Vegetarian Roast

Ingredients

Serves = 6

  • 2 tbsp extra virgin olive oil
  • 1 small brown onion, diced
  • 3 cloves garlic, crushed
  • 2 large portobello mushrooms or 6 button mushrooms
  • 1 medium carrot, grated
  • 400g tin kidney beans, drained and rinsed
  • 400g tin lentils, drained and rinsed
  • 1tbs tamari or soy sauce (salt reduced)
  • 2 tbsn dried mix herbs
  • 140g rolled oats
  • 4 potatoes
  • 2 cups frozen peas
  • 1 whole broccoli

Method

  • Pre-heat oven to 180 C degrees and line a large loaf tin with baking paper
  • Heat 1 tbsp oil in a large pot, sautee the onion and garlic for 2 minutes, then add mushrooms and carrot to cook until softened
  • Add the kidney beans, lentils, tamari sauce, herbs, and rolled oats to the pot, and mash these all together. Add water if too dry, or add more oats if too wet
  • Transfer the mixture to the loaf tin and bake for 40-45 minutes
  • Once the loaf is in the oven, chop the potatoes into quarters, assemble on a baking tray and drizzle with oil
  • Add the potatoes to the oven to bake for 35-40 minutes
  • 5 minutes before the potatoes and loaf are ready, chop the broccoli into florets and steam the broccoli with the peas in the microwave for 7-8 minutes
  • Slice the loaf and serve with baked potatoes and steamed vegetables

Options

  • Add some ground coriander or cumin for extra spice
  • Add some fresh herbs such as coriander, parsley, thyme or chopped rosemary
  • Experiment with different seeds such as sunflower, pumpkin, poppy or black sesame seeds - sprinkle them on top of the loaf before baking

Spinach Lentil Waffles

Ingredients
moong dal  3/4 cup
besan / gram flour  1 cup
spinach finely chopped  1 1/2 cups
onion 1  finely chopped
tomato 1 skinned and finely chopped
sugar 1 tsp
salt to taste
green chilies finely chopped to taste
oil  2 tbsp
baking pdr. 1/2 tsp

Method
wash and soak dal for 2 hours. grind to a fine paste
rub salt and sugar with spinach
mix spinach with ground dal, flour, chilies, onion, tomatoes, baking pdr. and oil together.add water to make pouring batter. rest the batter for an hour.
make waffles, serve hot with green chutney/ ketchup.

Panchamel dal

INGREDIENTS
tuvar/ arhar dal  1/2 cup
chana dal  1/2 cup
black gram dal( whole black urad dal)  1/4 cup
green gram dal ( whole green moong dal)  1/4 cup
masoor dal   1/4 cup
ghee  2 tbsp
cumin seeds/ jeera 1 tsp
mustard seeds  1/2 tsp
hing  1/8 tsp
curry leaves 1 sprig
coriander leaves chopped 3 tbsp
chili pdr. to taste
turmeric pdr.  1/2 tsp
garam masala  1 tsp
salt to taste
cloves  2-3
black peppercorns 4-5 coarsely crushed
cinnamon 1 " 
bay leaves  2

METHOD
wash well all the dals together. Add enough water and cook in a pressure cooker till done.
Once you can open the cooker, blend the dal with a hand blender, add enough hot water to get the consistency you want, bring it to a boil, simmer
in the mean time, heat a small pan/ kadai, add ghee, once ghee melts, add mustard seeds, as it crackles, add jeera, hing, curry leaves, peppercorns, cloves, cinnamon and bay leaf, fry for a minute..
add turmeric and chili powders, pour it over the boiling dal, add half of the coriander leaves, salt and garam masala, mix well,  let it simmer for 3 minutes, remove from heat, add lime juice to taste, garnish with remaining coriander leaves, serve hot with roti/ rice.

Dal/lentil onion paranthas

Any left over dal/ kuttu, 1 small onion chopped fine, green chilies to taste, salt. Mix all these with atta/ wheat flour, to make a soft chappati  dough. Make thin paranthas on a tawa, cook on both sides & when almost done, smear some ghee on both sides & take out when light brown.

ps- if made spicy, it can be eaten by itself along with curd or you can have some tomato chutney & curd to go with it.

Spong gourd/ Zuchini curry & plain moong dal


Sponge gourd/ zucchini is washed 1/2 kg, cut into thin strips. Take a microwavable dish, put the pieces of zucchini, sprinkle little water cook till almost done. Add some turmeric, salt & the masala powdered. For the masala, fry 2 tbsp of chana dal, 2 tbsp of coriander seeds, 1 tsp cumin/jeera, 3 red chilies, with 1 tsp of tamarind. fry all these with 4 garlic pearls in little oil, cool & powder it. Add this to the cooked zuchini, stir & cook for another 2 minutes. This goes well with roti/ chapatis & rice.

For dal, I took moong dal 1 cup,  pressure cooked it. For seasoning, 1 tsp ghee, 1/2 tsp jeera, 4 green chilies, 1" ginger piece cut fine, 5 garlic pearls cut fine, curry leaves 1 sprig cut fine, hing  a little. Heat ghee put all the seasonings, add to the dal, boil it with salt to taste & garnish with green coriander leaves.This was our dinner to night.

Whenever you use curry leaves, cut fine, as normally people discard it, it is rich in Vit E, which is good for hair growth & skin. When you get curry leaves in plenty, wash well & dry it in shade, store it in a dry jar & zip-lock bag, as it can be used during winter when you don't get them.

"Paruppuusali"- made in Microwave- Dal cooked in Microwave for green veg.


I took chana dal 75 gms, arhar dal 75 gms. saoked both together for about 3 hours, then ground it with 2" ginger, 5 garlic pearls, 7 green chilies, with minimum water & salt. Then i put it in a greased microwave dish, adding wee bit water. As when it is cooked in microwave, it becomes too dry before getting cooked. Those who don't have microwave, can steam it in idli plates for 15 minutes. I kept it in microwave for 6 min., stirring after every 2 minutes, then it will become like in the 2nd picture dry & you can see it cooked. then about 2 tsp of oil is taken, do tadka/season with 1/2 mustard seeds & 1/4 tsp hing, put this mixture well crumbled & mix well for 2-3 minutes. This is mixed with green vegetables like  French beans, cluster beans or green lobia, cabbage, cow pea beans, banana flower. These vegetables are cooked in water with salt & turmeric pdr. & drained, especially cluster beans if you're using, as it has a slightly bitter taste. Then the vegetable is mixed with the dal mixture, mix well & serve with rice & onion 'vathak kulambu', i.e., sambar without dal, the recipe was given earlier.                                 ps- ginger & garlic when added to it helps in digestion, as also garlic has anti-cancer properties. Green chilies when used instead of red chilies, is rich in Vit. C. the other riches source of Vit. C is 'amla'/ gooseberry 1 of it is enough to provide the Vit C we need each day.Whenever you eat those foods which are rich in iron, remember to have Vit C in some form with your food that day, as then only your body can absorb the iron from the food, so it can be amla/ lime pickle.

Baked Vadai !



This is a very healthy & tasty vadai, made from red lentils/ masoor dal 2 cups, you can add 1 cup of channa dal or it can be made only with masoor dal also. The more variety of dal we use, we're likely to get more nutrition, that is why I prefer such combinations. 
Soak the dals together for 3 hours. Then grind with green chilies to taste( as green chilies are rich in Vit. C), 1" ginger, 4-5 garlic pearls. Grind it with minimum water & coarsely. Add salt to taste. Mix finely cut 1 big onion & 1 big green capsicum with the ground mixture. The mixture shouldn't be too thick or too watery. The top right picture shows the mixture & kept in microwavable plate. Grease a microwavable plate lightly, take about 1 tbsp of the mix, flatten it lightly as seen, micro high for 2 min., then turn the sides & again micro high for 2 min, this gets cooked by then. For those who prefer it crisp, you may add a drop of oil & grill it or keep it in hot oven for about 5 min., the top gets golden.
This is full of protein, with vitamins, with zero calories.
The last picture shows how it looks finally.
ps- even the garlic haters, can't make out garlic in it, after it is cooked. For some, you may need a minute longer to get cooked for each side in your microwave, depending on the power.
