Cashew-choco balls- NO cook/ or bake !Real quick



 I wanted to give to the kitchen staff, who slog for us 365 days of the year, on New Year morning, I give them some sweets made by me or chocolate packet. Today I decided to make the quick, no-cook/ bake balls.

 

Ingredients

sugar 1 cup

cashews 1/3 cup - more or less

powder both these in the mixer jar to a fine powder along with 2 tsp of cocoa pdr. 

put this powder in a big bowl

desiccated coconut 1 cup

milk pdr 1 cup 

I powdered both coconut and milk pdr along with another 2 tsp of cocoa pdr

added all the powders together, mix well

I'ld not make balls, I added 4-5 tbsp of ghee, mixing after each tbsp of ghee, till I'ld roll it. I made small balls, as it is easier to pop into your mouth. Normally when some ladoos are made big, some people try to break with hand, then small particles of the balls fall down. To prevent the mess, I started making  small balls.

Some balls to distribute among my friends here, especially to elders to get their blessings on the New Year day.

Oats nuts and seeds dessert, no sugar !

 INGREDIENTS AND PREPARATIONS

 oats 1 cup powdered

raisins 2 tbsp

nuts 40 gm chopped

sesame seeds 1 tbsp

baking pdr 1 tsp

banana 1 cut into pieces + curd ( not sour)100 gm blend these 2 together well

in a bowl add all the dry ingredients well, add the banana mixture mix well

wet your hands, make small balls of the mixture

place on a butter paper on the baking tray

bake in a pre-heated oven @ 180 C for 20-25 minutes till done.

Healthy dessert, without sugar !

DATES-NUTS-CHOCOLATE BALLS

INGREDIENTS

dates deseeded and mashed   1 cup
walnuts chopped   50 gm
almonds  chopped 50 gm
cashew nuts chopped 50 gm
ghee  2 tsp
melted chocolate
coconut powder

METHOD

heat ghee in a pan, add nuts, roast, then add dates, mix well
take off from gas, cool
make small balls, roll on coconut powder
then coat in melted chocolate, keep in fridge for 15-30 minutes to harden
it is ready to be eaten/ stored

SEMOLINA SWEET BALLS/ RAVA LADOOS

INGREDIENTS

fine semolina  2 cups
sugar   2 cups or less
raisins   2 tbsp
chopped cashew nuts   2 tbsp
cardamom pdr.   1/2 tsp
ghee  3 tbsp
water   1cup

METHOD

fry raisins and cashews, drain and keep aide
in the same ghee, fry semolina/ rava well till it gives a nice aroma, remove
put sugar with a cup of water to boil in a pan, till it becomes a sticky syrup
add fried raisins, cashews, semolina, mix well adding cardamom pdr.
once slightly cool to handle by hand, make small balls, cool well, store in airtight container.

Peanut Butter Balls

Ingredients
2 cups peanut butter
1 scoop chocolate or vanilla protein powder
3/4 cup raw oatmeal
1 cup crisp rice cereal
1/4 cup honey

Method
Microwave the peanut butter on low for about 30 seconds until slightly melted (not runny though).
Stir in the honey and protein powder.
Once mixed, add in raw oats and crisp rice cereal.
Form into balls and then place in the fridge to harden overnight.
Note that if you prefer harder/softer peanut butter balls, you can adjust the volumes of the ingredients until your desired texture is reached.

NO COOK CHOCOLATE SANDESH- CHOCOLATE COTTAGE CHEESE BALLS

INGREDIENTS

cottage cheese/ paneer crumbled well   1/2 cup
mawa/ khoya/ thickened milk   1 cup, crumbled well
icing sugar  1/2 cup ot according to taste
cocoa pdr.  3 tsp cook in little water till thick
milk  2-3 tbsp

METHOD

mix well with your hand, cottage cheese, mawa, icing sugar well
add cocoa pdr., mix well, if need be add little milk so that you're able to bring all together like a smooth dough
make small balls, flatten, put a piece of nut on top serve.
this should be kept in fridge, may last 2-3 days, depending on how many sweet tooths are there around !

poppy seeds/ kaskas balls

INGREDIENTS

ghee/ clarified butter   3 tbsp
poppy seeds 50 gms, soaked in milk, keep it out for 2 hours, then keep it in fridge overnight, crush
milk  3-4 tbsp
mawa/ thickened milk  1/2 cup
sugar  4 tbsp
dates crushed   3 tbsp more if you want to avoid sugar
cardamom pdr.   1/2 tsp
nutmeg pdr.  1/4 tsp freshly grated
nuts to garnish
coconut pdr. to garnish

METHOD

heat ghee, add crushed poppy seeds, fry well for 5-7 minutes
add milk, cook well, along with mawa crumbled, fry till dry
add sugar/ dates only if you prefer, cook well, till it comes together & thickens
remember, you've to keep stirring well & continuously or it will stick to the bottom
add cardamom pdr., nutmeg pdr.
remove cool
add nuts, if you prefer, you may add some coconut pdr. also
make small balls, roll in coconut pdr, mixed with sweetened cocoa pdr.
keep a piece of cashew nut/ almond on top to serve

OATS ENERGY BALLS

Ingredients
instant cooking oats   2 cups

grated coconut   3/4 cup

condensed milk  2 tbsp
Method
To start with, place the oats into a medium sized pan on medium heat. Roast the oats until it starts to turn lightly brown, ensuring that they do not darken too much. When you see that it is lightly browned, turn off the heat transfer to another bowl and allow the oats to cool down.

Once cooled, add in the grated coconut and the condensed milk and stir to combine well. Make sure that the consistency of the mixture should not be too thin or too thick, and this can be adjusted by the amount of
 condensed milk. The resulting mixture should be such that it can be shaped into a ball.
Grease your hands with a little butter. Divide and shape the mixture into small bite size balls. Finally, refrigerate them for until firm. These little oat energy bites can be eaten at once or can  be stored in a tight container and refrigerated.
