Suralichi Vadi

 What is Suralichi Vadi?

Also known as Surali Chi Vadi or Surali Vadi, this classic Maharashtrian recipe is made by cooking a smooth batter of gram flour and yoghurt until thick. The cooked mixture is then spread into a thin layer, cooled, cut into strips and carefully rolled into delicate spirals.

The finished rolls are topped with a fragrant tempering and garnished with grated coconut and chopped coriander, giving the dish its signature aroma and fresh taste.

Its biggest highlight is its soft, melt-in-the-mouth texture. The yoghurt lends a mild tang, while the tempering adds crunch and depth of flavour.

Ingredients

For the batter:

1 cup gram flour (besan)

1 cup plain yogurt

2 cups water

Salt to taste

A pinch of turmeric

1–2 finely chopped green chillies

1 tsp grated ginger

1 tsp lemon juice

Optional: A small amount of sugar for a sweet-tangy balance

For the tempering:

1 tsp oil

1/2 tsp mustard seeds

1/2 tsp cumin seeds

A pinch of asafoetida (hing)

A few curry leaves

1–2 slit green chillies

For garnish: Freshly grated coconut Chopped coriander leaves

How To Make Suralichi Vadi

Step 1: Prepare A Smooth Batter

Whisk together the gram flour, yogurt and water until completely smooth. Make sure there are no lumps, as they can affect the texture of the vadi. Stir in the salt, turmeric, ginger and green chillies.

Step 2: Cook The Mixture

Transfer the batter to a heavy-bottomed pan and cook over medium heat, stirring continuously. This prevents the mixture from sticking and helps it thicken evenly.

Once it reaches a spreadable consistency, remove it from the heat and quickly mix in the lemon juice. If you like a hint of sweetness, add a little sugar at this stage.

Step 3: Spread It Thin

Immediately pour the hot mixture onto a greased steel plate, marble slab or another smooth surface.

Using a spatula or the back of a spoon, spread it into a very thin, even layer. Work quickly, as the mixture begins to set as it cools.

Allow it to cool for a few minutes until firm.

Step 4: Roll The Vadi

Cut the set layer into long strips using a knife, then gently roll each strip into neat spirals.

Your Suralichi Vadi is now ready for the final touch.

Heat oil in a small pan and add mustard seeds and cumin seeds. Once they begin to crackle, add asafoetida, curry leaves and green chillies.

Kalan / Yam in coconut gravy

For Tempering:

First, wash and clean the yam and add turmeric, salt, and black pepper to it. Now add this to a pan and add just enough water to cover the yams (you may even add plantains if you like). Cover the pan with a lid and on a low flame allow the yam to cook until it is tender.
While the yams cook, make a coconut paste, by adding fresh coconut, green chilies, cumin and little water to a blender. Grind until you get a smooth paste.
Transfer the curd to a big bowl and whisk the curd to get a smooth consistency.
Once the yams are cooked make sure there is little or no water left in the pan. In the same pan, add the coconut paste and stir, then add the smooth curd and stir some more. If the gravy gets too thick to handle, add very little amount of water to it.
Take a tempering pan and heat some oil in it. Add the fenugreek seeds and allow them to darken slightly. Now add the mustard seeds. Once the seeds crackle, add the curry leaves and add the dry chillies as well.
Finally, add the coconut to the tempering and allow it to turn lightly golden.
Pour the tempering into the Kalan and mix very well.
Serve this Kalan with hot steamed rice and enjoy.

Malai Patishapta Pitha for Poila Boishakh

  

 Poila Boishakh ushers in the Bengali New Year with cultural rituals and celebratory meals shared with family, where beginning the year with something sweet is considered auspicious. Malai Patishapta Pitha, soft rice flour crêpes filled with a rich coconut mixture and finished with luscious malai, is a festive favourite that beautifully captures the indulgence and warmth of Bengali New Year celebrations.

Ingredients

1 liter milk

1 tsp cardamom pdr

2 cups palm jaggery

1 bowl grated coconut

50 gm khova/ mawa 

1 tsp cocoa powder

1 cup maida

2 tsp semolina/ suji

1/4  cup rice flour

A pinch of salt

1 tsp ghee 

1 tbsp oil

Method

In a vessel, boil milk. Once done, divide the milk into 2 equal portions.

Take half the milk in the same vessel, add cardamom powder and  roughly half of jaggery to it.

Boil it for another 10 minutes and the rabdi is ready.

Heat 1 tsp ghee in a pan and add grated coconut, cardamom powder and jaggery. Stir it constantly to prevent lumps.

After few minutes add khova and milk. Cook it for few more minutes.

When the mixture starts to leave the sides of the pan, switch off the flame. The stuffing is now ready.

Take a bowl, add maida, semolina, rice flour, salt & enough water to make a thin batter.

Take a bowl from this batter and add cocoa powder to make a design.

Now brush oil in a flat pan/ tawa and make some dots with coco batter. Fry it for 10 seconds.

Then pour white batter over it and cook it for another 30 seconds.

When it looks dry, put some coconut khova mixture in the center of the pitha, roll / fold it. Shallow fry  both sides.

Now take a serving bowl, put the pitha in it & pour the rabdi over it.

Serve it chilled.

Unniyappam for Vishu

  

Vishu marks the Malayali New Year, symbolising prosperity and hopeful beginnings, with festive foods prepared using seasonal ingredients. Unniyappam, soft golden fritters made with rice flour, ripe bananas, jaggery, and coconut, are cherished for their warm flavour and comforting sweetness during the celebrations.

Ingredients

For the Batter:

½ cup raw rice  soaked 3–4 hours

½ cup jaggery  melted and strained

1 ripe banana (nendran/Kerala variety)

3 tbsp fresh grated coconut

1 tsp black sesame seeds

½ tsp cardamom pdr

¼ tsp dry ginger pdr (chukku)

A pinch of baking soda

A pinch of salt

¼ cup coconut oil  for cooking OR Sundrop/ Groundnut oil

poaching pan/ appakarai you get in iron, brass/ non-stick too, with 5/7/9 holes or more in some.

Method

  1. Soak raw rice in water for 3–4 hrs. Drain before grinding.
  2. Melt jaggery in 3–4 tbsp water, stir until dissolved, strain. Cool slightly.
  3. Grind rice + banana to a smooth, thick batter with minimal water.
  4. Add jaggery syrup, coconut, sesame seeds, cardamom, chukku, baking soda, and salt. Mix well. Rest 30 mins.
  5. Heat unniyappam pan on medium. Add a few drops of coconut oil to each mould.
  6. Fill each mould ¾ full. Don’t overfill — they puff up.
  7. Cook until edges set and bottom is golden (~3–4 mins). Flip, cook other side 2–3 mins.
  8. Drain on paper. Serve warm — soft inside, crisp outside.

Avial / Vegetables in Coconut gravy

Wash and cut all vegetables. Slice green chilies, ginger and curry leaves lengthwise and cook along with the vegetables adding turmeric powder, salt and curry leaves with enough water till vegetables are tender.
Grind the coconut, jeera and green chilies into a coarse paste and add the mixture to the cooked vegetables and mix well. Heat it on a low flame for 2 - 3 minutes.
Add curd (lightly beaten) to this and mix. Remove from fire, garnish with coconut oil and curry leaves and close the lid.

Veppampoo Sadam

  

Ingredients

Cook rice and spread it out to cool. Each grain should be separate.

Dry roast chana dal, urad dal, dried red chilies and coconut in a pan on low heat until light golden and fragrant. Cool and coarsely grind without water. Set aside.
In the same pan, heat ghee on a low flame. Add dried neem flowers and fry gently until golden brown and crisp — about 1 minute. Do not burn. Remove and set aside.
Heat til oil in the pan. Add mustard seeds and let them splutter.
Add curry leaves and asafoetida. Fry 15 seconds.
Add the ground spice powder and stir for 30 seconds on low heat.
Add cooled rice and salt. Gently mix to coat every grain.
Add the fried neem flowers on top. Toss lightly and serve immediately.

Beet-coconut stir fry

 Ingredients

1 tbsp vegetable oil

3 small hot green chilies, slit lengthwise

1 tsp whole black mustard seeds

10 curry leaves finely chopped

4 medium beets, boiled and cubed (about 3 cups)

Kosher salt to taste

1/2 cup  fresh grated coconut 

Directions

 Heat oil over medium-high heat in a large saucepan until shimmering. Add chilies, mustard seed, and curry leaves. Stir vigorously until fragrant and the mustard starts to pop, about 3 minutes. Add the beetroot and stir until the beets are coated in spices. Add the coconut and stir until mixed through. Serve warm or cold with any Indian meal as a side or salad.

Coconut Barfi

 Ingredients and Prep

Fresh grated coconut 3 cups grind to a fine paste

Heat 3 tbsp ghee

Add the ground coconut, fry for a few minutes

Add sugar 1 ½ cups

Cook stirring well

once coconut has absorbed sugar, add

cardamom pdr ½ tsp

milk 3 tbsp

continue cooking for another 10-15 minutes on a medium flame

once it all comes together, spread on a grease tin/ plate level it

spread some chopped nuts on top, press it down

once it cools slightly for 10 minutes, cut the barfi

after it completely cools down, remove the cut pieces.
