, 1½ teaspoons garlic powder and ¼ teaspoon crushed red pepper; cook and stir until the kale is wilted, about 2 minutes. Set aside to cool slightly, about 5 minutes.  

Combine 8 eggs, ½ cup cottage cheese, ⅓ cup milk, ¾ cup Colby-Jack and the remaining ⅛ teaspoon salt in a blender; process on low speed until smooth, about 20 seconds. 

Spread half of the kale mixture in the bottom of the prepared dish; pour the egg mixture over the top. Scatter the remaining kale mixture over the egg mixture (most of the vegetables will sink to the middle). Top with the remaining ¾ cup Colby-Jack. Bake until puffed around the edges and golden brown, about 40 minutes. Let stand for 10 minutes before serving.

Anti-Inflammatory Lemon-Blueberry Smoothie

 Ingredients

1 cup frozen blueberries, plus more for garnish

1 medium ripe banana, peeled and frozen

1 cup packed baby kale

1/2 cup unsweetened plain almond milk

1/2 cup chilled unsweetened brewed green tea

2 tbsp hulled hemp seeds

3/4 tsp lemon zest, plus more for garnish

1 1/2 tbsp lemon juice

1/2 tsp honey (optional)

1/4 tsp ground ginger

 

 

Preparations

 Place blueberries, banana, kale, almond milk, tea, hemp seeds, lemon zest, lemon juice, honey (if using) and ginger in a blender; process until smooth, about 25 seconds. Pour into a glass. Garnish with additional blueberries and/or lemon zest, if desired. 

To make ahead

Refrigerate in an airtight container for up to 1 day.

Sweet potato salad

 Sweet Potato Salad

The following recipe will become a favorite in your home because of the tasty and interesting combination of sour and sweet. The thin sweet potato strips along with avocado dressing will change your mind about combining ingredients on different ends of the flavor spectrum.


Ingredients for dressing: 
 
Avocado - 1/2 (peeled) 
 
Lemon juice - 1 lemon 
 
Coriander - a handful 
 
Macadamia nuts - 2 tbsp. (can use walnuts) 
 
Red onion - 1/2 
 
Garlic - 1 clove 
 
Water - 1/4 cup 
 
Salt  and pepper - to taste 
 
 
Ingredients for salad: 
 
Olive oil - 2 tbsp. 
 
Corn - kernels from 1 cob (fresh) 
 
Sweet potato - 1 (peeled and sliced into thin strips) 
 
Water - 2 tbsp. 
 
Black beans - 1 can (strained and washed) 
 
Red onion - 1/2 (diced) 
 
Baby kale - 2 cups 
 
 
Method of preparing the dressing:  
Put all the ingredients in a food processor and blend for a few minutes until all the ingredients are combined well. Set aside in the refrigerator until ready to serve. 
 
Method of preparing the salad: 
Heat a tbsp. of oil in a pan and roast the corn kernels until they become golden, set aside.  
 
Heat the second tbsp. of oil in the same pan and lightly fry the sweet potato strips for about a minute.
 
Add water and cook while mixing until the water evaporates and the strips become soft about 5-7 minutes.  
Add all the ingredients in a bowl, pour in the dressing and toss until all the ingredients are well coated.

Portobello Mushrooms with Avocado Pesto

Ingredients (3 servings)  
 
2 cups baby kale leaves 
 
1-2 tbsp. pine nuts, lightly toasted 
 
1/3 cup freshly grated Parmesan cheese 
 
3 cloves garlic 
 
4 tbsp. extra-virgin olive oil, divided 
 
1 pinch coarse salt 
 
1 avocado 
 
 1/4 cup crumbled queso fresco / fresh cheese
 
Salt and pepper 
 
 
Directions:  
 
Preheat the oven to 450°F. Meanwhile, rub a tablespoon of olive oil onto the mushroom caps and place them cap side down on a foil-lined rimmed baking sheet. Sprinkle with salt and pepper and roast for a good 15 minutes until soft. 
 
While the mushrooms are in the oven, put the kale, pine nuts, cheese, garlic, and a pinch of salt in a food processor, adding three tablespoons of olive oil until the texture takes on a pesto-like consistency. 
 
Mash up the avocado until smooth, adding it to the pesto mix. Stir well and spoon the pesto and guacamole sauce into each roasted cap, topping it with some queso fresco cheese.

Air Fryer Falafel Salad

Ingredients

  • 2 cloves garlic
  • 4 scallions, whites and greens, thinly sliced, separated
  • 6 1/2 cups baby kale, divided
  • 2 15-ounce cans chickpeas, drained and rinsed
  • 1 tsp. grated lemon zest
  • 2 Tbsp. all-purpose flour
  • 1 tsp.  cumin pdr
  • 1 tsp. coriander pdr
  • Kosher salt

  • 2 Tbsp.  lemon juice
  • 3 Tbsp olive oil, divided, plus more for basket
  • 1/2  English cucumber, thinly sliced
  • 1/2 cups fresh parsley leaves/ coriander leaves
  • 1/4 cup fresh mint leaves 
  • Greek yogurt for topping

 

Method

  1. In food processor, pulse garlic, scallion whites, and 1/2 cup baby kale until very finely chopped. Add chickpeas, lemon zest, flour, cumin, coriander, and 1/2 tsp salt and pulse to combine (chickpeas should be chopped but coarse). Form mixture into twenty-four 2-tablespoon balls.
  2. Heat air fryer to 325°F. Brush insert of basket with oil and add 12 falafel. Air-fry 15 minutes. Brush falafel with 1 tablespoon oil and increase air fryer temperature to 400°F. Air-fry until deeply golden, 4 more minutes. Repeat with remaining falafel.
  3. In large bowl, whisk together lemon juice and remaining 2 tablespoons olive oil. Add cucumbers and marinate, 5 minutes. Add remaining 6 cups baby kale, parsley, and mint leaves, scallion greens, and 1/2 tsp salt and toss. Top with falafel and dollop of yogurt.

 Make it ahead: Freeze uncooked falafel balls on a baking sheet until firm; transfer to a container and freeze for up to 2 months. Air-fry from frozen, adding extra time as needed.

Sweet Potato Breakfast Burritos

Ingredients

  • 2 Tbsp. olive oil, divided
  • 1 small sweet potato, cut into 1/2-inch pieces
  • 1 medium onion, chopped 
  • 1 poblano pepper, chopped 
  • Kosher salt and pepper

  • 1/4 tsp. chili powder
  • 1 cup canned black beans, rinsed
  • 8 large eggs
  • 3 oz. Cheddar cheese, coarsely grated (about 1 cup)
  • 3 cups baby kale 
  • 6 burrito-size flour tortillas (10-inch)

 

Method

Heat 1 tablespoon oil in large skillet on medium. Add sweet potato and cook, stirring occasionally, until beginning to brown, 5 to 6 minutes. Add 2 tablespoons water, cover, and cook until tender, 2 minutes.

Add onion, poblano, and 1/4 teaspoon each salt and pepper; cover and cook, stirring occasionally, until tender, 3 to 4 minutes. Stir in chili powder and cook until fragrant, 1 minute. Stir in black beans and remove from heat.

Meanwhile, in bowl, beat eggs with 1/2 teaspoon each salt and pepper. Heat remaining tablespoon oil in large nonstick skillet on medium. Add eggs and cook, stirring with rubber spatula every few seconds, to desired done-ness, 2 to 3 minutes for soft-scrambled eggs. 

Divide filling, cheese, and kale among tortillas. For each burrito, fold sides over filling, then roll up from bottom. 

If desired, individually wrap burritos with plastic and freeze up to 2 months. 

To reheat, remove and discard plastic. Wrap burrito in damp paper towel and microwave until heated through, about 3 minutes. Heat large nonstick skillet on medium and cook burrito until golden brown and crisp, 1 to 2 minutes per side.
