Healthy Beetroot idlis

Ingredients-

    1 cup light roast semolina

    1 cup curd

    to taste salt

    1/2 cup beetroot puree

    1/2 inch ginger

    3 green chilies

    1 tbsp cashew nuts

    1 tsp urad dal

    5-6 curry leaves

    1 tsp Eno fruit salt

Method-

1. First, chop the beets and place them in a jar. Add the ginger and green chilies, combine with a little water, and puree until smooth.

2. Combine semolina, curd, salt, and beetroot puree in a bowl. Then, add a little water to make a batter. Set it aside for a while.

3. Right away, heat some oil in a tempering pan. Add the curry leaves, urad dal, finely chopped onions, and mustard seeds to the tempering to make it.

4. Stir the batter after adding this tempering.

5. Prepare the idli maker and add the eno fruit salt to it.

6. Steam the batter for 10 minutes in each of the moulds. The beetroot idlis are prepared.

Moong dal idli

Ingredients

urad dal split 1/3 cup
moong dal   1/3 cup
ginger  1 " chop
green chilies 2 or as per taste
turmeric pdr.  1/2 tsp
salt to taste
hing little

Method
wash and soak dals separately.
grind urad dal to a smooth paste adding water, remove in a bowl
grind moong dal with ginger and chilies adding water to a smooth paste
mix both the dal paste, let it ferment overnight or at least for 6 hours
add salt, turmeric and hing, mix well
grease idli plates, keep in hot idli maker/ cooker, steam for 10 minutes
remove, serve hot with chutney of your choice.

ps- It is a very healthy, protein rich snack, easily digestible, as it is steamed, vitamins are enhanced as it is fermented. Ginger aids in digestion, turmeric has antioxidant and many more benefits. It can be eaten as a snack at any time.

Curry leaves- green chilies thattai- flat round discs !

 dough ready to be rolled out
 rolled out, ready to fry
 fried and ready to eat !
roll into small balls, then roll out into thin puris to fry

INGREDIENTS
maida  4 tbsp
suji/ rava  4 tbsp
rice flour 4 tbsp
curry leaves 15 sprigs
green chilies  4-5
jeera 1 tsp
pottukadalai  ( fried dal) 2 tbsp
salt to taste
ghee 2 tbsp
oil for frying
hing little
ajwain / carom seeds 1 tsp

METHOD
in a mixer jar, use small one, add curry leaves, chilies, grind without adding water, add pottukadalai, powder again to a smooth one
In a big bowl, add maida, rava, rice flour, add ghee, mix well
add the ground mixture, salt, ajwain, salt mix well
add water enough to make a soft dough like for roti
make small balls, dust with flour - maida/ atta/ rice flour, roll into thin puri
heat oil, once hot, on medium flame, fry till brown on both sides, drain on kitchen towels, cool and store. 
Earlier, I used to make small balls, then in small aluminum foil, flatten it with fingers, then tried to roll in with a rolling pin, like we do for roti / puri, it was easier.

ps- you may omit curry leaves, just powder pottukadalai with red chilies or peppercorns and add to the flours and proceed in the same way. Since I normally used to do like that, wanted to try a different taste. It is healthier, as curry leaves are rich in Vitamin E, green chilies are rich in Vitamin C !

Moong sprouts-onion pakora

INGREDIENTS
moong sprouts  1/2 cup
onion 1 big finely chopped
green chilies finely chopped to taste OR can use chili pdr. to taste
turmeric pdr. 1/4 tsp
hing little
ajwain / carom seeds 1 tsp
besan 1/2-3/4 cup
rice flour 1/2 cup
salt to taste
curry leaves finely chopped 2 tsp
oil for frying
water to make batter

METHOD
mix together sprouts, onion, curry leaves, hing, green chilies, turmeric pdr., ajwain well.
add besan and rice flour, mix well along with salt
add water little by little to make thick batter as for pakoras
heat oil, make small pakoras, deep fry in medium hot oil till brown 
drain in kitchen towel, serve hot with chutney/ ketchup

NOTE
this is healthy, as sprouts are rich in vitamin b complex, curry leaves as Vitamin E, green chilies are rich in Vitamin C, besan and sprouts gives protein, carbs from rice flour. Ajwain and hing helps in digestion.
I made this, as I had some sprouts, with which I made cutlets, then used the remaining to make pakoras for tea time !

RICE VEGETABLE PANCAKE

INGREDIENTS
rice flour  1/2 cup
curd  1/4 cup
cucumber grated 2
spinach finely chopped 1 cup
spring onion finely chopped 1
coriander leaves finely chopped 2 tbsp
turmeric pdr. 1/2 tsp
water as needed
salt to taste
green chilies finely chopped to taste
oil or butter to cook

METHOD
grate cucumber, add salt, keep aside for 10 minutes, squeeze it well
add rice flour, curd mix well
add rest of the ingredients except butter/ oil, mix well, adding water to make thin batter
rest the batter for 10-15 minutes
heat a non-stick/ heavy tawa smear oil/ butter, make small pancakes, turn once bottom is done, spread some fat, cook till nice and crisp on both sides.
serve hot with salad of your choice and pickle
the squeezed out cucumber water can be added to salad or you can simply drink it !

Stuffed Peppers



 INGREDIENTS
big round chilies 12-14
cheddar cheese grated  1/2 cup
processed cheese grated  1/2 cup
salt little
chaat masala 2 tsp
chili pdr. little if desired
coriander leaves 2 tbsp
for batter
besan  1/2 cup
salt 1/2 tsp
chili pdr. little
baking soda a pinch
oil 1 tsp
hing little
water to make thick batter
oil for frying

METHOD
slit chilies, carefully remove all the seeds
in a bowl mix cheese, coriander leaves, salt, chili pdr. well
stuff in chilies well
dip in batter, so it coats well, deep fry in hot oil till brown, drain well, serve hot with sweet chutney or ketchup
