Egg-less Mango Cake


 I made this egg-less Mango cake in microwave in 3 minutes 30 seconds. I had about 1/4 cup mashed banana, I chopped 1 mango in small pieces, added both to milk about 200 ml, along with 2-3 tbsp of sugar, 1 tsp of baking pdr, 1/2 tsp of baking soda, a pinch of salt, maida as needed, soaked raisins in warm water with 1/4 tsp of baking soda to remove toxins, washed it well twice, drained and added it to the batter, along with 1 tbsp of sunflower seeds. I add 2 tbsp of coconut oil. The batter was of pouring consistency, greased 2 microwave safe plates, spread them, baked each for 3 1/2 minutes. It was super soft and yummy. I added almond essence little.

Delicious Microwave Potato Chips

 Hands up if you buy your potato chips from the store! I know I did, but I don't anymore. Not now that I know how easy it is to make the crispiest chips using my microwave and only two minutes of preparation. The wonderful thing about this simple base recipe is that once you know it, you can add any flavors you wish. I'm quite partial to using dried thyme, paprika, and even Worcestershire sauce. But everyone has their own favorite flavors, right?

What You Need  

• A potato 

• Salt 

• Pepper 

• A potato/vegetable peeler 

• A long thin wooden stick 

• Olive oil 

• A microwaveable bowl 

• A microwave 

• Kitchen roll

Directions  

1. Using the peeler, slice the potato into chip sized slices, making sure they are thin enough to become crispy. 

2. Now fill the bowl with water and give the slices a good wash. 

3. Remove the water and dry the slices of potato, placing them on sheets of kitchen roll. 

4. Put the potato slices in the now dry bowl and sprinkle them with olive oil. Then give them a good mix. 

5. Now put your potato slices onto the stick, like a kebab. 

6. Rest the points of the stick onto the sides of the bowl, and season the potato slices with salt and pepper. 

7. Then put them in the microwave while still resting on the bowl. You should cook them for 4 to 8 minutes. 

8. Take them out and check that they are crispy. Give them a minute to air away any moisture. Then place them in a bowl for serving.

3 Easy Ways to Soften Hard Brown Sugar

In order to understand how to soften brown sugar, we must first figure out why it goes hard, to begin with. Brown sugar is made up of two ingredients: granulated sugar and molasses. As the natural moisture of the molasses evaporates, brown sugar hardens into a solid block. Improper storage speeds up the hardening process even more, which is why you should always store brown sugar in an airtight container in a dry place like the pantry.

How to Soften Brown Sugar  

In order to soften up your brick of brown sugar, you’ll need to rehydrate the sugar. Here are 3 tried and true methods that will accomplish that goal. 

1. Soften brown sugar with a slice of apple or bread

This may not be the fastest way to soften up brown sugar, but it’s certainly an effortless one. All you have to do is to put a slice of either a fresh apple or bread in a closed container with brown sugar. Wait for about a day, and the sugar will absorb just enough moisture to become soft again. Needless to say, discard the bread or apple slice once the sugar reaches your desired consistency.

2. Bake the sugar in the oven 

The oven method is much faster, but it takes a bit more work. You can use high temperatures to rehydrate the sugar. Preheat the oven to 250°F (120°C). Spread the hardened sugar on a baking sheet or oven-safe container and let the sugar warm up in the oven. Check every 2-3 minutes by carefully piercing the sugar clumps with a fork. When it’s soft and crumbly again, carefully take it out of the oven and let it cool completely. 

3. Try the microwave method 

This last trick may be the fastest way to soften brown sugar yet! All you need is a microwave, a damp paper towel, and a microwave-safe container. This method combines heat and high moisture, so it’s extra effective too. Just place the clumpy sugar into the container, cover it with the paper towel, and heat it up for 20 seconds. 

Then carefully remove the towel (it will be hot) and see if you can squish the sugar with a fork. If not, repeat for another 20 seconds until the sugar becomes completely soft. Don’t keep it in the microwave for too long, or else the sugar can melt. Once you’ve reached the desired consistency, let the sugar cool down and use it in your recipe.

Poach an egg

Quickly make perfect poached eggs with this method. Boil water in the kettle and pour it into a microwave-safe bowl. Add a dash of white vinegar and an egg into the bowl. Lightly pierce the yolk with a toothpick and then cover the bowl with cling wrap. Microwave this on full power for 30 seconds. Remove the bowl and gently turn the egg over. Cook for another 20 seconds on full power.

Roasted Potatoes In Minutes by Nauheed Cyrusi

 Nauheed starts by cutting the potatoes into smaller pieces and washes them well/ She then puts them in a bowl and places them in the microwave for two and a half minutes. This also works as an easy hack for boiling potatoes if you do not want to use a pressure cooker.

 The next step is to add some ghee to a grille and saute the potatoes on a light flame. She then seasons them with a little bit of salt and black pepper. Voila! Your ghee-roasted potatoes are ready to devour.

Lemon cake in microwave - 5 minutes !

Ingredients and Preparations

 eggs 2 

sugar 4 tbsp 

whisk both well 

oil 4 tbsp

milk 4 tbsp

juice of 1 lemon

mix all well 

flour 8 tbsp

baking pdr 1/2 tsp

mix well 

pour into a greased microwave safe dish and microwave for 5 minutes 

topping 3-4 tbsp condensed milk, mix with 1 lemon juice well

spread over the cake, top with lemon zest, cut and serve

5 Minute Besan Ladoo in Microwave

 I thought of trying besan ladoo, my daughter's favourite for the 1st time in microwave.  Also, I wanted it for prasad, being Navaratri festival now.

Ingredients

ghee 1 tbsp

besan 1 cup

jaggery pdr 1/4 cup or so

cashew nuts 1 tbsp 

cardamom pdr 1/4 tsp 

 

Method

In a microwave safe pan, I added ghee which was melted, added besan and chopped cashew nuts , mixed it very well, avoiding any lumps.

Microwave high for 1 1/2 minutes 90 seconds

Removed, mixed it well

Kept for a minute in high power

Removed mixed well

Kept for another 30 seconds

Repeated the process once more

As I got a nice roasted aroma, I added the little jaggery powder and cardamom pdr ,mixed it all well, soon after taking it off the microwave. I thought the jaggery may melt, NO, it was perfect to mix it well.

Still quite warm made some mini ladoos, as it easy to pop one to your mouth, as bigger means people try breaking and make the crumbs fall all over, which I never liked.


At the right time, my physio came, she loves sweets, she took one, then was trying to find the cause of my foot pain. Then I offered her more, then gave her 4 more to take home to her hubby and MIL. I ate one. So, in all, I got 16 ladoos , not bad.

Strawberry vanilla mugcake with buttercream glaze

 6 Delicious Mug Cake Recipes 

This mouthwatering mug cake uses fresh, healthy strawberries to create a scrumptious dessert quickly and easily. It is sure to make your mouth water! 
 
Ingredients: 
• 1 tbsp of soft butter 
• 1 large egg 
• 1/2 tsp of vanilla extract (use a whole teaspoon if you are a big vanilla fan) 
• 2 tbsp of granulated sugar 
• 1/4 cup of all-purpose flour 
• 1 tsp of baking powder 
• 1/2 tsp of cinnamon 
• 2 to 3 tbsp of diced strawberries, either halved or quartered Ingredients for buttercream glaze: 
• 1 tbsp of melted butter 
• 1/4 cup of powdered sugar 
• 1/4 tsp of vanilla extract (or 1/2 teaspoon if you are a big vanilla fan) 
• 1-2 tbsp of cream


Preparations

Prepare the buttercream by combining all the ingredients (with the exception of the cream) in a small bowl. 
 
Whisk thoroughly, while adding the cream until you achieve the desired consistency. Set the glaze aside. 
 
Gently spray a large mug with cooking spray. Combine all ingredients except the strawberries and whisk together until smooth (you may find it easier to do this in a bowl, and add to the batter to the mug afterwards). 
 
Gently fold the strawberries into the mixture.  
 
Microwave on a medium heat for 75 seconds. Check if cooked. Microwave for another 10-15 seconds if it needs longer. Be aware that the cake will double in height so you need to ensure you have plenty of room in the mug. 
 
Add the glaze to the mug so it permeates the mixture. Either eat directly from the mug or remove onto a small plate.

Mug Cinnamon Roll

 Microwave Cinnamon RollCinnamon rolls usually take a long time to make, and it's not so easy to make the perfect cinnamon buns either. Shorten the wait for cinnamon goodness with this 3-minute recipe.

Ingredients for icing: 
Cream cheese - 1 tbsp. 
Powdered sugar - 2 tbsp.
Milk - 1 tsp.


Ingredients for roll:  
Applesauce - 2  tbsp
Vegetable oil - 1 tbsp. 
Buttermilk - 1 tbsp. 
Vanilla Extract - 1/4 tsp. 
All-Purpose flour - 1/4 cup plus 1 tbsp. 
Light brown sugar - 2 1/2 tbsp.
Cinnamon pdr - 3/4 tsp.
Nutmeg - a pinch (optional) 
Baking powder - 1/4 tsp. 
Salt - a pinch 

Method of preparing the icing:  
Combine all ingredients gradually in the order listed. Set aside.
 
Method of preparing the roll:  
Combine all the ingredients, and whisk with a fork, until it is smooth. 
Microwave for 1 minute on high. 
Add an additional 15 seconds if it is not fully baked. 
Serve warm and top with the icing, some extra cinnamon and nutmeg.

Chocolate Fudge S’mores Cake

 Chocolate Fudge S’mores Cake  

 Ingredients

Unsalted butter - 3 1/2 tbsp. (melted) 
Milk chocolate chips - 1 1/2 oz / 45 ml
Graham cracker crumbs - 2-3 tbsp. (crumbs)
Egg - 1 
Sugar - 2 tbsp. 
Vanilla Extract - 1/2 tsp. 
All-Purpose flour - 1/4 cup 
Baking powder - 1/8 tsp. 
Salt - a pinch 
Cocoa powder - 2 tbsp. 
Marshmallows - for topping (or marshmallow cream) 

Method of preparing the Cake: 
 
In a small bowl combine 3 tbsp butter and 1 oz of chocolate. 
 
Melt this in the microwave for 30 seconds and set it aside. 
 
In a separate bowl combine the remaining 1/2 tbsp butter with graham cracker crumbs, stirring until the mixture is moistened. 
 
Press this into the bottom of your mug. 
 
In another bowl whisk the egg, sugar, and vanilla until smooth. 
 
Pour in the flour, baking powder, salt, and cocoa, stirring until you have a thicker batter. 
 
Combine the melted butter and chocolate from step 1. 
 
Add the remaining 1/2 oz chocolate chips. 
 
Pour half the mixture over the graham cracker crust and add a few marshmallows. 
 
Pour the remaining batter over. 
 
Microwave for 1 and half minutes.     
 
Top with additional marshmallows and graham cracker crumbs.
