Chocolate lava cake

Ingredients required for a single serve

15g oat flour (blended oats)

5 gm / 1 tsp cocoa pdr

10 gm/ 2 tsp protein powder (vanilla or chocolate)

Sweetener to taste

1/2 tsp baking powder

35ml almond milk

10 gm chocolate square or a tsp chocolate spread (centre) 

Preparations

Mix oat flour, cocoa powder, protein powder, sweetener, baking powder, and almond milk together in a bowl.

Transfer the ingredients into a small ramekin.

Now add chocolate into the mixture, press it in the middle to get a lava burst in the mouth.

Microwave it for 25–40s (watch closely)

Your chocolate lava cake is ready to satiate your sweet cravings.

Brownie Protein Bites

 Ingredients

1/2 cup / 48 gm almond flour 

1/4 cup chocolate protein pdr

3 Tbsp. / 18 gm unsweetened regular cocoa pdr

3/4 tsp. kosher salt

1/3 cup almond butter

2 Tbsp. almond milk

2 Tbsp. maple syrup

1 tsp. pure vanilla extract 

6 oz. dark chocolate (60% cacao; good-quality chips or chopped bars)

1 Tbsp. refined coconut oil

2 Tbsp. mini rainbow coloured chocolate chips


Preparations

 In a large bowl, whisk almond flour, protein powder, cocoa powder, and salt. Add almond butter, almond milk, maple syrup, and vanilla and, using a rubber spatula, fold until well combined.

Scoop heaping Tbsp. of dough (about 20 g. each) and roll into balls (you should have 12 total). Arrange on a parchment-lined baking sheet. (If balls seem sticky or inclined to slump at this point, freeze for 15 minutes before proceeding.)

In a medium heatproof bowl, microwave dark chocolate and oil in 30-second increments, stirring between each, until melted and smooth, about 90 seconds total.

Working one at a time, drop brownie bites into melted chocolate and spoon chocolate over. Using a fork, lift bite out of chocolate, letting excess drip off, and return to baking sheet. Allow chocolate to set for a few minutes, then sprinkle with rainbow chocolate chips.

Refrigerate bites until chocolate is hardened, at least 30 minutes, then store in an airtight container in the refrigerator up to 1 week.

dark chocolate bits/ pdr  1 tbsp

water/milk/ yogurt   12 ounces  / 355 ml

Double Chocolate Cottage Cheese Muffins

 Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 scoop chocolate protein powder
  • 1/2 cup coconut sugar
  • 2 eggs
  • 1 cup cottage cheese
  • 1/3 cup coconut oil or any oil of your choice
  • 1/3 cup honey or maple syrup
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chocolate chips
  • 1/2 cup milk


Preparations

Preheat your oven to 350°F (180°C) and line a muffin tin with paper liners or give it a quick grease so nothing sticks.

Pop the cottage cheese into a blender or food processor and blitz until smooth and creamy. This step is key—it gives you that soft, even muffin crumb without any curds.

In a large mixing bowl, whisk together the blended cottage cheese, eggs, coconut sugar, honey (or maple syrup), and oil until the mixture is smooth and well combined.

Now add your dry ingredients: flour, protein powder, baking powder, baking soda, and salt. Gently fold everything together with a spatula until just combined. Try not to overmix—this is muffin batter, not bread dough.

Stir in the milk until it’s fully incorporated and the batter looks thick and chocolatey.

Fold in those chocolate chips, saving a few to sprinkle on top for bakery-style flair.

Divide the batter between the muffin cups, filling each one right up to the top. Sprinkle those extra chocolate chips on if you’re feeling fancy.

Bake for around 30 minutes, or until a toothpick poked into the center comes out clean or with just a few moist crumbs (not wet batter!).

Let the muffins cool on a wire rack before digging in.
