No -Bake Almond Butter- Chocolate Bars

 No-Bake Almond Butter Bars

 Almond butter bars! This fantastic recipe is a great no-bake vegan treat that anyone can enjoy!

Ingredients for Almond Butter Layer
Almond butter - 1 cup 
Almond flour - 1 cup (blanched) 
Agave nectar - 1/4 cup 
Coconut oil - 2 tbsp. 
Salt - 1/4 tsp. 
 
Ingredients for Chocolate Layer: 
 Chocolate chips - 1/2 cup 
Almond butter - 2 tbsp. 
Coconut oil - 1 tbsp.


Method of preparing the Butter Bars:
 
Mix together the almond butter layer ingredients in a medium bowl. Spread the almond butter out in an even layer on a bread pan with parchment paper. 
 
Melt the chocolate chips in the microwave, in a small bowl. Keep stirring every 30 seconds until smooth. Now whisk in the remaining ingredients to the melted chocolate. 
 
Then pour the chocolate on top of the almond butter layer and chill in the freezer for 1 hour. 
 
To remove the bars from the pan, slide a knife around the edges of the pan and pull the parchment paper up. Cut into 12 bars. Sprinkle with flaky salt, if desired. Enjoy.

No-Bake Peanut Butter Bars

Ingredients
butter 1 tbsp
reduced-fat smooth peanut butter   1/3 cup
miniature marshmallows, lightly packed   2 cups
low-fat granola   1 cup
puffed rice cereal   1 cup
ground golden flaxseed   1/3 cup
cooking spray

 Method
Coat a baking pan with  cooking spray.
 Put the butter, peanut butter, and marshmallows into a medium-sized microwave safe bowl and microwave on high for 30 seconds, or until mixture is just melted. Stir to blend.
Microwave again briefly if the mixture isn't melted or smooth.
Then stir in granola, puffed rice and flaxseed.
Spread the mixture in the prepared pan, flattening it evenly with a sheet of waxed paper. Let it cool completely before cutting into equal-sized bars.

Peanut Crunchy Bars

Ingredients 
1 cup peanut butter
1 cup light corn syrup
1/2 cup sugar
1/2 cup semi-sweet real chocolate chips
1 tsp vanilla
5 cups corn flake cereal
1/2 cups peanuts and raisins together
METHOD
In a saucepan combine peanut butter, corn syrup and sugar. 
Cook over low heat, stirring constantly, until mixture just comes to a boil. Remove from heat.
Stir in chocolate chips until melted. Add vanilla,cereal and nuts; mix to coat well. Mixture will be stiff.
Press mixture into greased  pan. Cool completely. Cut into desired shapes.

Nut Bars

INGREDIENTS
    Crust:
  • 2 cups all-purpose flour/ maida
  • 1/3 cup white sugar
  • 1/4 tsp salt
  • 2/3 cup unsalted butter, cold
  • Filling:
  • 3 eggs
  • 1 cup light corn syrup
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 tbsp melted butter
  • 1 tsp vanilla essence
  • 1 2/3 cups chopped nuts ( almonds, cashew nuts, walnuts, pecans)
METHOD
  1. Preheat oven to 350 degrees. Line a  baking dish with heavy foil and spray with cooking spray.
  2. In a large bowl, stir together the flour, 1/3 cup sugar, and salt. Cut in 2/3 cup butter until mixture resembles coarse crumbs. Sprinkle the mixture evenly over the prepared pan, and press in firmly.
  3. Bake for 20 minutes in the preheated oven.
  4. While the crust is baking, prepare the filling. In a large bowl mix together the eggs, corn syrup, 1/2 cup white sugar, 1/2 cup brown sugar, 2 tbsp margarine, and vanilla until smooth. Stir in the chopped nuts. Spread the filling evenly over the crust as soon as it comes out of the oven.
  5. Bake for 25-30 minutes in the preheated oven, or until set. If the top starts getting to browned cover with aluminium foil.
  6. Allow to cool completely on a wire rack before slicing into bars with a sharp knife.

FUDGE-CHEESE CAKE

INGREDIENTS
unsweetened baking chocolate    4 ounces
butter    1 cup
 sugar    2 1/2 cups divided
 eggs    4
vanilla essence  1 tsp
all-purpose flour   2 cups
cream cheese, softened   8 ounces
peanut nougat bars   1/2 cup chopped

METHOD
Preheat oven to 350 degrees F. 
Coat a 9 x 13" baking dish with cooking spray.  
 In a large microwaveable bowl, place baking chocolate & butter.
 Microwave on high 2 to 2-1/2 minutes, stirring after each minute, until chocolate and butter are completely melted. 
Beat in 2 cups sugar, 3 eggs, and the vanilla, until blended. 
Stir in flour then spread batter in prepared baking dish.   
In a medium bowl, beat cream cheese, the remaining sugar, and remaining egg. 
Stir in candy. 
Drop by dollops over the chocolate batter.
 With a knife, swirl the chocolate batter to the top to create a marbled effect.    
Bake 40 to 45 minutes, or just until set. 
Cool completely in baking dish on a wire rack. Cut into bars.

Pineapple Bars

INGREDIENTS

oil   1/2 cup
eggs    2 beaten
lemon juice   2 tbsp
coconut extract    1/2 teaspoon
flour      2 1/2 cups
sugar      1 3/4 cup 
salt        1/2 tsp
baking soda        1/2 tsp
crushed pineapple, unstrained (3tbsp set aside for the frosting)  1 20 oz. can 

METHOD

Mix together the  oil, eggs, lemon juice and coconut extract. In a separate bowl, mix together the flour, sugar, salt, and baking soda. Add the dry ingredients to the wet and mix just until blended. Stir in the unstrained pineapple. Bake on a greased  pan  at 350ยบ  F 25 - 30 minutes. Can be frosted immediately. 

Cream Cheese Frosting:

butter   1/2 cup softened
cream cheese   4 oz. softened
crushed pineapple        3 tbsp
vanilla extract          1/2 tsp
coconut extract        1/2 tsp
powdered sugar        3 cups
walnuts   1 cup or less if desired
flaked coconut    1 cup

Beat together the butter and cream cheese until smooth. Add the pineapple and extracts. Add the powdered sugar 1/2 cup at a time and beat until smooth. Toast the walnuts and coconut briefly in the oven or on the stove top until the coconut is browned. Sprinkle over frosted cake.

RICE CRISPIES AND PEANUT BUTTER BARS


Ingredients
1 cup white corn syrup
1 cup sugar
1 cup peanut butter
6 cups Rice crispies
Chocolate Frosting (or melted chocolate chips)

Method
Mix syrup and sugar in big saucepan. Heat at a medium temperature, stirring until sugar melts.

Add peanut butter. When this mixture boils, move from stove top and stir in Rice Crispies.

When thoroughly mixed, spread in 13X9" pan.

Top with frosting/chocolate chips. Cool. Cut into bars.

Crunchy No Bake Peanut Butter Bars


Ingredients

4 tablespoons unsalted butter
1 cup chunky peanut butter
1/2 cup light corn syrup
1/3 cup light brown sugar
pinch of salt
4 cups corn flakes, gently crushed
1 teaspoon vanilla
1/4 cup lightly salted peanuts, chopped
1 cup semi sweet chocolate chips
2 additional tablespoons peanut butter 

Method

Line an 8 by 8 inch pan with foil and spray lightly with cooking spray.
In a medium sauce pan, melt the butter, chunky peanut butter, corn syrup, and brown sugar. Stir until combined.
Add in the salt and vanilla. Stir in the corn flakes, lightly crushing them in your hands as you add them in. Stir to combine.
Pour the corn flake mixture in the prepared pan and smooth the top.
In a double boiler (or a bowl set over a simmering pot of water) melt the semi sweet chocolate chips and 2 additional tablespoons of creamy peanut butter together. This can be done in the microwave too, by keeping them in a mirco-safe dish for a minute or so.
Smooth over the top of the corn flake mixture and top with the chopped peanuts.
Chill for at least 2 hours before cutting.

NO BAKE HEALTHY CRUNCHY BARS

Ingredients

1 cup peanut butter
1 cup light corn syrup
1/2 cup sugar
1/2 cup semi-sweet real chocolate chips
1 teaspoon vanilla
5 cups corn flake cereal
1 1/2 cups peanuts and raisins


Method

In a big saucepan combine peanut butter, corn syrup and sugar.
 
Cook over low heat, stirring constantly, until mixture just comes to a boil (10-12 minutes). Remove from heat.
 
Stir in chocolate chips until melted. Stir in vanilla. Add cereal and nuts; toss to coat well. (Mixture will be stiff.)
 
Press mixture into buttered  pan. Cool completely. Cut into bars.

DATE-ALMOND-OATS-SESAME BAR

INGREDIENTS

almonds   2 cups crushed
seedless dates  2 cups
oats  1/2 cup
sesame seeds  1 cup
sugar 2- 2 1/2 cups
milk  2 cups

METHOD

wash the dates well, then remove any hard part that may be there, soak it in little water for 30 minutes, then blend it, or you can even crush it with you hand.

mix milk & dates, micro high for 3 minutes using big vessel,  or it may overflow as it boils, remove mix well.

add crushed almonds, oats, sesame seeds, sugar, mix well, micro high for 3 minutes.

Mix well, keep in microwave for 2-3 minutes, stir & keep again to cook, till it becomes a solid mass.

Then let it remain in the microwave for 30 minutes or so, as then it will become solid.

Then either cut into desired shape or roll into desired shape.


ps- this can be done over the gas too, if one can keep standing & stirring it continuously.

PUMPKIN BARS


Ingredients
 oil   3/4 cup
eggs     4
sugar     2 cups
pumpkin (about 2 cups) cooked or canned
flour    2 cups
baking soda    1 tsp
salt     3/4 tsp
baking powder     2 tsp
cinnamon    2 tsp

Frosting:
cream cheese  1/2 cup
butter   6 tbsp
vanilla extract   1 1/2 tsp
powdered sugar    1 3/4 cups
roasted, chopped walnuts    1 cup

Directions
For Bars: 
Preheat oven to 350 degrees F. 
 Coat a big pan with non-stick spray. 
 Blend and cream the oil, eggs and sugar in a large bowl. Blend in the  pumpkin.
 Fold into that the flour, baking soda, salt, baking powder and cinnamon. Mix. 
 Bake for 25-30 minutes until golden and the cake springs back when touched. 
 Let cool slightly. 

For Frosting: 
Blend together the cream cheese, butter, vanilla extract and powdered sugar to a nice creamy texture.

To Roast Walnuts: 
Roast at 400 degrees F for 7 minutes, cool, chop and sprinkle.

Chocolate Bars


Ingredients

1 3/4 cups flour
1 1/2 cups powdered sugar
1/2 cup unsweetened cocoa powder
1 cup butter 
8 ounces cream cheese, softened
1 can  sweetened condensed milk
1 egg
2 teaspoons vanilla
1/2 cup chopped nuts


Method

Preheat oven to 350 degrees F.

In a large bowl, combine flour, sugar and cocoa. Cut in butter until crumbly (mixture will be dry).

Reserving 2 cups of crumb mixture, press remainder firmly on bottom of 13 x 9" baking pan. Bake for 15 minutes.

In a large bowl, beat cream cheese until fluffy. Gradually beat in condensed milk until smooth.

Add egg and vanilla; mix well. Pour over prepared crust.

Combine nuts with reserved crumb mixture; sprinkle over cheese mixture.

Bake for 25 minutes or until bubbly.

Cool then chill. Cut into bars.

Store covered in refrigerator.

Granola Nut Bars


Ingredients

  • 1 cup Rolled (flat) Oats
  • 1 cup Oat Bran
  • 1 cup Kashi Multi Grain Nuggets ( can be subsituted with any small grained cereal)
  • 1 cup Quick cooking Multigrain Oat cereal ( Can be substitued with rolled Oats)
  • 1 stick (1/4 lb) Unsalted Butter
  • 5 tablespoons Honey
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Brown Sugar
  • 1/4 cup Milk
  • 1 cup Chopped Nuts and Raisins ( I used Walnuts, Almonds, dried Cranberries and golden Raisins)
  1. Mix 4 cups of cereal in a big mixing bowl. I used 1 cup each of rolled oats, Oat  bran, multigrain nuggets, and oat granola.Note: You can use rolled oats mixed with any other quick cooking fine grained cereal available to you - as long as you are using 4 cups of cereal.
  2. Chop nuts (walnuts and almonds) and mix them with raisins and dried cranberries (cranberries are optional). Set aside.
  3. In a separate bowl heat butter and honey in microwave till the butter melts. Immediately add vanilla extract and mix it into the butter and honey.
  4. Pour the warm liquid butter mixture from step 3 onto the cereal mixture from step 1. Mix them together.
  5. Add milk, brown sugar and chopped nuts and raisins into the cereal-butter mixture. Mix them together.
  6. Cover a baking sheet with aluminum foil. Grease the aluminum foil. Fold the granola mixture from the mixing bowl onto the baking sheet. Spread the granola on the baking sheet and press it using another aluminum foil into a flat smooth layer.
  7. Preheat the oven to 350 0 F. Place the baking sheet into the oven and bake for 25 minutes (the edges will turn brown).
  8. Remove the baking sheet from oven and let the baked granola cool for 5 minutes. Then cut the granola into square (or rectangular) pieces. After the granola bars cool off completely, separate the granola bars and store them at room temperature in an air tight container.
  9. Eat or serve as breakfast, snack or dessert.

Apricot-Walnut Cereal Bars

Ingredients
  • 3 cups old-fashioned rolled oats
  • 1/2 cup chopped walnuts
  • 3 cups unsweetened puffed-grain cereal
  • 2 cups chopped dried apricots
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 1/3 cup silken tofu, drained 
  • 1 large egg
  • 1/2 cup  oil
  • 1 cup honey
  • 1 tablespoon vanilla extract
  • 2 tablespoons freshly grated lemon zest

Method
1)  Preheat oven to 350°F. Coat a large  pan with cooking spray.

2) Spread oats and walnuts on a baking sheet with sides. Bake until fragrant and light golden, 8 to 10 minutes. Transfer to a large bowl and add puffed cereal, dried apricots, flour and salt; stir to combine.

3) Meanwhile, puree tofu, egg, oil, honey, vanilla and lemon zest in a food processor or blender until smooth, scraping down the sides as needed. Make a well in the center of the oat mixture; fold in the tofu mixture until combined. Spread evenly in the prepared pan.

4)  Bake until firm in the center and golden brown, 35 to 40 minutes. Let cool completely in the pan on a wire rack before cutting into bars with a sharp knife.

Caramel Apple Salad


Ingredients

  • 4-6 snickers candy bars, frozen
  • 4-6 apples, chopped
  • one 8-oz. carton Cool Whip
  • one 3-oz. pkg. dry instant vanilla pudding

Method


Smash frozen candy bars in wrappers with hammer. Mix all ingredients together.
