Berliner (German Donuts)

 berliner recipe authentic german donuts doughnuts pfannkuchen berlin raspberry jelly jam apricot 

 Ingredients

cups all-purpose flour

1/3 cup sugar

2 1/4 tsp instant yeast

1 1/2 tsp lemon zest

1/2 tsp Kosher salt

cup milk, room temp, plus more as needed

  2 large eggs @ room temp

large egg yolk, room temp

tbsp unsalted butter, melted and cooled to room temp

1 1/2  tsp pure vanilla extract

1cup raspberry jam, or jam/filling of choice

granulated sugar, (about 1 cup)

 pinch of cinnamon

powdered sugar(about 1/2 cup)

oil for frying, choose a neutral tasting oil with a high smoke point like avocado or canola. 

 

Preparations 

Place the flour, sugar, yeast, salt and lemon zest in the bowl of a stand mixer and stir to combine. Add the eggs, butter, vanilla extract, and milk. With the dough hook attached, knead the dough for about 10 minutes or until it's no longer sticky but is soft and supple. Add more milk if the mixture is too dry, add more flour if it's too wet.

Form the dough into a ball, spray the bowl with oil, and place the dough ball back in the bowl.

Cover the bowl loosely with plastic wrap and let it rise in a warm place for 45-60 minutes or until doubled in size.

Punch down the dough in the center. Divide the dough into uniform pieces. I like to weigh the dough to get themas close to equal as reasonably possible. At about 80 grams per piece you'll get 15 Berliner donuts.

Using the palms of your hands, roll the dough pieces into balls and place them on a lined baking sheet, keeping space between them to allow them room to rise. Cover them with a clean towel or cover loosely with plastic wrap and let them rise in a warm place for another 30-60 minutes or until nearly doubled in size and nice and puffy.

Make sure to give the dough balls adequate time to rise as this will be crucial for achieving the right texture. Heat the oil in a deep pan. The oil should be at least 2 inches deep. Keep the temperature between 350-365 F. If it's not hot enough the donuts will soak up the oil and be greasy. If the oil is too hot the outside will burn before the inside is fully cooked. I like to keep it at just over 350 F. Working in batches, carefully lower a few of the dough balls into the hot oil. The temperature should be such that the Berliner will cook for on each side for about 2 minutes or slightly less. After about 2 minutes, or when the bottom is a deep golden brown, carefully flip the donuts over and continue to cook for about another 2 minutes or until deep golden brown. Do not at any point submerge the Berliner under the oil otherwise they will not develop the white rim around the center that is characteristic of Berliner. Remove the Berliner and place them on paper towels to drain. Repeat the process for the remaining donuts. Once the Berliner are cool enough to handle, it's time to fill them. Place the jam in a piping bag fitted with a filling tip . Push the filling tip into the side of Berliner, along the white rim, and squeeze some jam into the donut. Repeat this for all of the donuts.  

Place the granulated sugar into a wide shallow bowl and mix in just a touch of cinnamon. Place a donut on the sugar, scoop some sugar on top of it, and roll it around in the sugar until well coated. Repeat for all remaining donuts.

Place the sugar coated donuts on a wire rack and dust the tops with powdered sugar.

Berliner donuts are best eaten while still a little warm and definitely on the same day, but will keep for a couple of days in an airtight container at room temperature.

Ingredients

1 apple, sliced

2 tbsp natural peanut butter

Pinch of cinnamon

How to make it:

Arrange the apple slices on a plate and serve with peanut butter for dipping. Sprinkle with a pinch of cinnamon.

Banana Oatmeal

 Banana Oatmeal 

Ingredients

4 large ripe bananas, divided

 3 cups slow-fat m ilk

 cups old-fashioned rolled oats 

 3 tbsp pure maple syrup

tsp vanilla extract

¾ tsp cinnamon pdr, plus more for sprinkling

¼ tsp ginger pdr

⅛ tsp salt 

 

Preparations

Peel and slice 1 banana; reserve for serving. Using a fork, mash the remaining 3 bananas in a large saucepan. Add milk and bring the mixture to a simmer over medium-high heat, scraping the bottom of the pan often with a wooden spoon. Stir in oats, maple syrup, vanilla, cinnamon, ginger and salt. Reduce heat to medium-low. Cook, scraping the bottom of the pan often with the spoon, until the mixture is thick and creamy, about 5 minutes. Divide the oatmeal evenly among 4 bowls; top evenly with the reserved banana slices. Sprinkle with cinnamon, if desired, and serve immediately.

Strawberry Rhubarb Cobbler

Ingredients

8 cups chopped rhubarb

1 cup sliced fresh strawberries

2 cups white sugar

2 tbsp all-purpose flour

¾ cup brown sugar

¾ cup quick-cooking oats

¾ cup all-purpose flour

1 tsp cinnamon pdr

½ cup butter


Directions

Gather the ingredients. Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.

Combine rhubarb, strawberries, white sugar, and 2 tablespoons flour in a bowl; spread into the prepared baking dish.

Mix brown sugar, oats, 3/4 cup flour, and cinnamon together in a bowl; cut in butter with 2 knives or a pastry blender until mixture resembles coarse crumbs. Sprinkle over rhubarb mixture.

Bake in the preheated oven until cobbler is bubbling and lightly browned, about 45 minutes. Serve hot or cold.

Delicious Apple upside-down Cake.

Ingredients 

 • 4-5 apples 

• 1 lemon, zested 

• 1tbsp ¼ Cup + butter 

• ¼ Cup + 1 tbs. sugar 

• 2 tbs. sugar

• 1 tsp. cinnamon  pdr

For  Cake 

• ⅓ Cup butter, room temperature 

• ¼ Cup + 1 Tbs sugar 

• 3 eggs 

• 3 tbsp sour cream 

• 1 tsp. vanilla extract 

• 2 tsp. baking powder

• ¼ tsp kosher salt 

• ½ Cup all-purpose flour 

Garnish (Optional) 

• Maple syrup 

• Vanilla Ice Cream


Preparations

Preheat the oven to 350°F. Melt and combine 1/3 cup butter and 1/4 cup sugar to a saucepan until golden brown. Butter a 9-inch cake pan, adding the caramel sauce to the bottom (the butter and sugar mix). 

Layer the peeled, sliced apples in the cake pan and coat with 2 tablespoons of sugar and 1 tablespoon cubed butter. 

Bake at 350°F for 15 minutes. Meanwhile, in a bowl, add 1/2 cup flour, 1/4 teaspoon salt, 2 teaspoons baking powder and mix well until combined. 

In a separate bowl, add 1/3 cup butter, 1/4 cup sugar and mix well, until the texture is smooth. 

Add 3 egg yolks to the ingredients listed in step 4 (put the egg whites aside) and combine well. Then add 1 teaspoon vanilla extract and the zest of 1 lemon. Add the dry flour mixture (as indicated in step 3) to the mix as well as 3 tablespoons of sour cream. Combine all ingredients well. 

In another bowl, add the 3 egg whites, whisk until firm peaks form. Then, add the egg whites to the flour and egg yolk mix. Combine well. Remove the caramelized sauce and apples from the oven. Coat in 1 teaspoon cinnamon and pour the cake batter over the apples. 

Bake at 350°F for 25 to 35 minutes. Let cool for five minutes, invert onto a plate and serve with a scoop of ice cream or maple syrup.

Coconut Chai-Spiced Overnight Oats

Ingredients

½ cup old-fashioned rolled oats (see Tip)

½ cup water

Pinch of salt

tbsp unsweetened coconut milk beverage

2 tbsp toasted unsweetened coconut chips

2 tsp brown sugar

¼ tsp cinnamon pdr

tsp ground ginger

Pinch of cardamom pdr

Pinch of pepper pdr


Preparations

 Combine oats, water and salt in a jar or bowl and stir. Cover and refrigerate overnight.

In the morning, heat the oats, if desired, or eat cold. Top with coconut milk, coconut, brown sugar, cinnamon, ginger, cardamom and pepper.

Tips

People with celiac disease or gluten sensitivity should use oats that are labeled "gluten-free," as oats are often cross-contaminated with wheat and barley.

To make ahead: When prepping the oatmeal the night before, measure and toast the ingredients for the topping.

Apple-Cinnamon Muesli

Ingredients

2 cups old-fashioned rolled oats

1 1/2 cups unsweetened almond milk

1 cup whole-milk plain strained (Greek-style) yogurt

1 cup unsweetened applesauce

1/4 cup chopped dried apples

1/4 cup dried cranberries

1/4 cup sliced almonds, plus more for garnish

3 tbsp no-sugar-added apple juice

2 tbsp unsalted roasted sunflower kernels, plus more for garnish

2 tbsp chia seeds

1 1/2 tbsp pure maple syrup

1 tsp vanilla extract

1 tsp cinnamon pdr, plus more for garnish

1/4 teaspoon salt

1 medium Honeycrisp apple, thinly sliced


 Instructions

Stir oats, almond milk, yogurt, applesauce, dried apples, cranberries, almonds, apple juice, sunflower seeds, chia seeds, maple syrup, vanilla, cinnamon and salt together in a large bowl. Cover tightly and refrigerate for at least 8 hours (and up to 3 days).  

To serve, divide the mixture among 4 bowls. Top each with 1/3 cup sliced apple. If desired, garnish with almonds, sunflower seeds and cinnamon.

The Breakfast Smoothie for Lower Cholesterol

    Ingredients:

    ¼ cup rolled oats
     prunes 4
    frozen cherries 1 cup
    lime zest 1 tsp
    low-fat milk 1 cup
    frozen riced cauliflower  1/4 cup
     chia seeds 1 tbsp
    cinnamon pdr 1/2 tsp
    water/ ice 1/2 cup 

    Instructions:

    1. Add the oats and prunes to your blender first. Pulse them a few times to break them down so they blend smoothly.
    2. Add the frozen cherries, lime zest, low-fat milk, frozen riced cauliflower, chia seeds and cinnamon to the blender.
    3. Blend on high until the mixture is completely smooth and creamy. If the smoothie feels too thick, splash in a little water or toss in some ice and blend it again.
    4. Pour the smoothie into a glass and enjoy right away.

    Berry-Almond Smoothie Bowl

      Ingredients

    cup frozen raspberries

    ½ cup frozen sliced banana

    ½ cup plain unsweetened almond milk

    5 tbsp sliced almonds, divided

    ¼ tsp cinnamon pdr

    tsp cardamom pdr

    tsp vanilla extract

    ¼ cup blueberries

    1 tbsp unsweetened coconut flakes


    Method

    Blend raspberries, banana, almond milk, 3 tablespoons almonds, cinnamon, cardamom and vanilla in a blender until very smooth.

    Pour the smoothie into a bowl and top with blueberries, the remaining 2 tablespoons almonds and coconut.

    Sweet Potato Pie

     Ingredients

    1 lb sweet potatoes

    1/2 cup unsalted butter, room temperature

    1/2 cup granulated sugar

    1/2 cup brown sugar

    1/2 cup whole milk

    2 large eggs

    2 tsp vanilla extract

    1 tsp cinnamon pdr

    1/2 tsp nutmeg pdr

    1/4 tsp salt

    a pinch of  cloves pdr

    1 (9 inch) unbaked pie crust (homemade or store bought)

    Recommend topping options:

    whip cream (or cool whip)

    marshmallow fluff

     

    Preparations

    Preheat oven to 400 °F. Wrap sweet potatoes with foil and bake on a  cookie sheet until soft, about 45 minutes (or longer if your sweet potatoes are extra large).

    Remove from the oven and allow to cool completely.

    Once sweet potatoes are cooled, preheat oven to 350 °F. Remove foil and skin from sweet potatoes.

    In a large bowl, mash sweet potatoes and butter until completely smooth. Whisk in sugar, brown sugar, whole milk, eggs, vanilla extract, cinnamon, nutmeg, salt and cloves. Whisk until mixture is well combined.

    Pour filing into unbaked piecrust. Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean. The pie will rise while baking and then deflate as it cools.

    Serve warm or chilled with a dollop of whip cream or marshmallow fluff! 


    Tips

    Allow sweet potato pie to cool completely on the counter. If you try to put it into the fridge too early, the top can crack and condensation can form and ruin the top of the pie.

    Wrap the sweet potato pie tightly with saran wrap (or cling wrap/foil) and place in the fridge.
