Old Fashioned Baked Beans

 homemade baked beans recipe best old fashioned traditional brown sugar maple sweet smoky from scratch 

Ingredients

 1pound  dried navy beans

ounces thick cut bacon, diced ( veg. sub. smoked tofu. tempeh/ smoked paprika/ mushrooms)

1medium yellow onion, finely chopped

cloves garlic, minced

1/2 cup plain tomato sauce or ketchup

1/4 cup molasses

1/2 cup brown sugar

tbsp apple cider vinegar

1tbsp prepared yellow mustard

tsp  Worcestershire sauce

1 tsp smoked paprika

tsp salt

1/2 tsp  freshly ground black pepper

1 bay leaf

 

Preparations Place the dried beans in a pot of water covered by a few inches of water and let soak overnight. Drain the beans, place them back in the pot with fresh water and bring to a boil. Simmer for one hour, then drain, reserving the liquid. See NOTE. In a Dutch oven or other oven-proof pot  fry the bacon until crispy then add the onions and cook until soft and translucent, 5-7 minutes.  Add the garlic and cook for another minute. Stir in the tomato sauce, molasses, brown sugar, apple cider vinegar, mustard, Worcestershire sauce, smoked paprika, salt, pepper and bay leaf. Add 1 1/2 cups of the reserved bean water and the beans. Bring everything to a simmer for a minute or two to heat it up.  In the meantime preheat the oven to 325 degrees F. Transfer the Dutch oven with the lid on to the middle rack of the oven. Bake for 2 to 3 hours or until the beans are tender and the sauce has thickened, removing the lid during the last 20-30 minutes to help the sauce thicken.  NOTE: If at any point during the cooking process too much liquid evaporates and the beans get dry, add a little more of the reserved bean water. The beans themselves can vary from batch to batch and you may end up either needing to add more liquid if the beans are too dry or you may need to bake the beans longer with the lid off if there is too much liquid. Adjust as needed. Add more salt the pepper to taste. Serve immediately or let cool completely and refrigerate until ready to serve.  Can be reheated on the stovetop or in the microwave. SLOW COOKER METHOD: Follow steps 1 and 2 and then pour everything into the slow cooker. Cook on LOW for 6-7 hours or on HIGH for 3-4 hours or until the beans are tender. Open the lid for the last 30 minutes or longer until the sauce has thickened. If the beans are too thick at any point and too much liquid has evaporated, stir in a little extra water.

Notes

Depending on the age and storage condition of the beans some can remain hard even after hours of cooking.  A classic trick is to add 1/4 teaspoon of baking soda to the beans while you’re boiling them (1/4 teaspoon for every pound of beans).  Be careful though:  If too much is added or if it’s added to beans that aren’t too hard, you could end up with mushy beans.

Black Eyed Pea Salad

Ingredients

  • 3 cups cooked black eyed peas (about two 15 ounce cans, rinsed and drained)
  • 1 cup corn
  • 1/2 cup chopped red onion
  • 2 tomatoes , seeded and diced
  • 1 cup cucumber , seeded and diced
  • 3 green onions , chopped
  • For the Dressing:
  • 1/4 cup apple cider vinegar
  • juice of 1 lime
  • 2 tsp sugar
  • 1 tsp kosher salt
  • 1/4 tsp  freshly ground black pepper
  • 1 1/2 tsp cumin pdr
  • 3/4 tsp coriander pdr
  • 3/4 tsp smoked paprika
  • a few dashes of hot sauce , according to heat preference
  •  

    Preparations

     Combine the beans and vegetables in a large bowl. Whisk together the vinaigrette ingredients and pour over the mixture. Stir to combine. Refrigerate for at least 4 hours before serving. Enjoy as a salad, side dish or as a salsa with corn chips.

    Tiny Tomato Galettes

     

    Ingredients

    For the Crust

     cups all purpose flour

    ½ tsp sea salt

    10 tbsp cold unsalted butter,

    tbsp ice water

    1tsp cold apple cider vinegar

    For the Galette

    pound tomatoes

    ½ tsp sea salt

    ounces goat cheese

    1 tbsp extra virgin olive oil

    1tbsp chopped chives

    1 tbsp fresh thyme leaves

    1 garlic clove

    ½ tsp lemon zest

    large egg

    1 tbsp water

    Fresh basil

    Flaky sea salt

     freshly ground black pepper

     

    Preparations

    Make the crust: In a food processor, place 1 cup of the flour and the salt. Pulse to combine. Spread the butter pats evenly on top of the flour mixture. Pulse until the butter is well combined with the flour and the dough starts to form clumps. There should be no dry flour remaining.

    Spread the mixture evenly in the bowl of the food processor and sprinkle the remaining ½ cup flour on top. Briefly pulse until the dough becomes crumbly.

    Transfer the dough to a large bowl and sprinkle the water and vinegar on top. Use a spatula to fold and press the dough until it comes together into a ball. Form the ball into a 1-inch-thick disk. Wrap tightly in plastic wrap and chill for at least 2 hours, or up to 2 days.

    Make the filling: Place the tomato slices in a large bowl and gently toss with the salt. Set aside for 30 minutes to draw excess moisture out of the tomatoes. Drain and transfer to paper towels or kitchen towels to soak up additional moisture while you assemble the galette.

    In a medium bowl, stir together the goat cheese, olive oil, chives, thyme, garlic, lemon zest, and several grinds of pepper until creamy.

    Assemble the galette: Preheat the oven to 400°F and line a large baking sheet with parchment paper.

    In a small bowl, whisk together the egg and water.

    Place the chilled dough on a lightly floured surface. Dust the top with flour and use a rolling pin to roll it out into a 12-inch circle about ⅛-inch thick. As you work, rotate the dough a quarter turn every few rolls to prevent it from sticking to your work surface. I also like to dust the top of the dough with flour and flip it over a few times during the rolling process.

    To transfer the rolled-out dough to the prepared baking sheet, roll the dough over your rolling pin and unroll it onto the baking sheet. Spread the goat cheese mixture in the center of the dough, leaving a 1-inch border all around. Arrange the tomato slices on top and fold the edges of the dough over the edges of the tomatoes, leaving the center of the filling exposed. Brush the crust with the egg wash.

    Bake for 40 to 45 minutes, or until the crust is golden brown. Allow to cool for 10 minutes on the baking sheet. Garnish with fresh basil and sprinkle with flaky sea salt. Slice and serve.

    Coleslaw

     Ingredients

    2 cups shredded rainbow slaw

    1 cup shaved Brussels sprouts

    1 celery stalk, thinly sliced

    4 green onions, thinly sliced

    ½ cup mayonnaise, preferably Hellmann’s

    2 tbsp apple cider vinegar

    ½ tsp celery seeds

    ½ tsp celery salt

    ¼ tsp paprika

    Kosher salt and freshly ground black pepper

    Directions

    In a large bowl, stir together the slaw, Brussels sprouts, celery and green onions.

    In a small bowl, stir together the mayonnaise, vinegar, celery seeds, celery salt, paprika, salt and pepper to taste.

    Fold the mayonnaise mixture into the slaw mixture.

    Refrigerate for two hours before serving.

    To make ahead: Store in an airtight container in the refrigerator for up to two days.

    Almond Flour Cake Recipe Without Eggs

      

    Ingredients

     1 ½ cups almond flour

     1 cup all purpose flour, sifted *

    1/2 cup sweetener of your choice/ sugar**

    2 tsp baking pdr

    1/2 tsp baking soda

    1/4 tsp salt

    1 cup almond milk 

    2 tsp Apple cider vinegar ****

    1/3 cup melted unsalted butter

    1 tsp vanilla extract

    1/2 tsp almond extract 



    Topping

    1/2 cup sliced almonds

    2 tbsp pdr sugar 

     

    Preparations

     Preheat the oven to 350°F (180°C). Grease a 9-inch cake pan with oil or vegan butter. Cover the bottom with greased parchment paper. In a large bowl, add all the dry ingredients: sifted flour, almond flour, baking powder, baking soda, salt, and sugar, and whisk very well to combine. Make a well in the center of the dry ingredients and add almond milk, melted vegan butter, apple cider vinegar, vanilla extract, and almond extract. Use a silicone spatula to stir the almond flour cake batter until just combined and no more flour lumps can be seen. Don't over-stir or the cake will be gummy. Transfer the cake batter to the cake pan and sprinkle some sliced almonds over the top. Slightly press the almonds on the batter to make them stick. Bake the cake on the center rack of your oven for 35-40 minutes at 350°F (180°C) or until golden brown on the top and a pick inserted in the center of the cake come out dry or with a little crumb on it. Cool the cake down for 5-10 minutes in the pan. The cake will flatten, that's normal. Transfer to a wire rack and wait 1-2 hours before slicing. Serve with powdered sugar on top Store in a sealed container for up to 4 days in the fridge.


    Notes

    * or spelt flour. For a gluten-free version,  ** You can use the same amount of any 1:1 sugar-free natural granulated sweetener like Erythritol or Allulose (not pure stevia!).  *** Lemon juice or lime juice works.  **** Canola oil or melted coconut oil works. Watch out, if melted coconut oil comes in contact with cold almond milk, it will form oil lumps and a hard batter! Use room temperature almond milk with coconut oil.
