Oats Cheese Pizza Dosa

 Ingredients

Preparation

Grind oats in mixer.
In a bowl, take the ground oats and add curd, chopped green chilli, chopped coriander and salt as per taste. Mix well with water, the consistency should be of a dosa batter.
Cut onions, capsicum and tomato into small pieces.
Heat the pan on a stove and apply oil. Once heated, put oats batter and spread it on the pan.
Spread pizza sauce on the heated oats batter.
Add chopped onions, tomatoes, capsicum, cashew, raisins and cheese. Cover pan with plate for 2 minutes.
Remove pan from the stove.
Fold the dosa to serve with coconut chutney.

Caramel Mango Chutney Curd Tart

 Preparations

To prepare the tart

In a mixer grinder, add maida, 200 gm butte and icing sugar for the pastry dough, except water. Grind it a few times to form coarse crumbs.
Add water little by little in mixer grinder till the dough comes together.
Give it a disc shape, cling wrap it and refrigerate it for an hour.
Roll the dough 1/4 inch thick and cut in 5*12 cm logs. Prick the logs with a fork and bake on parchment lined sheet pan in a preheated oven 180'C for 15-18 minutes.

Step 5 : To prepare the chilli caramel

Cook heavy cream and chopped chillies in a pan until it just starts to boil, strain and keep it aside.
In a saucepan, cook 100 gm powdered sugar till it melts.
When it turns amber in color, immediately add 45 gm butter and stir.
Very gently drizzle chilli infused heavy cream while stirring constantly.
Boil it for a minute. Switch off flame and allow it to cool down.

For the mango chutney

Boil 170 gm powdered sugar and vinegar until all the sugar is dissolved.
Add peeled and diced mangoes, raisins, grated ginger, chilli flakes and a pinch of salt to it. Allow it to simmer, covered with a lid, for 40-50 minutes.

 For the mango chutney curd

Dissolve cornflour into water and keep aside.
Boil the mango puree, 25 gm sugar, 55 gm butter and 65 gm of the prepared mango chutney for 8-10 minutes.
Add the dissolved cornflour, stirring it constantly and cook till it thickens.
Allow it to cool, covered in cling wrap for at least an hour or so.
Place one pastry disc on a serving plate, pipe the mango chutney curd layer on it and spoon some chilli caramel over it. Repeat the layers a few times.
Finally top the tart with some mango chunks and some caramel decorations. Drizzle some chilli caaramel and mango chutney over it.

Egg-less Mango Cake


 I made this egg-less Mango cake in microwave in 3 minutes 30 seconds. I had about 1/4 cup mashed banana, I chopped 1 mango in small pieces, added both to milk about 200 ml, along with 2-3 tbsp of sugar, 1 tsp of baking pdr, 1/2 tsp of baking soda, a pinch of salt, maida as needed, soaked raisins in warm water with 1/4 tsp of baking soda to remove toxins, washed it well twice, drained and added it to the batter, along with 1 tbsp of sunflower seeds. I add 2 tbsp of coconut oil. The batter was of pouring consistency, greased 2 microwave safe plates, spread them, baked each for 3 1/2 minutes. It was super soft and yummy. I added almond essence little.

Anti-inflammatory Powerful Mixture For Strong Bones

 Ingredients and Preparations

Flax seeds 100 gm  are good for joints, as they’re high on Omega-3 fatty acids.  Powder the seeds

Black sesame seeds 100 gm contain 60% more calcium than white ones and 2-3 times as much iron. Sesame seeds are good for joints due to its exceptionally high content of calcium, magnesium and phosphorus, which strengthen bone tissue. Powder the sesame seeds add to the powdered flax seeds

Pumpkin seeds 50 gm powder. Zinc from pumpkin seeds is important for protein synthesis and bone formation. Mix all the 3 ground seeds well in a bowl.

Soak 50 gm raisins in hot water for 10-15 minutes. Add 1 tsp of baking soda to kill bacteria. Raisins are good for the joints thanks to their high content of boron, calcium and antioxidants. They strengthen bones, reduce inflammation and lower the risk of osteoarthritis.

Regular consumption contributes to the maintenance of bone density and cartilage elasticity.

Ginger 6-7 cm long, peel it. Ginger is an effective natural remedy for joint health with strong anti-inflammatory and pain-relieving properties. It reduces swelling, improves joint mobility and helps with arthritis and osteoarthritis. Ginger warms, promotes blood circulation and supports cartilage regeneration. Grate it and add to a blender.

Lime 1 juice. Wash the lemon peel thoroughly with water and baking soda. Lemons are good for the joints due to their high Vitamin C content. Vitamin C helps reduce inflammation, strengthens connective tissue and dissolves acid crystals which cause pan in arthritis and gout.

Cutt the lemon into pieces and remove the seeds.

Rinse the soaked raisins under running water and add them to the ginger and lemon.

Puree the lemon, raisins and ginger using a hand blender or a grinder. Add this mixture with the dry powder, add honey 200 ml. Honey is beneficial for the joints due to its anti-inflammatory properties, its pain relieving effect and its blood circulation-enhancing effect.

Turmeric pdr 1 tsp add to the rest of the ingredients.

Thanks to its active ingredients curcumin, turmeric is a powerful, natural anti-inflammatory and antioxidant that effectively relieves pain, swelling and stiffness in joints in cases of arthritis, arthrosis and osteochondrosis.

Add little black pepper powder to activate the curcumin. Mix all well.

Take this mixture 1 tbsp twice a day to strengthen joints and reduce bone inflammation.

Store the mixture in an airtight container in the refrigerator.

Kale Salad for Eye Health

Kale is an excellent source of lutein and zeaxanthin, a couple of powerful antioxidants that protect the eyes by shielding them from harmful UV rays. Kale also prevents cataracts.

Ingredients 

Salad 

• 2 cups kale, chopped into strips 

• 1 cup roasted almonds, chopped

• 1 onion, chopped 

• 3 peaches, cubed 

• ¾ cup raisins 

Dressing  

• 1½ cup virgin olive oil 

• ½ cup apple cider vinegar 

• 1½ tbsp Dijon mustard 

• 1 tbsp honey

Preparation
 

1. Wash and chop the kale, peaches and onion. 

2. Roast the almonds and chop them. 

3. Combine the dressing ingredients in a bowl, add salt and pepper to taste. 

4. Add the dressing to the salad and allow it to marinate for a few hours.

Bread Chocolate cake

Ingredients and Preparations

250g old bread (eg, sourdough, baguette, Italian bread)
550ml whole milk
50g raisins
, or currants (optional)
1 tbsp grappa, rum or brandy (optional)
2 eggs, beaten
50g unsweetened cacao powder
100g brown sugar
80g almonds
, or pine nuts or other nuts
Creme fraiche, or thick cream, to serve (optional)

Tear the bread into a bowl, cover with the milk, place a weight on top and leave to soak for 15 minutes, until the bread is very soft. Meanwhile, soak the raisins in grappa, rum or brandy, if using.

Mash or blend the bread and milk mix to a puree. Add the beaten eggs, cacao powder and brown sugar, then pulse-blend or mix well to combine – the mixture should be the consistency of custard. Stir in the nuts (save a few tablespoons to scatter on top) and the optional soaked raisins.

Line a 23cm flan or sealed cake tin with unbleached baking paper and fill with the custard (it’s runny, so the tin needs to be a solid one, rather than spring-form). Bake in a 190C (170C fan)/375F/gas 5 oven for 40 minutes, until firmly set. Remove and leave to cool fully in the tin before serving, or refrigerate overnight. It keeps well for three to five days in the fridge.
