Tomato jalapeƱo on French Bread Slices



Ingredients
oil  3 tbsp
onion  2 tbsp finely chopped
garlic  2 tsp finely chopped
tomatoes  4 medium ones, blanch, remove skin, cool and finely chopped
basil leaves  8-10
capsicum  2 tbsp
jalapeno chopped  1 tbsp
salt and red chilli pdr to taste
chilli flakes  1/2 tsp
vinegar  1 tsp
oregano  1/2 tsp
corn flour  1 tsp mixed with water
ketchup  3-4 tbsp
French bread as needed
cheese as required



Method
heat oil, add onion, garlic, fry till pink
add tomatoes, capsicum, jalapeno, salt,  red chilli pdr. , vinegar, chilli flakes, oregano
keep frying for 4-5 minutes
add the corn flour mixture, ketchup, mix well
remove once thick, add basil leaves chopped and red chilli and tomato sauces  1/2 -1 tsp each
heat a tava, spread some oil to toast the bread, put some sauce and cheese on it once well toasted, OR grill and serve hot

Tomato Corn Basil Muffins

Ingredients

maida/ all purpose flour  1 cup/  150 gm
baking pdr.  1/2 tsp
baking soda  1/2 tsp
salt to taste
plain soda as needed to make batter
boiled corn  2 tbsp
onion finely chopped  2 tbsp
capsicum finely chopped  2 tbsp
basil chopped  1 tbsp
oregano  1 tsp
chilli flakes  1 tsp
tomato ketchup  1 tbsp
tomatoes finely chopped  1/2 cup
cheese as needed

Method

in a bowl, first mix flour, baking soda, baking pdr. and salt well
add enough soda to make a batter like for cake
then add rest of the ingredients
in a muffin tray, line with paper cupcake, put batter till little more than half
sprinkle some grated cheese, olive oil
bake in a pre-heated oven at 180 deg. C for 10 minutes
serve hot

Pineapple fried rice

Ingredients

oil  1 tbsp
chilli-ginger chopped fine  1 tsp
pineapple finely sliced  1/2 cup
sugar  2 tsp
capsicum red and green chopped 2 tsp each
cooked rice  1 cup
spring onion chopped  1 bsp
curry powder  1/2 tbsp
chilli flakes  1/2 tsp
tomato chopped 1
coriander leaves finely chopped 1 tbsp
salt to taste

Method

in a pan, heat oil, add ginger-chillies chopped, saute for a minute
add pineapple and sugar, cook till pineapple is soft
add capsicum, spring onion, tomatoes, curry pdr., saute for 2-3 minutes on low flame stirring
add rice, salt, chilli flakes, coriander leaves, mix well
serve hot with plain curd and roasted papad

Baked Macaroni with Pineapple sauce

Ingredients

for sauce
butter  1 tbsp
maida/ flour  2 tbsp
milk  2 cups
pineapple puree  50 gm. roughly 1 cup
salt to taste
cream cheese  1 tbsp
1/2 tsp garlic
chilli flakes  1/2 tsp
pepper pdr.  1/2 tsp
processed cheese 1 cube grated

In a pan, melt butter, add flour, fry well, add milk slowly beating well, making sure that there are no lumps, add pineapple puree, salt, cream cheese, garlic, chilli flakes, pepper pdr., mix well, simmer, as it thickens, grate cheese, mix and remove

for macaroni
macaroni boiled  200 gm
oil  1 tsp
ginger  1/2 tsp
capsicum- all 3 colours chopped  100 gm
carrot  50 gm chopped
salt
pepper pdr.  1/2 tsp
pineapple chopped  100 gm

in a big pan/ kadai, heat oil, add ginger, fry, add capsicum and carrot, fry for 3 minutes, add seasoning, mix well, add pineapple, mix well, cook for 2 minutes
add macaroni, mix well, add to the prepared sauce, mix well

to bake
pour the macaroni in a lightly greased baking dish
spread roasted and crushed peanuts, bread crumbs and mozzarella cheese all over, keep some pieces of capsicum all around
bake in pre-heated oven at 200 deg. C for 10-15 minutes or till cheese melts and top is brown
serve hot

Mexican Sandwich

Ingredients

for 1st layer
oil 1 tbsp
capsicum chopped  1 tbsp
corn boiled  2-3 tbsp
chilli sauce  1 tsp
chilli flakes  1 tsp
tomatoes chopped  2 tbsp
ketchup  3 tbsp
baked beans  3 tbsp
mixed spice  1 tsp
salt and pepper pdr. to taste

heat a pan, add caspcium, tomatoes, corn, spices, cook well for 3 minutes, add ketchup, baked beans and rest of the ing. cook well mashing at the same time till dry

for 2nd layer
lettuce chopped  3 tbsp
coriander leaves chopped  2 tbsp
cucumber chopped  2 tbsp
spring onion green chopped  3 tbsp
potato 1 boiled and mashed
mayonnaise  3 tbsp
cheese spread  1 tbsp
salt and pepper pdr. to taste
mix all well and keep

on one big bread slice, spread the 1st layer evenly, then keep a slice on it, spread the 2nd layer evenly, cover with another slice, grill for 5-7 minutes, cut into triangles, serve hot with ketchup, or hot and sweet sauce

Indian style spicy , easy Tacos with potatoes

Ingredients
for filling
potatoes  2 big boiled, mashed warm
cheddar/ any cheese grated 3-4 tbsp
butter  2 tbsp
chilli flakes 1/2 tsp
green chillies chopped  1/2 tsp
salt little
spring onion chopped 3-4 tbsp
coriander leaves/ parsley chopped  2 tbsp
in a pan, add the warm potatoes, butter and rest of the ingredients, mix well, till cheese melts, remove and cool

Green sauce
green chillies 3-4 cut
coriander leaves chopped  3 tbsp
spring onion chopped  1
green capsicum chopped  1 tbsp
green tomato 1 chopped
vinegar 1 tsp   or lime juice  2 tsp
sugar  1 tsp
salt to taste
blend all smooth and keep aside

For tacos
wheat flr/ atta  50 gm
maida/ all purpose flr.  50 gm
semolina/ suji  1 tbsp
chilli flakes  1 tsp
black salt  1/4 tsp
salt little
coriander leaves chopped  3 tsp
oil  2 tsp
water to make dough
mix both the flours, semolina, seasonings, coriander leaves well, add water to make a stiff dough, last add oil, mix well, let it rest for 10 minutes covered
roll into  big puris, roughly 5" in diameter, poke them well over with a fork
lightly cook them in a tava till little brown spots appear, may be for roughly 1-2 minute on each side, remove
heat oil in a pan/ kadai, light fry, them on both sides, remove, at once put on tissue/ kitchen towel, put the rolling pin the centre of the fried puri, roll it into half, so you get the shape of a taco ! simpler than pressing in oil ! also oil gets absorbed in the paper
once tacos are ready, put some masalas( mix chilli pdr., black salt, cumin pdr.) while still hot in each, then put potato filling, spread green sauce on top, then spread grated cheese, you can add some red chilli sauce and serve at once,   OR
microwave for 30 seconds for cheese to melt and serve hot

Pizza puff !

Ingredients

for covering
maida/ all purpose flr.  1 cup
salt little
sugar  1 1/2 tsp
baking soda a pinch
butter  1/3 cup
milk for making dough

mix flour, baking soda, salt, sugar well, add butter, mix well, till it resembles crumbs, add milk little by little to make a soft dough, cover and keep aside for a couple of hours

for filling
oil  2 tsp
capsicum 1 chopped fine
corn boiled   1/2 cup
cheese grated  1/2 cup or more
onion l finely chopped
tomato 1 finely chopped
oregano  1 tsp
salt & chilli flakes to taste

in a pan, heat oil, add onion fry till pink, add tomatoes, corn, capsicum, fry for 2 minutes,  add salt, chilli flakes, oregano, mix well, remove, keep aside to cool

for assembling
roll dough into small rotis, spread some pizza sauce in each, put enough filling, top with grated cheese, fold into half to form a semi-circle, press the edges well
heat an oven to 200 deg. C, brush each puff with little butter on both sides, place on a greased plate, bake at 180 deg. for 10-12 minutes, if need be, turn over once. remove when golden on both sides.
cut into halves, serve hot.

couscous salad

Ingredients
dressing
lime juice  2 tsp
olive oil  3 tbsp
salt to taste
chilli flakes  1/4 tsp
in a bowl, stir well lime juice and oil, then add salt, chilli flakes, stir well, keep aside

paneer  25-30 gm
oil 1 tsp
chana/ chickpeas  boiled  1/2 cup
spring onion 3 chopped
salt to taste
chilli flakes to taste
couscous  cooked  1 cup

heat oil in a pan, add paneer stir well till golden, add salt,  chana, chilli flakes mix well, remove, add couscous mix well, add dressing and spring onion, serve.

PEANUT-PANEER CRUNCH WITH DIP

INGREDIENTS

maida/ all purpose flr.   1 cup
besan  1/2 cup
peanuts  1/2 cup
paneer  1/2 cup
salt to taste
chilli flakes  1 tsp
pepper pdr.  1 tsp
water to mix
oil for frying
saunf/ fennel seeds  1 tsp

in a bowl mix the flours, salt, chilli flakes, pepper pdr., saunf, take out half of the mixture in another bowl.
in one half add peanuts, wee bit of water, it will more like crumble mixture
heat oil, fry the peanuts in hot oil till crisp, drain well and keep aside
in another bowl, in the other half of the flour mixture, add crumbled paneer, mix well, add wee bit of water, fry these mixture dropping small amount in hot oil till crisp, drain well, keep aside

for dip
butter  1 tbsp
onion 2 tbsp  finely chopped
capsicum  1/2 cup finely chopped
pineapple pieces finely chopped  1/2 cup
green chilli finely chopped  1
pepper pdr.  1/2 tsp
mixed herbs  1/2 tsp
chilli flakes  1/2 tsp
pineapple juice  1/2 cup
ketchup  1/2 tsp
cornflour  1 tsp mixed with 2 tsp water
finely chopped coriander leaves
cream  1 tsp

heat butter in a pan, add onion, fry well, add capsicum, pineapple, green chilli,, herbs, chilli flakes, pepper pdr., fry well
add pineapple juice, ketchup, fry well, add cornflour mixture, once it thicken, add chopped coriander leaves, remove from gas, add cream

to serve, in a plate, serve peanuts, paneer crunch, Monaco biscuits and the dip in a bowl.

VEGETABLE WAFFLE/ PANCAKE

INGREDIENTS

all purpose flour/ maida   3/4 cup
cornflour   2 tbsp
baking pdr.  1 tsp
baking soda  1/2 tsp
chilli flakes  2 tsp
garlic pdr.  1 tsp
oregano  1 tsp
pepper pdr  1 tsp
salt to taste
butter  2 tbsp
 boiled, and mashed  corn  1/2 cup
spinach/ palak chopped  1/2 cup
cheese grated  2-3 tbsp or you can use paneer/ cottage cheese
water to make batter
salsa to serve
butter to grease


Mix all the above ingredients well( except the last 2) then add enough batter to make batter
grease a waffle tray, pour batter, cook till done
serve by sprinkling some cheese while hot, along with salsa

OR
those who don't have waffle tray to bake it
make like pancake on a heavy tava, serve hot with salsa

Onion Bread

Ingredients

butter  2 tbsp
onion  2 finely chopped
frozen bread dough, thawed  1 pound/ 400 gm
egg  1 beaten
salt to taste
poppy seeds/ kaskas  1/2 tsp
chilli flakes  1-2 tsp
Method
Preheat the oven to 350 deg F/ 180 deg. C.
 Coat a large rimmed baking sheet with cooking spray.
In a medium skillet, melt the butter and cook the onion over medium heat for 6 to 8 minutes, or until the onion is soft and lightly browned, add chilli flakes and salt to taste.
On a lightly floured surface, roll out the dough to a 10- x 15-inch rectangle.
 With your fingertips, gently spread the dough to cover the pan, and push it up to the edges of the pan, forming a rim. 
If the dough is too sticky, dust it and your hands lightly with flour.
Brush the dough with the beaten egg, then spread the cooked onion evenly over the top. 
Sprinkle with the poppy seeds and bake for 25 to 30 minutes, or until golden.
Remove to a cutting board; let cool slightly, then cut into pieces, serve warm.

Yoghurt-garlic-mint dip

Ingredients

yoghurt  4 cups
garlic cloves  4-6
salt & pepper pdr. to taste
chilli flakes  1 tsp or to taste
mint/ pudina leaves   1 tbsp finely chopped

METHOD
hang yoghurt in a muslin cloth/ sieve for about 4 hours
remove from sieve/ cloth, if the yoghurt is too thick, use little whey to moisten it
season with salt, pepper pdr. & chilli flakes
pound garlic to a fine paste, add garlic with finely chopped mint to yoghurt mixture, mix well
cover and refrigerate until serving.

you can serve this with chips, bread sticks, fried pakoras, with strips of capsicum, cucumber, carrot.

HEALTHY SOUP

INGREDIENTS

garlic chopped  1 tbsp
oil  1 tbsp
spring onion  3 tbsp
carrot chopped  1 tbsp
rajma/ kidney beans cooked  1/2 cup
salt to taste
oregano  1/2 tsp
chilli flakes   1/2 tsp
coriander leaves chopped  2-3 tbsp
sabudana/ sago soaked  2 tbsp
potato  1 small
water 2 glasses or as needed
bay leaf 1+ lemon grass few+ red chilli 1 tie together and add to boiling soup, remove later
lime juice  2 tsp

METHOD

in a pressure cooker, add oil, garlic, fry, add spring onion carrot, rajma, salt, oregano, chilli flakes, coriander leaves, sago, potato chopped and 2 glasses of water, pressure cook for 1-2 whistles.
once cool, remove the bay leaf etc tied, puree the mixture, bring to a boil, remove add lime juice, mix well,  serve hot if desired with little cream on top with some toasted bread slices, as it is a very filling soup to make a complete meal.

Or, those who like chunky pieces in their soup, it can served without being pureed, as then it will be more filling with toasted bread slices.

CHEESE-OLIVES CUTLETS

INGREDIENTS

capsicum  2-3 tbsp finely chopped ( you can use all 3 colours or just green )
cabbage finely chopped   2 tbsp
garlic finely chopped   1.2 tsp ( optional)
oregano  crushed   1/4 tsp
green chillies finely chopped  1 tsp or to taste
olives chopped  2 tbsp
besan/ chickpea flour  1/2 tsp
chilli flakes  1/4 tsp
salt to taste
coriander leaves finely chopped  2 tsp
rice bran oil  2 tsp
processed cheese grated   3-4 tbsp
bread crumbs   3-4 tbsp
oil for shallow frying
basil/ coriander to garnish

METHOD

mix all the ingredients till breadcrumbs well, make small round cutlets
shallow fry till brown on both sides
serve hot with ketchup/ chutney

HEALTHY CHICKPEAS SALAD

INGREDIENTS

for dressing
curd   1 cup
vinegar  1 tsp
salt to taste
oregano  1/2 tsp
chilli flakes  1 tsp
pepper pdr.  1/2 tsp

mix all the ingredients well for dressing

for salad

cooked chickpeas/ kabuli chana  1 cup
capsicum cut into small pieces   2 tbsp
onion chopped   2-3 tbsp
tomatoes chopped  2
salt to taste
chopped coriander leaves  2 tsp
mix all the ingredients well in a bowl, add the dressing, toss well to mix, garnish with basil/ coriander leaves and serve.
this is a very healthy, filling salad, with lots of nutrients, fibre.

BAKED VEGETABLES AND BREAD

INGREDIENTS

oil  2 tbsp
garlic  1 tsp finely chopped
ginger  1 tsp finely chopped
chilli pdr.  1 tsp
boiled mixed vegetables ( peas, carrot, beans, cauliflower, potatoes)    1 bowl
onion  1 finely chopped
tomato puree   2 tbsp
salt to taste
bread slices as needed to place in a baked dish
cheese grated as needed
butter as needed

METHOD

heat oil, add garlic and ginger, fry for a minute, add onion fr till light brown
add boiled vegetables, chilli pdr., tomato puree, salt to taste, mix well, let it boil for 2-3 minutes
in a greased bowl, place buttered slices to cover the bottom fully, for which, you can cut bread into desired shapes to fill it
spread the vegetable mixture evenly on top
spread grated cheese and chilli flakes over it
either you can bake in the oven at 180 deg. C till cheese melts or bake in microwave for 2-3 minutes till cheese melts
serve hot
ps- you can earlier boil vegetables, prepare vegetables
just before serving toast bread slices, butter them, place them in the dish, pour the vegetables over it and bake

RAVIOLI THE DESI STYLE !

INGREDIENTS

tuvar/ arhar dal, moong dal together   1 cup, pressure cook till soft, then mash well

for ravioli
dough with wheat flour, ragi mixed in 3: 1
add little salt, make soft dough using water and wee bit of oil

for stuffing
paneer  100 gm
grated cheese   2 tbsp
salt little as cheese has salt
chilli flakes  to taste
mix all well
make small puris with the dough, put enough stuffing in the centre, gather from corners, to shape like samosa or you can simply fold into semi-circle

add the ravioli to boiling soup, which is seasoned with oregano 1 tsp, salt, chilli flakes, basil crushed
let it boil for 7-10 minutes
for tempering
heat oil and butter together 3 tsp
add chilli flakes
finely cut capsicum   2 tbsp
corn  2 tbsp
kidney beans/ rajma cooked 2 tbsp
salt, mix all well
add to boiling mixture, stir gently, so that you don't break the raviolis, boil for 5 minutes
serve hot, garnish with some basil leaves

MEXICAN SALAD

INGREDIENTS

corn  1/2 cup
garlic finely chopped   1/2 tsp
spring onion  1/2 cup
capsicum  1/4 each ( red, green, yellow)
oregano   1 tsp
chilli flakes  1 tsp
pepper pdr  1 tsp
salt to taste
oil  3 tsp
parmesan cheese grated   1/4 cup
corn chips to serve

METHOD
in a pan, heat oil, add corn, fry till corns get little brown spots, add garlic, fry well
add the capsicums, spring onion, chilli flakes, pepper pdr. fry well adding salt(veges should be crisp)
add cheese, mix well, remove
spread on  plate, serve with corn chips

TANGY LADY FINGERS

Ingredients:
250 gms bhindi (lady's-finger), chopped in 1/2" pieces breadth-wise
1 cup finely chopped onions 
2 finely chopped green chillies
2-3 tsp oil
1 tsp saunf seeds/fennel seeds 
1/2 tsp dhania powder /coriander powder 
1/2 tsp channa masala powder
1/2 tsp oregano and chilli flakes
Salt and lime juice to taste
Method 
Pour the oil into a pan and when hot, add the saunf, green chillies and onion, sprinkle wee bit of salt for onions to fry well.
Fry till onions are tender.
Add the chopped lady's-finger and the dhaniachanna masala and cover to cook for 10 minutes on a low flame
Once the lady's-finger is tender, turn off the heat and add salt, oregano, chilli flakes and lime juice.
