Lemon-Raspberry Ricotta Pound Cake

 Lemon-Raspberry Ricotta Pound Cake 

Ingredients

¾ cup granulated sugar

5 tbsp butter, softened

3 large eggs, at room temperature

¾ cup whole-milk ricotta cheese

3 tbsp lemon juice plus 2 teaspoons, divided

2 tbsp lemon zest

1 tsp vanilla extract

¾ cup all-purpose flour

¾ cup white whole-wheat flour

1 ½ tsp baking powder

½ tsp salt

1 ½ cups fresh raspberries

2 tbsp packed confectioners' sugar  

 

 Preparations

Preheat oven to 350 degrees F. Generously coat a 9-by-5-inch loaf pan with cooking spray.

Beat granulated sugar and butter in a large bowl with an electric mixer on medium-high speed until creamy. Beat in eggs, one at a time, until fully incorporated. Reduce the mixer speed to medium-low and beat in ricotta, 3 tablespoons lemon juice, lemon zest and vanilla until combined.

Whisk all-purpose flour, whole-wheat flour, baking powder and salt together in a medium bowl. Add to the ricotta mixture and beat on low speed until almost combined. Gently fold raspberries into the batter. Transfer to the prepared pan.

Bake until browned around the edges and a cake tester inserted in the center comes out clean, 1 hour to 1 hour and 10 minutes. Let cool in the pan on a wire rack for 20 minutes. Run a knife around the edges to loosen the cake, then invert onto the rack. Carefully turn the cake right-side up. Let cool completely.

Whisk confectioners' sugar and the remaining 2 teaspoons lemon juice in a small bowl until smooth. Brush the glaze on the cooled cake.

To make ahead

Using toothpicks to hold the plastic wrap away from the glaze, loosely wrap the cake and store at room temperature for up to 1 day.

Breakfast Carrot-Oatmeal Cakes

 Ingredients

3 cups old-fashioned rolled oats

cups low-fat milk

cup packed brown sugar

¼ cup unsweetened applesauce

2 large eggs, lightly beaten

1 tbsp cinnamon pdr

1 tsp baking pdr

1 tsp vanilla extract

½ tsp  nutmeg pdr

½ tsp salt

½ cup finely shredded carrot

¼ cup raisins, chopped

¼ cup finely chopped walnuts

 

Preparations

Preheat oven to 375°F. Coat a 12-cup muffin tin with cooking spray.  

Combine 3 cups oats, 1¼ cups milk, ⅓ cup brown sugar, ¼ cup applesauce, 2 eggs, 1 tablespoon cinnamon, 1 teaspoon baking powder, 1 teaspoon vanilla, ½ teaspoon nutmeg and ½ teaspoon salt in a large bowl. Fold in ½ cup carrot, ¼ cup raisins and ¼ cup walnuts. Divide the batter between the prepared muffin cups, about ⅓ cup each. Bake until a toothpick inserted in the center comes out clean, 25 to 30 minutes. Run a knife around the edges of the cups to release the oatmeal cakes. Cool in the pan for 10 minutes, then turn out onto a wire rack. Serve warm or at room temperature.

Baked Oatmeal with berries and seeds

Ingredients

4 tbsp unsalted butter, melted, plus more for pan
 
6 medjool dates, pitted and chopped (½ cup)
 
4 cups old fashioned rolled oats
 
1 tsp baking powder
 
½ tsp kosher salt
 
½ tsp  cinnamon pdr
 
4 cups whole milk
 
¼ cup pure maple syrup / honey, plus more for serving
 
2 large eggs
 
2 tsp vanilla extract
 
1 cup fresh or frozen mixed berries
 
¼ cup toasted pumpkin seeds
 
2 tbsp sesame seeds/  flax seeds
 
 
 
Directions
 
Heat oven to 350°F. 
 
Butter a 3-quart baking dish. 
 
Sprinkle dates evenly along bottom. 
 
In a large bowl, whisk together oats, baking powder, salt, and cinnamon. 
 
In another bowl, combine milk, maple syrup / honey, melted butter, eggs, and vanilla extract. 
 
Add to bowl with oats and stir to combine. Transfer to prepared dish.  
 
Sprinkle top with berries and bake until just set, about 35 minutes. 
 
Sprinkle pumpkin seeds and sesame / flax seeds over oatmeal. 
 
Let cool 20 minutes. Serve warm or cold with extra maple syrup, if desired.  
 
Baked oatmeal can be stored covered in the refrigerator up to 5 days.

Almond Cake with Cardamom and Pistachio

 Ingredients:

For the cake:

200 g almond flour (finely ground, blanched almonds)
100 g all-purpose flour (or gluten-free flour if desired)
200 g granulated sugar
1 tsp baking powder
1/2 tsp cardamom pdr
1/4 tsp salt
3 large eggs (about 150 g)
100 g unsalted butter, melted and slightly cooled
120 ml plain yogurt or sour cream
1 tsp vanilla extract
For the topping:
50 g chopped pistachios
2 tbsp powdered sugar (optional, for dusting)


Directions:

Preheat your oven to 175°C (350°F). Grease a 20 cm (8-inch) round cake pan and line the base with parchment paper.


In a large mixing bowl, combine the almond flour, all-purpose flour, sugar, baking powder, ground cardamom, and salt. Mix well.


In a separate bowl, whisk together the eggs, melted butter, yogurt, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.


Pour the batter into the prepared pan and smooth the top with a spatula. Sprinkle the chopped pistachios evenly over the top.


Bake for 35-40 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.


Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Dust with powdered sugar before serving if desired.
