Milk Biscuit Gulab Jamun

 Ingredients

Method :

First, we prepare the sugar syrup, in a kadhai, add the sugar and an equal quantity of water and let it melt on low flame.
Add the green cardamoms and keep stirring till a uniform slightly thick sugar syrup is ready. Remove from the flame and let it cool.
Now add the biscuits into a blending jar and make a fine powder. Transfer it into a mixing bowl, add the maida, and use a few spoons of milk to prepare a soft dough. Let it rest for a few minutes.
Divide the dough into equal quantities, and using greased palms, roll them into smooth round balls, taking care to avoid cracks in them.
Now heat some oil or ghee in a kadhai, and on low flame fry these gulab jamun balls until golden brown.
Once fried and cooled, add them to the sugar syrup.
Biscuit jamuns are ready to be relished.

Instant No Cook Malai Ladoo

 Ingredients

  • 1/4 cup (50 gm) Malai / cream
  • 1 cup (122 gm) Fresh Paneer crumbled or grated
  • 1/2 cup (100 gm) Sweetened Condensed Milk
  • 1/2 cup (91 gm) Milk Powder
  • 1/2 tsp Cardamom Powder
  • Kesar strands or chopped nuts for garnishing
  •  

InstructionsIn a blender, combine the malai,condensed milk, paneer, milk powder, and cardamom powder. Blend on high speed until the mixture is smooth and well combined. Pour the blended mixture into a large mixing bowl, scraping down the sides of the blender with a spatula to ensure all ingredients are included. Cover the bowl with plastic wrap or a lid and refrigerate for approximately 15-20 minutes. This chilling step will help the mixture firm up, making it easier to shape. After chilling, remove the bowl from the refrigerator. Grease your hands with ghee, take small portions of the mixture and roll them into round ladoos. Arrange the shaped ladoos on a serving platter. Optionally, garnish each ladoo with saffron strands or your choice of chopped nuts for added flavor and presentation. Serve the No Cook Malai Ladoo immediately or store them in an airtight container in the refrigerator for up to 5 days. Enjoy this delightful treat at festivals or whenever you're craving something sweet! 

Notes

For variations, consider adding a touch of flavor with saffron or rose water during blending.

 Fresh paneer and malai will yield the best flavor and texture. If possible, make your own paneer at home for optimal results. If using store-bought paneer then soak it in hot water for a couple of minutes.

Allow the mixture to chill in the refrigerator long enough to firm up; this makes shaping the ladoos much easier.

Experiment with different toppings, like crushed nuts or rose petals

Easy Horlicks Milk Powder Burfi/Fudge

 Ingredients

  • ¼ cup milk
  • ¼ cup ghee
  • ¼ cup sugar
  • ¼ cup Horlicks
  • 1 cup milk powder
  • Few strands saffron
  • ½ tsp cardamom powder
  • 1/4 cup slivered almonds 

Instructions

Butter a baking pan or tray with ghee and keep aside.

In a deep saucepan, heat milk, ghee and sugar on medium heat until sugar melts.

Once the sugar has melted, add the rest of the ingredients: Horlicks powder, milk powder, saffron, cardamom powder and half the almonds.

Keep stirring continuously as you add; do not let go; this burfi sets in just 2 to 3 minutes!

As soon as the mixture is homogenous, forms a lump and leaves the sides of the pan, remove from pan and spread in prepared pan.

Spread evenly with a greased spatula or with a the bottom of a bowl which is greased.

Sprinkle the rest of the nuts and press into the burfi.

Set aside to cool and set completely. Cut into desired shapes with a sharp knife and serve. 


Notes

You can double the recipe to get 24 pieces.

Instead of almonds, you can use your favorite kind of nuts or leave them off altogether.

Make sure to not to move away from the stove as this amazing burfi or fudge comes together in just 5 minutes!

Multipurpose Gravy Premix

 Ingredients

cashew  1/4 cup

melon seeds  1 tbsp

cloves  6 

cardamom  4

black cardamom 2

cinnamon  2 " 

jeera    1 tsp

bay leaf  3-4

star anise 1

milk pdr  1/2 cup

corn flour  1 tbsp

besan  1 tbsp

garlic pdr  1 tsp

onion pdr   1 tbsp

dry ginger pdr  1 tsp

kasturi methi  1 tbsp

black pepper  1 tsp

turmeric pdr  1 tsp

Kashmiri red chili pdr  2 tbsp

pdr sugar 1 tsp

coriander pdr 2 tbsp

salt 1 tsp

 

Method

heat a pan  add cashew and melon seeds. fry well stirring n medium flame for 2-3 minutes, remove in a plate.

add all the other dry masalas to the pan- cloves, cardamoms, bay leaf, star anise, jeera, cinnamon  fry well in medium flame stirring till are well roasted, remove and cool in a plate

powder the cooled dry ingredients well. In a bowl add the pdr masala, mix with rest of the ingredients well, mix all well, put in a Zip lock bag or in an air-tight container.

NOTE- the masala will last outside in room temperature for 10-15 days, in the fridge for 3-4 months.

Milk Powder Burfi

Ingredients:

2 cups milk powder
1 cup condensed milk
1/4 cup ghee (clarified butter)
1/4 cup milk
1/2 tsp cardamom powder
Chopped nuts (almonds, pistachios) for garnish (optional)
 
Instructions:

In a non-stick pan or a heavy-bottomed skillet, heat the ghee over medium heat.

Once the ghee is melted, add the milk powder, condensed milk, and milk. Stir well to combine all the ingredients.

Cook the mixture on low to medium heat, stirring continuously. It will begin to thicken after a few minutes.

Once the mixture starts to pull away from the sides of the pan (about 5-7 minutes), add the cardamom powder and mix well.

Prepare a Tray:

Grease a plate or a tray with a little ghee to prevent sticking.

Pour the cooked burfi mixture into the greased plate and spread it evenly with a spatula. Press down gently to flatten it.

If desired, sprinkle chopped nuts on top and gently press them in.
 
Allow the burfi to cool at room temperature for about 10-15 minutes, or until it firms up slightly.

Once set, cut into squares or diamond shapes using a sharp knife.

Serve the Milk Powder Burfi at room temperature. Store any leftovers in an airtight container.
 
Tips:
Flavor Variations: You can also add saffron strands for a richer flavor and color.
 
Storage: The burfi can be stored in the refrigerator for up to a week.
