Carrot Pancakes Served With Salted Yogurt

  

This is a great gluten-free dish to try if you’re looking for something different to make in the kitchen. 
 
We start by mixing four thoroughly beaten eggs with 1 pound of peeled and grated carrots, a quarter cup of chickpea flour and a third of a cup of chopped cilantro, in a big bowl. Add a pinch of kosher salt and some pepper to season your rough mixture. 
 
Take a large cast-iron skillet (preferably, if you have one) and add 2 tablespoons of olive oil and heat the skillet over medium flame. 
 
Put two well-sized scoops of your carrot mixture individually on the skillet and flatten them to about half the existing thickness, or whatever thickness is your preference. From that point on the process is the same as making a normal pancake. 
 
Keep rotating the skillet to ensure all sides of your pancakes are heated evenly until they are a nice golden brown. Then you can remove your pancakes from the skillet and drain them of any excess oil using paper towels. 
 
While your pancakes are browning up, you can prepare the yogurt. Just add a cup of chopped spicy greens like watercress, one tablespoon of fresh lemon juice and a little bit of salt and pepper to one cup of plain whole yogurt, and stir.

 Gluten Free Sweet Oat Crepes

This recipe is both dairy-free and gluten-free. Some may read this and think- "healthy!" while others may read this and think- "bland..." But we're here to tell you that this is exactly what makes these crepes so special. You can enjoy them with any spread or filling to your heart's desire! A sweet chocolate spread? A savory cheese and mushroom filling? Anything goes!

Ingredients
Rolled Oats - 3/4 cup 
Milk - 1 1/2 cups (any of your choice) 
Maple syrup - 2 tsp. 
Salt - a pinch 
Chickpea flour - 1/2 cup


Preparations
 
Process all ingredients in a blender until smooth. Oil and heat a pan over medium heat. 
 
Pour 2 tbsp portions of the batter at a time. Tilt and move the batter around immediately to flatten it and create an even layer for the crepe. 
 
Once the top seems set, flip it and cook for another minute or two, and stack the crepes on a plate.

Serve hot with spread or filling of your choice.

Gluten Free Sweet Oat Crepes


Ingredients
Rolled Oats - 3/4 cup 
Milk - 1 1/2 cups (any of your choice) 
Maple syrup / honey - 2 tsp. 
Salt - a pinch 
Chickpea flour - 1/2 cup

Preparations

 Process all ingredients in a blender until smooth. 

Oil and heat a pan over medium heat. Pour 2 tbsp portions of the batter at a time. 

Tilt and move the batter around immediately to flatten it and create an even layer for the crepe. 

Once the top seems set, flip it and cook for another minute or two, and stack the crepes on a plate.

Serve with the filling of your choice-
fruits, nuts and raisins mixed with honey  OR
fruits mixed with melted chocolate and chopped nuts 
 
Savoury filling
fried onions with sliced mushrooms with seasoned to taste, add some grated cheese, stuff when hot, roll on press on the hot pan for the cheese to melt on low flame for a minute on each side, serve hot sliced.
 
carrots, beans, corns with cheese and seasoned to taste.
 
Try what you and your family loves, each time a different filling !

Korean Vegetable Pancakes

If you are looking for a delicious and healthy breakfast, then try making these very yummy Korean pancakes or Indian cheela. These pancakes are super easy to make and are also very healthy, nutritious and rich in protein. Korean pancakes are made with all purpose flour but I used chickpea flour to add protein. Here is a simple recipe you can try today!

Ingredients:

  • 1/4 cup all purpose flour or chickpea flour
  • 1 cup veggies of choice – carrots, cabbage, bell peppers.
  • salt and pepper
  • 1/4 cup water 

Method

Take a grater and grate the vegetables. Mix all the ingredients in a bowl and pour it on a well greased pan. cook for 2-3 mins, flip and cook for another 2 mins or until crispy. Serve with a tomato ketchup or your favorite dip.

Bombay Sandwich

Ingredients

For the chutney:
2 cups coriander leaves
3 tbsp blanched spinach puree (see Note)
5 ice cubes
6 green chilies
6 garlic cloves
2 tsp minced fresh ginger
2 tsp chaat masala
½ tbsp chickpea flour
salt to taste

For the sandwich:
3 tbsp unsalted butter, softened
6 slices of white bread
½ cup thinly sliced onions
½ cup thinly sliced boiled potato
½ cup thinly sliced tomato
½ cup thinly sliced cucumber
½ cup sliced capsicum (red pepper) (optional)
½ cup grated cheese
1 tbsp chaat masala
salt and pepper to taste
chilli sauce and tomato ketchup for serving

Method

Step 1
To make the chutney, grind the coriander leaves and spinach puree in a food processor with the ice cubes, green chilies, garlic, minced ginger, chaat masala and chickpea flour until a fine paste forms. Add salt to taste.

Step 2
To make the sandwiches, butter both sides of each slice of bread and liberally spread with the chutney.

Step 3
To assemble, layer three slices of bread with the onions, potatoes, tomatoes, cucumbers and capsicum. Generously sprinkle the cheese over the vegetables, then sprinkle with chaat masala, salt and pepper. Cover each with another slice of bread.

Step 4
Grill the sandwiches in a sandwich machine or panini maker. You can also toast the sandwiches on a grill pan, carefully turning them once to achieve an even char on the bread. Cut into pieces and serve hot with chili sauce, tomato ketchup and more chutney.

Note
To make spinach puree, add chopped spinach to a pot of boiling water for 1 minute. Drain and puree.
