Rose Gond Katira Drink (Summer)

  

Ingredients

1 tbsp gond katira (tragacanth gum)

2 cups chilled milk (or almond milk for vegan option)

2 tbsp rose syrup (adjust to taste)

1 tbsp soaked sabja (basil) seeds

1 tsp honey or jaggery syrup (optional)

 A few rose petals or chopped nuts (for garnish)

 

Preparations

Soak 1 tbsp gond katira in 1 cup water overnight (6–8 hours).

By morning, it will swell into a jelly-like texture.

Drain excess water and rinse once to remove any stickiness.

 In a tall glass, add 1 tbsp soaked sabja seeds and 1–2 tbsp soaked gond katira.

Pour chilled milk over it.

Stir in rose syrup and honey/jaggery, if using.

Top with rose petals or chopped nuts.

Serve immediately as a cooling, hydrating breakfast drink.

Gulab Seviyan Kheer

 Ingredients

 1 Cup Vermicelli

1 tbsp Desi Ghee

1 tbsp Chopped Almonds

1 tbsp Chopped Cashews

1 tbsp Chopped Pistas

1 tbsp Almond Paste

Condensed Milk (to taste as Rose syrup is also sweet)

1 liter Full Cream Milk

2 tbsp Rose Syrup

Dry Rose Petals

 

Preparations

First of all, heat ghee in a pan or kadhai and roast the chopped dry fruits in it and keep aside.

Now put vermicelli in the same pan and roast it till it becomes light golden brown. You can also use roasted vermicelli if you want.

Add full cream milk to the vermicelli and cook it for a while. Add almond paste and cook it for a while.

Add condensed milk and cook the kheer on low flame till it thickens. At this time, add rose syrup to it and mix it well.

Add roasted dry fruits and mix, add rose petals and mix again.

Remove in a serving bowl and serve

Kalakhand without milk

Ingredients and Method

Sugar 1 cup +

Water 1 cup heat in a kadai till sugar melts

Curd 4-5 tsp ( not sour curd) beat curd well for 2 minutes

Keep stirring sugar for 3-4 minutes till sugar melts

Can add cardamom pdr ½ tsp ( optional)

Wait for sugar to boil, can add  crushed nuts now if desired

Add curd well, let it cook in low flame for 2-3 minutes

Milk pdr 1 1/2 cups, add it now, keep stirring for about 3 minutes

Don’t dry it , you may add ghee if desired

Grease a pan/ plate, cool slightly before you spread

Let it cool for 30 minutes

Once set, cut into desired shape

Sprinkle with dry rose petals and nuts
