Amla & Ginger- For Glow

  

The Problem: Chemical colours plus sun exposure create oxidative damage, showing as dull, tired skin. Your liver worked overtime processing fried foods and sweets. You feel fatigued with no skin glow.

The Solution: Blend one fresh amla with a half-inch ginger piece and lime juice. Dilute with water. Drink as a morning shot.

Why it works: Amla has more vitamin C than oranges, essential for collagen and liver detox. Ginger adds anti-inflammatory properties and aids digestion. Lime provides extra vitamin C and supports hydration. This trio supports liver function and overall recovery.

Amla/ Indian gooseberry Halwa

Ingredients and Prep

12 large size Indian gooseberries
1/2 cup very hot water
1/3 cup sugar
2 tablespoons water for the sugar
1 tablespoon ghee for the halwa
1 teaspoon ghee- just to line the utensil
cardamoms pdr 1/2 tsp
nuts and raisins as desired
 
Wash the gooseberries and pat them dry. Drop them in the hot water and keep them in for two minutes. Remove from the water and grate them. Alternately you may crush the pulp and remove the stone.
In a microwave proof bowl, grease the walls with ghee/oil. Add the sugar to the water for the syrup. Cook on micro power high for 4 minutes. Stir and check the consistency. If a thread can be drawn between the thumb and forefinger, the syrup is ready. If not keep for a further minute or two.
Add the grated fruit, stir and return to the microwave. Cook on medium high without covering for 3 minutes initially. The addition of fruit will dilute the syrup and the goose berry pulp will cook in this.
Allow to stand two minutes, adding nuts and raisins.
Remove and check if they have blended well and the fruit is cooked while still crunchy.
Add the ghee and cardamom pdr and mix well. If the consistency is thin, you may cook for another 1/2 a minute. However, when cool the halwa will hold.

 Note- to make it healthier, you may jaggery instead of sugar and cook in the same way. Amla h Vitamin C and jaggery has iron, to absorb iron you need Vitamin C.

No need of Muiltivitamin Tablets

 Our kitchen is literally a medicine cabinet, which at times we forget about the great uses of various ingredients there. 

Now, you can make your own, very healthy, super vitamin rich powder using those simple ingredients in your kitchen cabinet.

Ingredients

dry red chilies 8-10 ( largely depends on the quantity of the ingredients you'll use)

coriander seeds 1 tbsp

jeera/ cumin 1 tbsp

garlic cloves 8-10

curry leaves 1 bowl full, washed and dried

drumstick leaves 1 bowl, washed and dried 

salt to taste

melon seeds 50 gm

pumpkin seeds 50 gm

sesame seeds 50 gm

amla , Indian gooseberry chopped thin 1/4 cup 

 

Preparations

 In a pan, dry roast red chilies, coriander seeds, jeera, garlic well, remove and keep in a plate/ bowl

roast melon, pumpkin and sesame seeds well, put it over the rest of the roasted ingredients

roast crisp curry leaves  over the gas, stirring well in medium flame or in the microwave

remove and spread over the roasted ingredients

You've to carefully remove the drumstick leaves from the stems, wash well, dry by spreading over a neat cloth to dry well in the shade.

last add the thinly slices amla, fry well till the water evaporates from it 

In a large mixer jar, add  the roasted ingredients in the mixer jar, powder fine along with salt to taste.

daily add a tbsp of this powder, to hot plain rice, add some ghee and eat, you'll get all the nutrients you need from this powder itself. 

 

We can get all the possible vitamins, minerals, fiber from this super healthy powder.

Capsicum Chutney

Ingredients

To roast and powder(masala):

4 Green Capsicum
1 Amla / Gooseberry
2 tsp Tamarind Paste
Salt to taste
1 tbsp Coriander  Seeds
1/2 tsp Methi Seeds 
1 tbsp Chana dal 
 
6-10 Dry Red Chilies

To temper:

2-3 tbsp Oil
1 tsp Mustard seeds 
Asafoetida a pinch

Curry leaves  few

 

Preparations

Wash and roughly chop the capsicums and grind them semi coarse in a mixer and keep aside.

In a small pan, add few drops of oil and all the ingredients mentioned under to roast and powder. Fry till they are crisp and then fine powder the spices in a mixer .

In a kadai, take oil, add mustard seeds and once they splutter, add curry leaves, hing and turmeric powder. To the tempering, add coarsely ground capsicum, the masala powder, tamarind extract and salt. Mix everything well.

Saute the chutney for 5-10 minutes with stirring in between. Let it boil well and get a nice taste and color. Don't add any extra water .

The Capsicum chutney is ready to be relished with roti or with hot steamed rice topped with ghee.

Amla/ Gooseberry Raita

  

Ingredients

2 cups Curd  whisked
4 Amla (Nellikai/ Gooseberry) grated
1/4 cup Fresh coconut, grated
1 Cucumber, peeled and grated
2 Green Chilies, chopped finely
1/2 tsp Mustard seeds
Salt to taste

1 tsp Oil

 

Preparations

Grind the raw gooseberries, grated coconut, green chili and salt into a coarse mixture. Keep aside.

In a bowl whisk the yogurt well until smooth. Stir in the ground gooseberry mixture and grated cucumber. Check the salt and spice levels and adjust to suit your taste.

Transfer the Nellikai (Amla) Raita into a serving bowl.

The next step is to make the seasoning for the Nellikai Pachadi. Heat oil in a small pan; add the mustard seeds and curry leaves. Allow them to crackle.

Pour the seasoning over the Nellikai Pachadi (Amla Raita) and stir it in and serve with your choice of Pulao recipe to a wonderful meal.

Health Tip As amla is a rich source of Vitamin C, which just 1 amla gives us enough vitamin C for the day. To absorb iron from leafy green veges. we need Vitamin C. I always make it a point to either have amla raita or amla pickle whenever I make palak dal or methi kootu.

Amla rasam for relief from cold

 Ingredients

Amla 5 chopped

Tomatoes 2 chopped

Dry red chilies 2 grind all together to a smooth paste

Coarsely crush

Jeera 1 tsp

Garlic 3 cloves

Pepper 1 tsp

Ginger 1” chopped 

 

Preparations

In a pan add amlas 3 chopped

Tomato 1 small chopped

Curry leaves few finely chopped

Haldi ½ tsp

Salt 1 tsp

Water 2 cups

boil well for 5 minutes

add ground amla-tomato paste, mix well

cover and let it simmer for 5 minutes

add water 4 cups

cooked tuvar dal 1 ½ cup well mashed 

let it boil well for 3 minutes

 add crushed masalas, mix well, let it boil well

tempering

ghee 1 tbsp

mustard seeds ½ tsp

jeera ½ tsp

hing little

curry leaves finely chopped 1 tsp

pour over the rasam, cover for 3 minutes, then serve hot with cooked rice.
