Candied Lamon Skins

This is an unusual treat, and if you want to keep the peel's sour flavor, just use less sugar than called for in the recipe.
uses for lemon peels

Ingredients:

4 large lemons
2 cups of sugar
8 cups of water

Preparation:
1. Peel the lemons and cut the peel into thin strips.

2. Place the peel on a cutting board and remove as much of the fruit as you can using a sharp knife.

3. Boil 2 cups of water in a medium-sized pot. Add the peel strips to the boiling water and cook for 2 minutes. This will remove most of the bitterness in the peel. Remove the peel strips from the water.

4. Repeat the process 2 more times, using fresh water each time.

5. Empty the pot, add 2 new cups of water and 2 cups of sugar. Let it simmer to produce a sugary syrup.

6. Lower the heat and add the lemon peel. Cook the strips in the syrup for an hour – they should become soft and translucent. Use a fork or tongs to remove the strips from the syrup and leave them on a drying rack to dry out – this should take a few hours.

7. After removing the strips from the water, you can sprinkle sugar on them. (optional)

8. Move the dry peel pieces to a sealed container. The dried peel pieces will stay fresh for several days at room temperature, or for several weeks in the fridge.

Dressed-Up Pear Slices With Almond Butter and Granola

Dressed-Up Pear Slices With Almond Butter and Granola

Fruit makes a great snack, period, but taking a minute to add a few frills can elevate the eating experience in a big way. Plus, it’s an opportunity to boost the nutritional value! Between the pears and the almond butter, this nourishing recipe boasts a whopping 10 grams of fiber. What’s more, the almond butter also provides protein and healthy fats to help keep you satisfied.

Granola is healthy in small amounts, especially because oats, nuts, seeds and dried fruit provide some fiber that's good for heart and gut health. However, granola can also be a rich source of calories, saturated fat and sugar, depending on the brand you buy.

Basic (but very good) granola requires just a handful of ingredients: rolled oats, a sweetener, some cooking oil, and maybe nuts or dried fruit. Once you master that basic formula, it's easy to customize a mix for your own preferences.

Ingredients

1 Tbsp. granola

1 medium ripe pear, sliced

1 Tbsp. almond butter

A pinch of cinnamon

Preparations

Crush granola with your palm for a finer consistency. Drizzle or dollop pear slices with almond butter, then sprinkle with granola and cinnamon.

Honey Roasted Garbanzo Beans

 Honey Roasted Garbanzo Beans

The problem is that people associate snacking with being unhealthy. However, in reality, there are many snacks out there that taste great and are also good for you. We’re not talking about the standard carrots and hummus or grapes here. These roasted garbanzo beans (also referred to as chickpeas) will make for a delicious snack that's also low on fat and healthy

Ingredients:
Chickpeas (garbanzo beans) - 1 can (15 oz)
Sea salt - 1/2 tbsp. (or more to taste)
Honey - 2 tbsp.
Olive oil - as needed

Preparation:
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mate.

Drain, rinse, and dry the beans. You will want them to be very dry.

Toss the beans in the olive oil and salt. Spread on the baking sheet in a single layer.

Bake for around 45 minutes, stirring every 10-15 minutes or so, until crispy.

Allow the beans to cool slightly, and then test one.

If it’s still soft, bake them for another 10 minutes, or until they’re nice and crispy.

While they’re still hot, toss them in a bowl with the honey and more salt, if desired.

You can eat them as they are, or you can bake again for a caramelized effect.

Place the coated beans back in the oven for another 10-15 minutes. Now you're done!
