Eggs Benedict (Serves 4)

 Eggs Benedict Recipe   

 Ingredients 

• 4 egg yolks 

• 3 ½ tbsp lemon juice 

• 1 pinch ground white pepper 

• 1/8 tsp Worcestershire sauce 

• 1 tbsp water 

• 1 cup butter, melted 

• ¼ tsp salt 

• 8 eggs 

• 1 tsp distilled white vinegar 

• 8 strips bacon / Tofu, Mushroom, Tempeh, coconut, eggplant

• 4 English muffins, split 

• 2 tablespoons butter, softened


Directions 
 
To make the Hollandaise 
 
1. Fill the bottom of a double boiler part-way with water. Make sure that the water does touch the top pan. Bring the water to a simmer. In the top of the double boiler, whisk the egg yolks, lemon juice, white pepper, Worcestershire sauce, and 1 tablespoon of water. 
 
2. Add the melted butter to the egg yolk mixture (1 or 2 tablespoons at a time) while whisking constantly. If the Hollandaise sauce starts to get too thick, add a teaspoon or two of hot water. Continue whisking until all the butter has been incorporated. Whisk in the salt, remove from the heat, and place a lid on the pan to keep the sauce warm.

To poach eggs 
1. Fill a large saucepan with 3 inches of water. Bring the water to a gentle simmer, then add vinegar. Carefully break the eggs into the simmering water, and allow it to cook for 2-3 minutes. The yolks should be soft in the center. Remove the eggs from the water and set on a warm plate. 
 
2. While the eggs are poaching, brown the bacon / substitute  in a medium skillet over a medium-high heat and toast the English muffins on a baking sheet. 
 
3. Spread softened butter on the toasted muffins, and top each one with a slice of bacon, followed by a poached egg. Place two muffins on each plate and drizzle with hollandaise sauce. Sprinkle with some chopped chives and serve immediately.

Baked crushed potatoes

 Baked Crushed Potatoes  

 veg substitute for bacon -extra firm tofu, eggplant, rice paper, sweet potato, shiitake mushrooms, etc.

Ingredients

 Baby gold potatoes - 2 lbs. 

Cheddar cheese - 6 oz / 1 cup

Bacon slices - 4 (chopped) 

Unsalted butter - 4 tbsp. (divided) 

Garlic - 2 cloves (minced) 

Thyme - a few sprigs (for serving) 

Salt and Pepper - to taste


Preparations
 
Arrange the potatoes in a large stockpot, cover with water and tbsp of salt. 
 
Boil for 15-20 minutes until tender, drain and set aside to cool. 
 
Preheat the oven to 400°F (200°C). Line a baking sheet and grease with butter. 
 
In a saucepan, sauté the onion in butter on a medium flame. 
 
Arrange the potatoes on the baking sheet without overlapping. 
 
Using a potato masher, press down on each potato to flatten it. 
 
Brush the mashed potatoes with butter and garlic. Bake for 15-20 minutes. 
 
Take out the baking sheet from the oven and flip the potatoes using a spatula. 
 
Garnish each potato with a pinch of shredded cheese and bacon/ substitutes. 
 
Return the baking sheet to the oven and cook for 5-10 more minutes until the cheese melts. 
 
Remove the potatoes to a plate and top them with thyme. 

Serve with a good salad to complete the meal.

Easy - cheesy potato bites

Ingredients

2 cups leftover mashed potatoes
– 2 tbsp of flour
– 2/3 cup of shredded cheddar cheese
– 3 strips bacon (What can be used in place of bacon?Coconut, mushroom, and tempeh strips become smoky, breaded fried brinjal / aubergine strips)

 – 1/3 cup scallions ( spring onion), chopped
– 1 egg/ use maida add water to dip , then roll over breadcrumb and fry
– 1 ¼ – 1 ½ cups bread crumbs
– Oil for frying
– Salt and Pepper
– Sauce, chutney or any dip of your choice

Directions:

1. Take potatoes out of the fridge and let sit for a few minutes to take the chill off a bit. Meanwhile shred the cheese, chop scallions, and cook bacon then dice finely. Add potatoes and flour to a large mixing bowl and stir to combine well, then add cheese, bacon, and scallions. Take about a heaping tablespoon of mixture and roll with hands into a small ball. It if doesn’t hold its shape, add a little more flour to make the potatoes sturdy. Repeat until done.

2. Heat oil in a medium sauce pan – or use your fryer – over medium/medium high heat to about 350-375 degrees. Whisk egg into a small bowl and season with salt and pepper. Place bread crumbs in an additional bowl. Dip each ball in egg and then roll in bread crumbs until fully coated. Set aside on a sheet pan.

TIP: Alternatively Bake in the oven until golden brown at 350-375 degrees for a lower fat option

3. Test oil with one ball. The oil should bubble when potato is in oil and ball should take about 1-2 minutes to brown and cook through. (If takes longer the oil needs to be hotter, if it browned too quickly on the outside and the inside is still cold, the temperature needs to be lower.) Once oil is ready, add potato balls in small batches and fry for 1-2 minutes – it will depend on size. Remove with slotted spoon and place on paper lined plate to allow excess oil to drain off. Repeat until done.

4. Allow to cool for a minute or two and serve with dipping sauce, chutney.
