Paneer Matar Makhana Curry

  

Ingredients

ghee / oil 4 tbsp divided

cashews 1/4 cup

roasted  makhana / lotus seeds

paneer/ cottage cheese 150 gm cut into small cubes 

green peas frozen 1/4 cup

onion 1 medium chopped

tomatoes chopped 2

ginger 1/2"

garlic 3 cloves 

green chili 1

jeera 1 tsp

water 1 1/4 cups divided

salt to taste 

kasturi methi 1 tbsp

fresh cream/ coconut cream 2 tbsp 

lime juice 1 tsp

coriander leaves 2 tbsp 

Dry Spices

 turmeric pdr 1/2 tsp

Kashmir red chili pdr 1 tsp

coriander pdr 1 tsp

 garam masala 1/2 tsp

Instructions In a kadai, heat 1 tablespoon of ghee or oil, add the cashews and roast them till golden brown. Transfer on to a plate and set aside. In the same pan add makhana and roast them on very low heat for 4-5 minutes until they are crisp, keep stirring them in between so that makhana doesn't burn. Once done transfer on to a plate and set it aside. Heat 2 tablespoons of oil in the same pan, add onion and saute till golden brown. Add ginger, garlic, green chili, tomato, and saute till the tomatoes are soft and mushy. Turn off the flame and allow it to cool slightly. Transfer the mixture into a blender jar with ¼ cup of water and blend to a smooth puree. Heat remaining 1 tablespoon ghee in the same pan, add cumin seeds let them sizzle. Add red chili powder, mix well and saute for a few seconds on medium-low flame. Adding Kashmiri red chili powder at this stage gives a nice color to the dish. Add the prepared onion tomato puree and mix well. Cover and cook for 3-4 minutes until the oil/ghee begins to separate from the mixture. Add turmeric powder, coriander powder, salt and mix well and saute for another minute. Add paneer (cottage cheese), roasted makhanas, roasted cashews, green peas, 1 cup of water, stir well and simmer the curry over low heat for 5 - 6 minutes. Last sprinkle garam masala powder, Kasturi methi (dried fenugreek leaves), and fresh cream and mix well. Turn off the gas. Garnish with coriander, squeeze some lime juice and serve hot with puris, rotis, jeera rice,bread toast. 

Notes

Roast the foxnut (makhana) till they are crisp before adding to the makhana sabzi.

dd roasted foxnuts just a few minutes before serving the curry. This prevents the roasted Phool makhanas from turning soggy.

Homemade Paneer works the best. If you have store brought paneer, then soak paneer in hot water for 15 minutes to keep them soft.

Adding Kasturi methi at the end gives a restaurant-style taste to this paneer dish.

I have added Kashmiri red chili powder to give nice red color to this dish. However, if you want to make it spicier add extra red chili powder.

Always add the cream at the end of cooking else it will curdle.

You can also add khoya/mawa along with cream to give a rich texture and taste to make the

You can also skip paneer and replace it with mushrooms or potatoes in this makhana ki sabji recipe.

Adding sugar or honey balances the flavors and so you can add ½ teaspoon of sugar or 1 teaspoon of honey in the end.

Drumstick Sweet corn curry

Drumstick Sweet corn curry from vismaifood.com 


Ingredients

For the Curry:

12-15 pieces drumsticks

sweet corn 1/3 cup

water 1 cup

For the Coconut Paste:

1/4 cup Fresh Grated Coconut
green chilies 5-6 or as per taste
garlic cloves 10-12 ( optional)

Tempering:
oil   2 tbsp
mustard seeds 1/2 tsp
chana dal 1 tsp
dry red chili 1
curry leaves 1-2 sprigs
onion chopped  1/2 cup
turmeric pdr 1/4 tsp
salt to taste
coconut milk 1 cup
fresh coriander leaves chopped 1-2 tbsp                                                                                                
Preparations 

In a pan, add water and drumstick pieces. Cover and cook until they are half done. Then, add sweet corn and cook both until soft. 

Drain the cooked drumsticks and corn. Use the strained water to prepare fresh coconut milk by grinding it with grated coconut.


Add chopped onions and sauté until they soften slightly. No need to brown them.

Add cooked drumsticks, sweet corn, ground coconut paste, turmeric, half of the chopped coriander leaves and mix well. Cover and let it simmer for 3–4 minutes. 

Pour the freshly extracted coconut milk (using the reserved veggie broth), stir gently, cover, and let the curry cook on low flame until it thickens slightly and everything comes together. 

Finally, add salt and garnish with freshly chopped coriander. Serve hot with steamed rice—every bite is pure bliss. 
 
In a blender, grind the fresh coconut, green chilies, and garlic into a fine paste.
 
Heat oil in a pan. Add mustard seeds, then chana dal, dry red chili, and curry leaves in order. Sauté until fragrant.

Aloo Jhol- Potato gravy without onion !

 

Potato curry in gravy a specialty of  U.P. and Bengal. This served with rice, roti/ puri.

Ingredients

green chilies 2-3 as per taste

ginger 2"

mustard oil 2-3 tbsp

cumin 1 tsp

fennel seeds 1/2 tsp

hing little

turmeric pdr 1 tsp 

red chili pdr 1 tsp

coriander pdr 2 tsp

tomatoes 2 

potatoes medium size 6-7

water 2 cups

salt to taste

sugar 1/4 tsp

ghee  1 tsp

coriander leaves finely chopped 1 tbsp

Preparations

Crush the ginger, chilies and some salt in a mortar and pestle and keep aside.

In a cooker, add mustard oil, heat until it smokes. Add cumin seeds, fennel seeds and roast until fragrant. Add asafoetida and the paste of ginger and green chilies, and reduce the heat.

Add turmeric powder, red chili powder, coriander powder and fry for a minute.

Add washed and chopped tomatoes and saute until fragrant. Add the peeled and cubed potatoes, and mix well. 

Add water, salt and sugar and mix well. Close the cooker lid and wait for 2 whistles. Remove from the stove and let it cool.

Open the lid of the cooker when cooled and mash the potatoes roughly with a masher, and boil without the lid for a minute.

Add ghee and garnish with coriander leaves and serve hot with steaming rice, roti/ puri.

Horse Gram/ Kollu Gravy

 INGREDIENTS

Horse gram lentil /Kollu - 1 cup (dried lentil)

Onion - 1 large (finely chopped)

Tomatoes - 3 large (finely chopped)

Green chilies - 3  or to taste finely chopped

Ginger - ½ inch piece grated/ finely chopped

Cumin seeds / jeera - 1 tsp

Asafetida / hing - ¼ tsp

Turmeric powder - ½ tsp

Red chili powder - 2 tsp or to taste

Dhania-Jeera powder / Coriander Cumin powder - 1 tsp

Garam masala - 1 tsp

Butter / oil - 2 tbsp

salt - to taste

Coriander leaves finely chopped -  2 tbsp

 

METHOD

Wash the horse gram lentil well and soak it overnight. The horse gram lentil takes longer to cook and hence it is important to soak it for about 8 hours.

Drain the soaking water and add fresh water to the lentils. Add enough water to immerse the lentils completely. Add salt needed for the lentils and cook it in pressure cooker for 5 to 6 whistles. The lentils would not be completely mush after they are cooked, but should be soft enough to easily smash them between your fingers.

Do not drain the cooking water as it has all the health benefits of the lentil. We will use it with the cooking water in the gravy.

 Washing the Horse Gram lentil 

In a pan, heat the butter / oil and add the cumin seeds. Let the seeds splutter and then add the chopped onions.

Saute the onions for 3 to 4 minutes until they are soft and translucent. Add the green chilies and grated ginger and fry for about 30 seconds.

Add the red chili powder, turmeric powder, dhania jeera powder, garam masala and just enough salt needed for the masala paste. We already cooked the lentil with salt and hence be very careful when you add the salt.Add half of the chopped coriander leaves when the gravy is boiling.

Mix well and then add the chopped tomatoes. Cook in medium heat until the tomatoes are cooked and mushy.

Add the cooked horse gram along with the water and mix well. Adjust the consistency by adding more water if needed. 

Let the Kollu gravy simmer for about 10 minutes for the flavors to combine. Garnish with coriander leaves and serve hot with roti or rice.

Ridge Gourd Curry Without Onion and Garlic

Ingredients

300 gm Peeled Turai (Ridge Gourd) Pieces

2 tbsp Oil

1 tsp Rai (Mustard Seeds)

½ tsp jeera (Cumin)

1 sprig Curry Leaves

¾ cup Coconut Milk

 Salt (To Taste)

For coconut paste 

¼ cup Fresh Coconut Pieces

1 tsp KhusKhus/ poppy seeds

1 tbsp Cashew

1-2 Green Chili

Cinnamon (Small Piece)

½ cup Coconut Milk

 

Instructions

Soak all the ingredients for the Coconut Paste for about 30 minutes.
 
Grind the soaked Coconut Paste ingredients into a very smooth, buttery paste.
 
Heat Oil. Put in Rai and jeera. When the seeds crackle, add the Curry Leaves.

Add the Ridge Gourd pieces and cover the vessel. Let it cook for 8- 10 minutes till the Turai turns soft.

Add the Coconut Milk and let the vegetable cook in the milk for a little while and the mixture becomes a thick paste.

Now add the Coconut Paste and ½ cup of water. Let it cook for 10 minutes on a small flame. Before taking the vessel from off the flame, add salt and a little chopped Coriander leaves.

 This curry goes well with Roti as well as Rice.

Malai Kofta

Ingredients

For kofta

100 grams paneer or 1 cup grated paneer

2 potatoes – medium to large – 200 grams, boiled, peeled and grated

¼ tsp red chili powder

2 tbsp cornflour (cornstarch) or tapioca starch

¼ tsp garam masala

3 tbsp almond flour or 2 tablespoons milk powder or 3 tablespoons khoya (mawa or dried evaporated milk solids)

salt as required

oil for deep frying, as required, any high smoke point neutral oil

 

For stuffing kofta – optional

10 to 12 cashews

1 tbsp raisins

 

For gravy

3 tbsp oil 

½ cup onion paste or about 2 medium to large onions or 1 heaped cup chopped onions

2 tsp ginger-garlic paste or 1 inch ginger, 4 to 5 garlic cloves crushed in a mortar

1 cup tomato puree or about 2 medium to large tomatoes

¼ tsp turmeric powder

¼ tsp fennel powder – optional

¼ tsp cumin powder

1 tsp Kashmiri red chili powder or ½ tsp cayenne or red chili powder

1 tsp coriander pdr

¼ tsp garam masala pdr

6 to 7 tbsp cashew paste – 12 to 15 cashews soaked in warm water for 30 minutes and blended to a smooth paste with 2 to 3 tbsp water

½ to 1 tsp sugar or as required

salt to taste

2 cups water or add as required

1 tsp dry fenugreek leaves (kasuri methi)

2 tbsp light cream or cooking cream or 1 tablespoon heavy or whipping cream – optional 

 

Whole spices

1 tej patta (Indian bay leaf)

1cinnamon

2 green cardamoms

2 single strands of mace or a light pinch of ground mace powder

2 cloves

 

For garnish

1 to 2 tbsp grated paneer (cottage cheese) – optional

1 or 2 tbsp light cream or whipping cream – optional

2 tbsp chopped coriander leaves (cilantro) or some mint leaves sprigs

Instructions 

Making paneer kofta Mix all the ingredients mentioned under “For making paneer kofta” ingredient list except oil in a bowl. Rinse with water if you prefer and finely chop 10 to 12 cashews and 1 tablespoon raisins. Set aside. This will be the sweet-tangy and crunchy stuffing for the kofta. Make medium sized balls from the kofta mixture. If it feels sticky, rub some oil on your palms before shaping the kofta. Flatten one kofta ball lightly with your palms on a chopping board or a rolling board. Place a small portion of the cashews and raisins stuffing on it. Gently bringing the edges together, shape into a neat ball. Rub some oil in your palms while shaping. Make sure that the stuffing remains in the center of the kofta. Fill and shape all the kofta in this manner. Cover with a lid and set aside at room temperature or refrigerate for 30 minutes.


Making kofta gravy Heat oil in a thick bottomed or heavy pan or skillet. Add all the whole spices and fry for a few seconds or until the spices crackle and the oil becomes fragrant. First add the onion paste. Stirring often sauté the onion paste until it becomes golden. To quicken the cooking of onions, add a few pinches of salt when you begin to sauté the paste. When the onion paste has become golden, add the ginger-garlic paste and sauté for about ten seconds or until the raw aroma of the ginger and garlic goes away. Add the tomato puree and sauté for 6 to 7 minutes on a low to medium-low heat. Add turmeric powder, coriander powder, fennel powder, kashmiri red chili powder, garam masala powder. Mix well and sauté for 4 to 5 minutes stirring often. Add cashew paste. Mix well and sauté until the oil starts to leave the side of the masala paste. This sautéing takes about 9 to 10 minutes on low to medium-low heat. You will see that the paste becomes lumpy and gathers around itself. It will also become slightly glossy with some oil releasing at the sides. Then add sugar and salt as per taste. Add water. Mix thoroughly with a spoon or wired whisk Simmer until the gravy begins to thicken. This takes about 8 to 10 minutes on a low to medium-low heat. The consistency of the gravy can be medium-thick to thick. When the gravy is cooked through, you will some oil specks on the top of the gravy. Lastly add the crushed dry fenugreek leaves (kasuri methi) and cream. Mix well and set the gravy aside. Check the taste and add more salt or sugar if needed.


Frying paneer kofta

Heat oil in a frying pan or a wok (kadai).

Before shaping and frying the entire batch, check a small tiny piece of the paneer kofta in hot oil. If it does not break, then you can easily fry the remaining koftas

If it does break, then add 1 to 2 tablespoons of cornflour (cornstarch) as a binder. Mix the binder in well, then shape into koftas.

The kofta should also come up swiftly yet gradually in the hot oil. This means the oil is hot enough for the kofta to be fried. If it browns too quickly, the oil is very hot and if the kofta remains at the bottom, the oil is warm. Carefully add the paneer kofta to the hot oil, being careful not to spatter the oil. The oil should be medium hot and have a temperature of 180 to 190 degrees Celsius (356 to 374 degrees Fahrenheit). When one side becomes golden, gently turn over with a slotted spoon and fry the second side. Fry turning over a couple of times until golden on both sides. Remove with a slotted spoon to a paper towel lined plate. Working in batches, fry all the paneer kofta this way and drain them on a paper napkin so that the extra oil is absorbed.


Serving malai kofta If serving immediately, add the fried paneer kofta to the gravy in the pan. Or if you want to serve it in a better way, take some of the gravy in a serving bowl. Place the kofta neatly on the gravy. Drizzle some cream or top with grated paneer. Garnish with chopped coriander leaves or mint leaves and serve. If serving a few hours later, reheat the gravy until hot. If it looks very thick, add a bit of hot water. Warm the kofta in an oven at 120 degrees Celsius or 250 degrees Fahrenheit for some minutes. Place kofta on the gravy. Add the garnishes and serve. Note that these paneer kofta are really soft. So if you add them to the gravy and serve them later, they will break. You have to serve them immediately as soon as you add them to the gravy. Serve malai kofta hot or warm with roti, naan, steamed basmati rice or jeera rice.
